ITALIAN BREAD BAKED ON A PIZZA STONE
Delicious Italian bread made in the bread machine and then baked on a pizza stone. Wonderful!

Steps:
- Place flour, brown sugar, warm water, salt, olive oil and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
- Place pizza stone in oven and preheat to 375 degrees F (190 degrees C). Oven must be preheated at least 30 minutes before baking.
- Deflate the dough and turn it out onto a lightly floured surface. Form dough into two loaves. Place the loaves seam side down on a cutting board generously sprinkled with cornmeal. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
- In a small bowl, beat together egg and 1 tablespoon water. Brush the risen loaves with egg mixture. Make a single long, quick cut down the center of the loaves with a sharp knife. Gently shake the cutting board to make sure that the loaves are not sticking. If they stick, use a spatula or pastry knife to loosen. Slide the loaves onto the pizza stone with one quick but careful motion.
- Bake in preheated oven for 30 to 35 minutes, or until loaves sound hollow when tapped on the bottom.

- Preheat the oven to 450 degrees F.
- Place the bread halves on a sheet tray. Drizzle the olive oil on each half of the bread, then spread on the marinara sauce evenly. Layer on the sopressata and hard salami by folding and overlapping the slices. Top with the Parmesan and smoked mozzarella.
- Bake until the cheese is bubbling and the meat is very hot, 8 to 10 minutes. (Finish under the broiler if desired.)
- Immediately distribute the olives and peppers evenly. Grate the ricotta salata over the top, then sprinkle on the Pecorino-Romano.
- Sprinkle the chile flakes on top, and top with the fresh basil and a drizzle of olive oil. Cut each half into 8 slices. Serve immediately.

- Combine warm water, yeast, and sugar together in the pan of a bread machine. Let stand until the yeast softens and begins to form a creamy foam, about 10 minutes.

- Heat oven to 425°F. Lightly spray large cookie sheet with cooking spray.
- In 12-inch skillet, cook sausage over medium-high heat 8 minutes, stirring occasionally, until no longer pink. Push sausage to edges of skillet; add 1 tablespoon of the oil. Add onion and garlic; cook 5 minutes, stirring occasionally, until onion is softened. Remove from heat; stir in pizza sauce, oregano, pepper flakes and salt.
- With serrated knife, cut bread in half lengthwise; scoop out center of each bread half, leaving 1/2-inch border (discard removed bread or reserve for making bread crumbs). Place bread halves on cookie sheet. Spread 1/3 cup of the ricotta cheese down center of each; top evenly with sausage mixture, mozzarella cheese and Parmesan cheese. Drizzle loaves with remaining 1 tablespoon oil.
- Bake 6 minutes or until thoroughly heated and cheese is melted. Cut into slices. Sprinkle with chopped fresh parsley, if desired.

HOMEMADE PIZZA (ITALIAN BREAD PIZZA)

- 1. Preheat oven to 375 degrees. Slice Italian loaf in half lengthwise. On a cookie sheet, cut side up, spread evenly the pizza sauce on both halves. Use as much as you like. Some prefer more than others... Top with the shredded cheese. Use plenty! Using an 8 ounce package, you will have enough. Spread out to within half an inch of the edge of the bread.
- 2. Then top with the toppings of your choosing. In the photo, I used Canadian Bacon, Pepperoni, chopped onion and chopped golden sweet bell pepper. But you may add whatever you prefer. Get creative! :-)
- 3. Place in the oven (center rack) and bake for about 30 minutes. Then increase heat to 425 degrees and bake an additional 10 minutes, or until your pizza is as browned as you like it. Remove from the oven, slice and serve! Serve with crushed red pepper and grated parmesan cheese (optional). Bon'Apetit' Y'all!!
ITALIAN BREAD CREAMY PESTO PEPPERONI PIZZA
These are awesome! Crusty unsliced Italian bread is a must for this recipe, regular unsliced soft bread will not hold up. The ricotta mixture can be prepared well in advance and refrigerated until ready to use.

- Place one oven rack in upper-third of the oven, and the second oven rack on the lower third.
- Heat oven to 450°F (regular or convection air-bake).
- Half each loaf lengthwise, then crosswise to make 8 pizza crusts.
- In a bowl combine ricotta, pesto, Parmesan, salt and pepper.
- Spread on the bread crusts.
- Sprinkle the olives on top of the ricotta.
- Top with pepperoni slices.
- Top with shredded mozzarella cheese.
- Place 4 pizzas on one baking sheet and the other 4 on another baking sheet.
- Place on sheet on one rack and the other on the other rack.
- Bake for about 10-12 minutes (the cheese should be well melted).
- Cool for about 5 minutes.

- Beat water, olive oil, yeast, sugar, and salt together with an electric mixer until evenly combined, about 2 minutes. Add flour, 1 cup at a time, stirring with a wooden spoon after each addition, until dough almost comes away from the sides of the bowl.

ITALIAN BREAD MINI-LOAF PIZZA
Pizza sounded good for dinner, but I wanted to try using a loaf of bread instead of a canned fresh pizza dough. The bakery in the SweetBay grocery store I frequent had their fresh baked loaves of mini Italian bread on sale for 99 cents, so I brought two home. You can use any of your favorite pizza toppings, or sauce.

- 1. Slice the loaves of Italian bread, in half, the long way trying to cut the loaves equally in half like you would to make garlic bread.
- 2. Set the four pieces on bread cut side up on a 16" pizza pan or large cookie sheet. Move the oven rack up the 2nd from the top level in an electric oven. Slide the pizza pan in, and turn on the broiler element on the HI setting. It doesn't take long to toast the bread, mine was toasted with edges turning golden and middles dry to touch in about 4 minutes. Remove from oven.
- 3. Return the raised oven rack back to it's lower location, mine was back to the 4th level from the top. Set the oven to pre-heat at 375.
- 4. I spread a thin layer of Alfredo sauce on all 4 pieces of bread. Set aside on the pizza pan after placing a layer of pepperoni on each piece of bread.
- 5. In a medium mixing bowl, combine the rest of the topping ingredients, and add just enough Alfredo sauce to coat the mixture, then mix in about 1 cup of the pizza cheese. Divide this mixture evenly over the 4 pieces of bread as you pat it flat gently to evenly cover the bread.
- 6. Roughly divide the remaining shredded Pizza cheese over all four pizzas.
- 7. Return the pan to the pre-heated oven, and bake 10 minutes, or until the cheese is melted without burning the edges of the bread.
