SAUSAGE, PEPPERS, ONIONS, AND POTATO BAKE
This is an Italian comfort food classic! The smell of this cooking in my kitchen transports me back to playing on the street in front of my Papa and Gigi's house in Brooklyn. I make 2 trays of this for every family get-together, and it's gone in a flash!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
- Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
- Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
- Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
- Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

Steps:
- Divide dough into 16 portions.
- Preheat oven to 425°F.
- Grease a baking sheet.
- Heat a large skillet over medium heat, add sausage.
- Cook until brown and crumbly, drain fat.
- Stir onion, garlic, basil, oregano, and pizza sauce into skillet, simmer for 10 minutes.
- Roll each dough piece into a 5in circle.
- Spoon sausage mixture onto each circle, sprinkle with cheeses.
- Moisten edges of dough with water.
- Fold dough over to enclose filling, press to seal.
- Place on prepared baking sheet.
- Beat eggs with milk.
- Brush over calzones.
- Bake for about 15 minutes or until golden brown.

- Cook sausage links according to package directions; drain, cut into 1/4 -inch slices and set aside.
- In a large bowl, combine mozzarella, ricotta, egg, parsley and seasonings.
- On a lightly floured surface, cut dough in half.
- Roll each into a 12-inch circle.
- On two parchment-lined baking sheets, carefully place one dough round on each baking sheet.
- Spoon ½ cup of pizza sauce, half the cheese mixture and half of the sausage slices onto the lower half of each dough round, keep the outer ½ -inch edge of dough free of ingredients.
- With a pastry brush, moisten the outer ½ -inch of each dough round with water.
- Fold dough over filling and crimp edges firmly to seal.
- Bake at 350ºF for 25-30 minutes or until golden brown.
- Cut each Calzone in half and serve with remaining pizza sauce.

Steps:
- Oil a large bowl with 2 tablespoons oil, place pizza dough in bowl turning once, let warm to room temperature.
- In a 12 inch skillet on medium heat, heat 2 tablespoons of oil.
- Remove casings from sausage links, break up meat into small pieces, and brown in skillet for 5 minutes.
- Add diced potatoes, stir, and cover, Cook for 12 minutes, stirring every 3 minures. Cover skillet between stirring.
- Prepare 15 1/2 inch by 10 1/2 inch rimmed baking pan by oiling pan with 2 tablespoons oil.
- with remaining oil, oil rolling pin, and surface for rolling dough.
- Divide dough in half and roll out to a 9 inch circle.
- spoon half of potato mixture onto half of circle. Drizzle 3 tablespoons marinara sauce on top.
- Fold other half of dough over, meeting edges. Roll and crimp edges to seal well. Cut 3 gashes on top of dough for steam vents.
- Repeat with other portion of pizza dough. Place calzones on prepared pan.
- Bake at 400 degrees for 30 minutes.
- To serve, cut each calzone in half, serve with remaining marinara sauce.
