1/2 pound Italian turkey sausage links, casings removed, crumbled
1 small onion, chopped
1-1/2 teaspoons canola oil
1 garlic clove, minced
2 cups water
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (14-1/2 ounces) reduced-sodium chicken broth
3/4 cup uncooked elbow macaroni
1/4 teaspoon pepper
1 cup fresh spinach leaves, cut as desired
5 teaspoons shredded Parmesan cheese

Steps:

  • In a large saucepan, cook sausage over medium heat until no longer pink; drain, remove from pan and set aside. In the same pan, saute onion in oil until tender. Add garlic; saute 1 minute longer. , Add the water, beans, tomatoes, broth, macaroni and pepper; bring to a boil. Cook, uncovered, until macaroni is tender, 8-10 minutes. , Reduce heat to low; stir in sausage and spinach. Cook until spinach is wilted, 2-3 minutes. Garnish with cheese.

1 cup small pasta shells
3/4 cup dried great northern beans
3/4 cup dried pinto beans
3/4 cup dried kidney beans
1/4 cup dried minced onion
3 tablespoons dried parsley flakes
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon dried minced garlic
1 bay leaf
Dash crushed red pepper flakes
ADDITIONAL INGREDIENTS:
14 cups water, divided
1 can (28 ounces) diced tomatoes, undrained
3 medium carrots, chopped
1 celery rib, chopped
1 teaspoon salt
Grated Parmesan cheese, optional

Steps:

  • Place pasta in a small resealable plastic bag; place in a 1-qt. glass jar. Layer with beans. Place seasonings in another plastic bag; place in jar. Cover and store in a cool, dry place for up to 3 months. Yield: 1 batch., To prepare soup: Remove seasoning packet from jar. Remove beans; sort and rinse. Set pasta aside., Place beans in a Dutch oven; add 6 cups water. Bring to a boil; boil 2 minutes. Remove from heat; cover and let stand 1 to 4 hours or until beans are softened. Drain and discard liquid., Return beans to the pan. Add contents of seasoning packet and remaining water. Bring to a boil. Reduce heat; cover and simmer 1 hour or until beans are tender. Add tomatoes, carrots, celery and salt; cover and simmer 30 minutes longer, stirring occasionally., Stir in pasta. Cover and simmer 5-10 minutes or until pasta and carrots are tender, stirring occasionally. Remove bay leaf before serving. Garnish with cheese if desired.

1 tablespoon olive oil
2 stalks celery, chopped
1 onion, chopped
3 cloves garlic, minced
2 teaspoons dried parsley
1 teaspoon Italian seasoning
¼ teaspoon crushed red pepper flakes
salt to taste
1 (14.5 ounce) can chicken broth
2 medium tomatoes, peeled and chopped
1 (8 ounce) can tomato sauce
½ cup uncooked spinach pasta
1 (15 ounce) can cannellini beans, with liquid

Steps:

  • Heat olive oil in a large saucepan over medium heat. Cook celery, onion, garlic, parsley, Italian seasoning, red pepper flakes, and salt in the hot oil until onion is translucent, about 5 minutes. Stir in chicken broth, tomatoes and tomato sauce, and simmer on low for 15 to 20 minutes.
  • Add pasta and cook 10 minutes, until pasta is tender.
  • Add undrained beans and mix well. Heat through. Serve with grated Parmesan cheese sprinkled on top.

A classic Italian soup, Pasta e Fagioli is a satisfying dish that will warm your body and your soul! Pasta, beans, pancetta and veggies are embraced by a flavorful tomato broth, making this soup a meal in itself.

8 ounces about 1 1/4 cups dry cranberry beans (see notes)
2 bay leaves
About 4 cups chicken broth
1 tablespoon olive oil
4 ounces pancetta (diced)
1 medium onion (chopped)
1 leek (rinsed and chopped (white and light green parts only))
2 carrots (peeled and finely diced)
2 celery stalks (finely diced)
4 cloves garlic (minced)
A few sprigs of thyme (leaves only)
1 14oz can crushed tomatoes (preferably San Marzano)
1 tablespoon tomato paste
1 parmesan rind
Salt and freshly ground black pepper (to taste)
1 1/2 cups ditalini pasta
1 cup freshly grated parmesan cheese
1/4 cup basil leaves (thinly sliced)

Steps:

  • In a large heavy-bottomed pot or Dutch Oven, combine the beans, bay leaves and 2 quarts (8 cups) of water. Bring to a boil, over medium high heat, then lower the heat to a simmer and cook until the beans are tender, about 1 hour.
  • Using a colander set over a bowl, drain the beans, collecting the broth into the bowl. Add chicken stock to complete 6 cups of liquid. Reserve the broth and the beans.
  • Wipe down the pot and bring it back to the stove, over medium heat. Heat the olive oil and sauté the pancetta until golden brown. Remove and place in a paper towel-lined plate to soak up the excess grease. Reserve.
  • Add the onion, leek, carrot and celery, sautéing until softened, about 5 minutes. Then, stir in the minced garlic and cook for a minute or two, or until fragrant.
  • Stir in the thyme leaves and cook for about a minute.
  • Add the pancetta back into the pot. Then, add the crushed tomatoes, tomato paste, parmesan rind, reserved broth, salt and pepper.
  • Cover, lower the heat to medium-low and simmer for 10 to 15 minutes.
  • In the meantime, cook the pasta separately, according to package instructions.
  • Add reserved beans and cooked pasta to the soup.
  • Stir in the grated parmesan cheese. Taste for seasoning and adjust salt and pepper.
  • Stir in the sliced basil, reserving some for garnishing.
  • Garnish with basil and fresh thyme. Serve immediately.

Not sure where I found this recipe - but it makes a wonderful keep on hand soup mix or a great Jar Gift Idea. Rinse beans in cold water and sort our shriveled ones. Dry on paper towels overnight. Layer beans and spices n a mason jar for a pretty presentation. Package the pasta in a separate package or jar, and add a hand-written copy of the " How To" for a great gift. or make up several jars for yourself.

Steps:

  • In a large soup pot ( or crock pot ) saute carrots, celery, and ham in olive oil.
  • Add tomatoes, chicken stock( or water) and bean and spice mix.
  • Bring to a boil. Cover partially, and reduce heat and simmer until beans are tender.
  • Cook pasta until al dente.
  • To serve:.Place pasta in the bottom of bowls and spoon hot soup over the pasta. Garnish with Parmesan Cheese.
