1 tablespoon olive oil, or as needed
2 slices Italian bread
1 tablespoon pesto
2 slices mozzarella cheese
¼ pound sliced cooked chicken breast

Steps:

  • Preheat an electric grill (such as George Foreman®) for medium heat. Spread olive oil on one side of each bread slice.
  • Place one slice of bread, oil-side down, on the preheated grill. Spread 1/2 of the pesto on the bread and put a slice of mozzarella cheese over top. Arrange chicken over the cheese and top with remaining mozzarella. Spread remaining pesto on the other slice of bread and place on top of the sandwich.
  • Close the grill and cook until cheese is melted and bread is golden brown and crispy, about 4 minutes.

2 ounces Italian dressing
2 slices provolone cheese
4 slices deli ham
8 slices genoa salami

Steps:

  • Cut roll open.
  • Brush outside of roll with olive oil.
  • Brush both sides of inside with italian dressing.
  • Cut cheese in half, add the 4 halves to the bread.
  • Add the remaining ingredients in order listed.
  • Cut in half.
  • Grill in your panini press or George Foreman grill.
  • Enjoy.

Steps:

  • Spread pesto and mayonnaise on one slice of bread. Layer meats, cheese, and peppers to make a sandwich. Top with second slice of bread.
  • Spread top bread slice with half of butter.
  • Heat a grill pan over medium heat and spray with cooking spray. When pan is hot, place sandwich butter-side down. Top with a brick covered in foil or another pan and press down. Cook for 2 to 3 minutes until golden brown. Butter top bread slice with remaining butter before turning over panini.
  • Grill and press for another minute or two until panini is toasted and cheese is melted.

Steps:

  • Slice paninis in half. Spread pesto onto each half.

Italian Sausage Panini:
One sausage per Panini until cooked through. Slice and place on hoagie roll.
2 slices provolone cheese per Panini
1 large portabella mushroom per Panini
¼ cup cold slaw per Panini
1 hoagie roll per Panini
Secret Sauce:
Take equal parts of Ranch Dressing and Chipotle Peppers in Adobo Sauce and blend until smooth. Taste and add more Ranch Dressing if too spicy.
Slaw:
Thinly slice cabbage, sprinkle with salt and let stand for 15-30 minutes. Rinse, dry and toss with a small amount of Secret Sauce.
Grilled Mushrooms
Rub mushrooms with damp paper towel to clean then spray with olive oil or garlic olive oil. Grill over medium heat for about 6-8 minutes per side.

Steps:

  • Method: BBQ or grill fresh Italian sausage until cooked through. Slice and place on hoagie roll. Top with mushrooms, cheese and cold slaw. Grill in Panini press or in frying pan until warmed trough, bread is toasted and cheese is melted.

Hot Italian Sausage Panini with Pickled Peppers image

1 1/2 cups white vinegar
1 1/2 cups water
1/2 teaspoon red pepper flakes
2 teaspoons salt
1 tablespoon sugar
2 garlic cloves, smashed
1 red bell pepper, cored, seeded and sliced
1 green bell pepper, cored, seeded and sliced
1 medium onion, sliced
1 pound or 6 links hot Italian sausage, butterflied
6 ciabatta rolls or 1 loaf ciabatta bread, cut into 6 portions
6 tablespoons olive oil
1/4 pound or 6 thin slices provolone
1/4 pound Parmesan, shaved

Steps:

  • In a large pot, combine the white vinegar, water, red pepper flakes, salt, sugar, and garlic and bring to a boil over medium heat. Once boiling, remove the pot from the heat and add the sliced peppers and onions. Let the ingredients pickle at room temperature for about 30 minutes. The peppers will last up to 1 month in a re-sealable container that has been stored in fridge.
  • Preheat an outdoor grill or grill pan over medium-high heat. Arrange the butterflied sausages on the grill, cut side down. Cover the sausages with a sheet pan and weigh it down with a tea kettle filled with water or a heavy pan. Grill for 4 to 5 minutes per side.
  • Slice the rolls in half and brush them, inside and out, with the olive oil. Layer a slice of provolone over the bottom half of each roll. Add the cooked sausages to the cheese, top with some of the pickled peppers and onions, then finish with 3 pieces of shaved Parmesan and, finally, cover with the top half of each roll. Put the sandwiches in a panini press, 2 or 3 at a time, and cook until the bread is crisp and cheese is melted, about 4 to 5 minutes. If you do not have a panini press, grill the sandwiches in a large skillet over medium heat and put a cast iron or heavy-bottomed pan on the sandwiches to flatten. Cook for 3 minutes per side. Transfer the sandwiches to a serving platter and serve.

This is an adaptation from a recipe posted on hungrybrowser.com in the Uncle Phaedrus section. I used my breadmaker to put the dough together and then hand shaped the loaves for baking. To use for a panini sandwich, slice each loaf in eighths (rendering 4 sandwiches per loaf), fill with your favorite ingredients and use your panini maker or grill with press to prepare a delicious sandwich. 2 1/2 teaspoons active dry yeast
2 cups warm water
5 cups all-purpose flour or 5 cups bread flour
1 teaspoon salt
1 tablespoon olive oil
4 cloves garlic, peeled and chopped
1 teaspoon dried oregano
1/2 teaspoon dried rosemary or 2 teaspoons chopped fresh rosemary
1/8 teaspoon dried marjoram (optional)
2 teaspoons chopped fresh Italian parsley (optional)
1/2 teaspoon coarse salt
1/4 teaspoon black pepper
1/4 teaspoon lemon pepper

Steps:

  • Prior to placing ingredients in breadmaker, fill the container with water.
  • It needs to accomodate at least 11 cups of water.
  • If it has that capacity, you can dump the water out and proceed.
  • The dough makes a large amount and does rise to the top of the container.
  • Place all ingredients in bread machine in order suggested by the manufacturer.
  • If desired, you can hold off placing the herbs into the machine and wait until forming the loaves to place on top of bread.
  • Set machine to dough cycle.
  • When cycle is complete, punch dough down and knead a few times on a lightly floured surface (the dough should remain somewhat sticky).
  • Place dough in oiled bowl, turn to coat with the oil, cover, and allow to rise again until doubled, about 1 hour.
  • Ten minutes prior to rising is finished preheat oven to 400°F Lightly grease two baking sheets (I line them with Silpat sheets).
  • After dough has risen the second time, press air out and divide dough in half (dough will still be sticky, do not use more flour).
  • Press (using your hands) each half with a light touch into approximately an 8 x 11-inch rectangle on the individual prepared pans (rustic looking is okay, but don't press too flat).
  • Brush with olive oil.
  • If you haven't already added the herbs into the dough, scatter garlic, oregano, rosemary, marjoram, peppers, and parsley over surface of each and press lightly.
  • Sprinkle with salt.
  • Bake about 20-30 minutes or until a light golden.
  • Serve warm or slice to use for a panini sandwich and grill.
  • *Notethat preparation time doesn't include about 3 hours of rising time.

This is a variation of Mysterygirl's panini recipe (Recipe #16432) that I came up with when I had a craving for Italian sausage. I must say that it turned out really great, but try it for yourself! Amounts are for one sandwich - just multiply as necessary.

1 hot Italian sausage or 1 sweet Italian sausage, uncooked
1 ciabatta bun, split
2 -3 slices provolone cheese (depending on size of slices)
roasted red pepper, to taste (or other toppings)

Steps:

  • Put sausage in small pot and cover with water.
  • Bring to boil over high heat.
  • Once water boils, prick the sausage with a fork several times so that the grease comes out as it cooks.
  • Boil sausage for 5 minutes, or until it looks at least halfway cooked.
  • Remove sausage from water, and either rinse it under warm water (there might be some scum on it), or wipe it with a clean paper towel.
  • Preheat George Foreman grill.
  • Slice sausage in half, lengthwise.
  • Place sausage cut-side down on hot grill, and cook until done (about 5 minutes or so).
  • Place cheese in bun, then add sausage, and top with roasted red peppers and/or your own favourite additions such as hot banana peppers, marinara sauce, olives, tomatoes, fresh basil, etc, etc.
  • Close sandwich and grill in George Foreman until the bread is golden and crispy.
  • Cut sandwich in half and enjoy!

1 jar (7 ounces) roasted red bell peppers, well drained

Steps:

  • Heat coals or gas grill for direct heat. Cut a circle 1/2 inch from edge of bread, cutting 2 inches down into loaf but not all the way through. Remove center of bread loaf and set aside. Arrange salami inside bread loaf; top with peppers, tapenade and cheese. Place center of bread loaf over filling to fit tightly. Wrap tightly in aluminum foil.
  • Cover and grill loaf 4 to 6 inches from low heat 15 to 20 minutes, turning once, until cheese is melted.
  • Brush olive oil over top of loaf. Cut loaf into 4 wedges.

SMOKED ITALIAN PANINI

One day while watching food network I saw a panini made on Paula's Party and it looked absolutely delicious. I searched the recipe and realized I wouldn't be able to find much of the ingredients here. So I decided to try and create my own so to speak with what I could find. A few tries later I settled on this one and I am done searching! It is fabulous! A great blend of flavors! I am not sure how easy it would be to find those meats singularly but I bought them in a gourmet pack in the deli section. I had to name the meats "sausage" so that recipe zaar would recognize them, though I don't know that they are actually a sausage or not. Its more like a salami or pepperoni.

3 ounces calabrese hot Italian sausage links, thinly sliced
3 ounces pepper salami, thinly sliced
3 ounces hot capicolla sausage, thinly sliced

2 teaspoons balsamic vinegar

Steps:

  • Meat should be very thinly sliced (I use the Daniele brand 'Italian Blend Gourmet Pack' found at a local grocer). Fry each piece for a short time, just long enough to heat them up a bit and release the juices.
  • Pat down with a paper towel to remove excess grease.
  • Cut the rolls in half and spray olive oil cooking spray on all insides. Then sprinkle italian seasoning over each piece.
  • Arrange bread on baking sheet and put under broiler for 4-5 minutes until browned well.
  • Build Panini in the following order: Bread, baby romaine, couple of rings of red onion, the first three meats, couple slices of smoked gouda, prosciutto, peppers, 1/2 teaspoons balsamic vinegar, 1/2 teaspoons olive oil drizzled over top and top the entire thing off with some shaved parmesan.

ITALIAN PANINI BURGER

I made this up as I viewed my frozen Panini and my Italian sausages.. I make 3 burgers out of one lb of meat but listed 4 in the instructions as 4 oz burgers seem to be the most popular.. I love Hot Italian and that is what I have listed but use mild if you prefer. BBQ or pan fry the patties. If you BBQ fry up the pepper mixture separately while your burgers cook.Make the patties rectangular so they fill the panini. One panini makes a healthy serving and you may decide to share but cutting it in two. Hope you try this recipe and enjoy it

1 lb hot Italian sausage, removed from casings
500 g panini bread (4 Panini)
3/4 cup sweet onion, chopped
2 garlic cloves, finely chopped
3/4 cup tomatoes, chopped
1/2 cup sweet red pepper, chopped
1/2 cup sweet green pepper, chopped
1/4 cup fresh basil, chopped or 3/4 teaspoon dry basil
1/4 cup pine nuts (optional)
salt & pepper
3/4 cup parmesan cheese, shredded
2 tablespoons olive oil

Steps:

  • Form the Italian sausage into 4 rectangular patties.
  • Over medium heat pan fry the patties, brown one side flip, cover with lid and continue cooking until done (apprx 5 min per side), set aside keep warm or
  • if your pan is large enough when you flip the patties add the onions & garlic, then the peppers and finish cooking all at once - otherwise follow along as suggested.
  • Remove any excess grease from the pan.
  • Meanwhile combine Onions and garlic.
  • Add onions & garlic to pan and cook until they are well browned. Apprx 8 minutes
  • Add peppers, tomatoes, basil & pine nuts cook 4 minutes.
  • Lightly Paint one side of the Panini bread with oilive oil.
  • Place a burger & 1/4 on the pepper mixture on 1/2 of the uncoated side of the panini, sprinkle with 1/4 of the parmesan, fold in half.
  • Grill in a fry pan (apprx 3 minutes per side or until as crisp and golden as you like it) Brown one side then the other .
  • An alternative method is to lay the panini flat, brown it & then add the patty & peppers etc.
  • Or use your grill and brown both sides at once with the filling already inside.
  • Serve with a nice green salad.

1 loaf rustic Italian bread, such as ciabatta or pane rustica
4 teaspoons honey mustard
12 ounces sliced provolone
4 ounces thinly sliced Black Forest ham
4 ounces thinly sliced roast turkey breast
4 ounces thinly sliced Genoa salami
3 tablespoons butter, softened

Steps:

  • Slice the bread in half horizontally and spread the cut-sides with the honey mustard. Build the sandwich by layering the bottom half of the loaf with half of the provolone, followed by the ham, turkey, salami and the remaining provolone (the provolone should be touching the bread on both sides, with the meat sandwiched in between). Cover with the top half of the loaf.
  • Spread some of the butter on top of the loaf, then carefully flip over and butter the bottom. Slice into the desired number of sandwiches
  • Heat a large two-burner grill pan over medium heat, or heat a panini maker. Add the sandwiches to the pan and cook, pressing down with a spatula, until the undersides are golden brown, 3 to 4 minutes (see Cook's Note). Turn the sandwiches and continue to cook, pressing, until golden brown on the reverse side and the cheese is melted, another 3 to 4 minutes.
  • Transfer the panini to a cutting board and slice in half. Serve immediately.

4 ounces deli-sliced Genoa salami
4 ounces deli-sliced ham
2 ounces deli-sliced coppa
4 ounces deli-sliced provolone cheese

2 romaine lettuce hearts, chopped

Steps:

  • Preheat the oven to 425 degrees F. Pulse the banana peppers, olives, 1/4 teaspoon oregano and 1 tablespoon olive oil in a food processor until finely chopped.
  • Split open the loaf of bread, leaving one side attached. Brush the inside with 2 tablespoons olive oil. Fill with a layer of tomato, then salami, ham, coppa and provolone. For the Italian Style Panini:
Ingredients:
European style bread
Deli ham - slices
Salami - slices
2 - Vine-ripe tomatoes - sliced
Emmi cheese - Le Gruyere Cave - Aged Kaltback - sliced

Roasted pepper chutney
Butter for the bread

Steps:

  • For the Roasted Pepper Chutney: Preheat Oven 350 degrees: Place the tomatoes, bell peppers, onions and jalapeños on a baking sheet. Bake 20 -25 minutes. Remove from oven and let cool. Remove the stem from the jalapeños and quarter the tomatoes. Place the jalapeños, tomatoes, bell peppers, onions, basil, seasonings, balsamic vinegar and honey in a food processor and give a few good chops; until the desired consistency is reached. For the Italian Style Panini: Place salami slices on each slice of bread followed by the chutney, then the tomato, then the cheese, the ham, cheese and finally; put the sandwich together. I took Recipe#235826 (which I LOVE!) and adapted it for one, using a George Foreman grill. Since I was heating the grill anyway, I decided to grill sliced onions and red peppers, to add to the sandwich. It turned out great, and I think it'll travel well, as I needed a sack lunch, for a field trip, tomorrow! I took a bite, and it tasted delicious!

1 focaccia roll (Italian-seasoned)
1/8 onion, sliced
1/8 red pepper, sliced
4 tablespoons prepared pesto sauce (approx)
2 slices provolone cheese
4 slices thin deli ham
4 slices thin deli turkey

Steps:

  • Preheat your George Foreman grill, or panini maker.
  • Slice the roll horizontally; spread with pesto.
  • When the grill is ready, add the onion and red pepper slices (I didn't think they needed any seasoning, but you could add Italian dressing, or other seasoning to them, before grilling, if desired); grill until tender.
  • Layer the grilled veggies, cheese, and lunchmeat.
  • Grill until the cheese melts (you'll have to apply some pressure to the top of the grill when you first insert the sandwich, since the sandwich is pretty thick).
  • Slice on the diagonal, and enjoy, now or later!

2 slice genoa salami
4 slice hard salami
2 slice spiced ham
3 slice prosciutto, very thinly sliced
2 slice wisconsin asiago
2 slice wisconsin smoked cheddar
2 Tbsp chipotle mayo
1 oz sauteed red onions
1 ciabatta roll - sliced
1 bottle olive oil, extra virgin

Steps:

  • 1. Spread chipotle aioli evenly on the top and bottom piece of sliced Ciabatta bread.
  • 2. Arrange cheese, and meats on one slice - starting with cheese and ending with cheese so the meat is in the middle. Add the onions and top with bread and brush with oil.
  • 3. Preheat your grill on low heat and spray or brush your grates with olive oil and place the sandwich on the top rack of your grill - preferably the warming rack.
  • 4. Close the grill and allow cooking for approximately 2 minutes per side, flipping just once. Remove from grill and slice on the bias and serve with bread and butter pickles and your favorite pasta salad.
  • 5. If you enjoy garden fresh tomatoes and lettuce just add them after the sandwich is done grilling.

2 vine ripe tomatoes - whole
1 large onion - quartered
2 jalapeños with seeds - whole
4 cloves of garlic
4 bell peppers - any color - halved
¼ cup fresh basil
2 tbs. olive oil
1 tsp. dried oregano
½ tsp. salt
½ tsp. black pepper
2 tbs. balsamic vinegar
2 tbs. honey

deli ham - slices
salami - slices
2 - vine-ripe tomatoes - sliced
emmi cheese - le gruyere cave - aged kaltback - sliced
emmi cheese - le gruyere mild cheese - sliced

Steps:

  • 1. For the Roasted Pepper Chutney: Preheat Oven 350 degrees: Place the tomatoes, bell peppers, onions and jalapeños on a baking sheet. Bake 20 -25 minutes. Remove from oven and let cool. Remove the stem from the jalapeños and quarter the tomatoes. Place the jalapeños, tomatoes, bell peppers, onions, basil, seasonings, balsamic vinegar and honey in a food processor and give a few good chops; until the desired consistency is reached. For the Italian Style Panini: Place salami slices on each slice of bread followed by the chutney, then the tomato, then the cheese, the ham, cheese and finally; put the sandwich together. Butter each side of the bread. Place in the panini maker and grill to desired crispness and color.

Steps:

  • Heat panini grill.
  • Combine vegetables and olives. Sprinkle 2 Tbsp. cheese onto bottom half of each roll; top with meat, vegetable mixture and remaining cheese. Cover with tops of rolls.
  • Brush outsides of sandwiches with oil.
  • Grill 6 to 7 min. or until cheese is melted and sandwiches are golden brown.
