My mother made up this Italian chicken panini recipe and it is delicious.

Steps:
- Preheat an electric grill (such as George Foreman®) for medium heat. Spread olive oil on one side of each bread slice.
- Place one slice of bread, oil-side down, on the preheated grill. Spread 1/2 of the pesto on the bread and put a slice of mozzarella cheese over top. Arrange chicken over the cheese and top with remaining mozzarella. Spread remaining pesto on the other slice of bread and place on top of the sandwich.
- Close the grill and cook until cheese is melted and bread is golden brown and crispy, about 4 minutes.

Steps:
- Spread pesto and mayonnaise on one slice of bread. Layer meats, cheese, and peppers to make a sandwich. Top with second slice of bread.
- Spread top bread slice with half of butter.
- Heat a grill pan over medium heat and spray with cooking spray. When pan is hot, place sandwich butter-side down. Top with a brick covered in foil or another pan and press down. Cook for 2 to 3 minutes until golden brown. Butter top bread slice with remaining butter before turning over panini.
- Grill and press for another minute or two until panini is toasted and cheese is melted.

HOT ITALIAN SAUSAGE PANINI WITH PICKLED PEPPERS

- In a large pot, combine the white vinegar, water, red pepper flakes, salt, sugar, and garlic and bring to a boil over medium heat. Once boiling, remove the pot from the heat and add the sliced peppers and onions. Let the ingredients pickle at room temperature for about 30 minutes. The peppers will last up to 1 month in a re-sealable container that has been stored in fridge.
- Preheat an outdoor grill or grill pan over medium-high heat. Arrange the butterflied sausages on the grill, cut side down. Cover the sausages with a sheet pan and weigh it down with a tea kettle filled with water or a heavy pan. Grill for 4 to 5 minutes per side.
- Slice the rolls in half and brush them, inside and out, with the olive oil. Layer a slice of provolone over the bottom half of each roll. Add the cooked sausages to the cheese, top with some of the pickled peppers and onions, then finish with 3 pieces of shaved Parmesan and, finally, cover with the top half of each roll. Put the sandwiches in a panini press, 2 or 3 at a time, and cook until the bread is crisp and cheese is melted, about 4 to 5 minutes. If you do not have a panini press, grill the sandwiches in a large skillet over medium heat and put a cast iron or heavy-bottomed pan on the sandwiches to flatten. Cook for 3 minutes per side. ITALIAN GARLIC AND HERB SEASONED PANINI - FOCACCIA BREAD (ABM)
This is an adaptation from a recipe posted on hungrybrowser.com in the Uncle Phaedrus section. I used my breadmaker to put the dough together and then hand shaped the loaves for baking. To use for a panini sandwich, slice each loaf in eighths (rendering 4 sandwiches per loaf), fill with your favorite ingredients and use your panini maker or grill with press to prepare a delicious sandwich. - Prior to placing ingredients in breadmaker, fill the container with water.
- It needs to accomodate at least 11 cups of water.
- If it has that capacity, you can dump the water out and proceed.
- The dough makes a large amount and does rise to the top of the container.
- Place all ingredients in bread machine in order suggested by the manufacturer.
- If desired, you can hold off placing the herbs into the machine and wait until forming the loaves to place on top of bread.
- Set machine to dough cycle.
- When cycle is complete, punch dough down and knead a few times on a lightly floured surface (the dough should remain somewhat sticky).
- Place dough in oiled bowl, turn to coat with the oil, cover, and allow to rise again until doubled, about 1 hour.
- Ten minutes prior to rising is finished preheat oven to 400°F Lightly grease two baking sheets (I line them with Silpat sheets).
- After dough has risen the second time, press air out and divide dough in half (dough will still be sticky, do not use more flour).
- Press (using your hands) each half with a light touch into approximately an 8 x 11-inch rectangle on the individual prepared pans (rustic looking is okay, but don't press too flat).
- Brush with olive oil.
- If you haven't already added the herbs into the dough, scatter garlic, oregano, rosemary, marjoram, peppers, and parsley over surface of each and press lightly.
- Sprinkle with salt.
- Bake about 20-30 minutes or until a light golden.
- Serve warm or slice to use for a panini sandwich and grill.
- *Notethat preparation time doesn't include about 3 hours of rising time.

GRILLED ITALIAN SAUSAGE PANINI
This is a variation of Mysterygirl's panini recipe (Recipe #16432) that I came up with when I had a craving for Italian sausage. I must say that it turned out really great, but try it for yourself! Amounts are for one sandwich - just multiply as necessary.

- Put sausage in small pot and cover with water.
- Bring to boil over high heat.
- Once water boils, prick the sausage with a fork several times so that the grease comes out as it cooks.
- Boil sausage for 5 minutes, or until it looks at least halfway cooked.
- Remove sausage from water, and either rinse it under warm water (there might be some scum on it), or wipe it with a clean paper towel.
- Preheat George Foreman grill.
- Slice sausage in half, lengthwise.
- Place sausage cut-side down on hot grill, and cook until done (about 5 minutes or so).
- Place cheese in bun, then add sausage, and top with roasted red peppers and/or your own favourite additions such as hot banana peppers, marinara sauce, olives, tomatoes, fresh basil, etc, etc.
- Close sandwich and grill in George Foreman until the bread is golden and crispy.
- Cut sandwich in half and enjoy!

- Heat coals or gas grill for direct heat. Cut a circle 1/2 inch from edge of bread, cutting 2 inches down into loaf but not all the way through. Remove center of bread loaf and set aside. SMOKED ITALIAN PANINI
One day while watching food network I saw a panini made on Paula's Party and it looked absolutely delicious. I searched the recipe and realized I wouldn't be able to find much of the ingredients here. So I decided to try and create my own so to speak with what I could find. A few tries later I settled on this one and I am done searching! It is fabulous! A great blend of flavors! I am not sure how easy it would be to find those meats singularly but I bought them in a gourmet pack in the deli section. I had to name the meats "sausage" so that recipe zaar would recognize them, though I don't know that they are actually a sausage or not. Its more like a salami or pepperoni.

- Meat should be very thinly sliced (I use the Daniele brand 'Italian Blend Gourmet Pack' found at a local grocer). Fry each piece for a short time, just long enough to heat them up a bit and release the juices.
- Pat down with a paper towel to remove excess grease.
- Cut the rolls in half and spray olive oil cooking spray on all insides. Then sprinkle italian seasoning over each piece.
- Arrange bread on baking sheet and put under broiler for 4-5 minutes until browned well.
- Build Panini in the following order: Bread, baby romaine, couple of rings of red onion, the first three meats, couple slices of smoked gouda, prosciutto, peppers, 1/2 teaspoons balsamic vinegar, 1/2 teaspoons olive oil drizzled over top and top the entire thing off with some shaved parmesan.

ITALIAN PANINI BURGER
I made this up as I viewed my frozen Panini and my Italian sausages.. I make 3 burgers out of one lb of meat but listed 4 in the instructions as 4 oz burgers seem to be the most popular.. I love Hot Italian and that is what I have listed but use mild if you prefer. BBQ or pan fry the patties. If you BBQ fry up the pepper mixture separately while your burgers cook.Make the patties rectangular so they fill the panini. One panini makes a healthy serving and you may decide to share but cutting it in two. Hope you try this recipe and enjoy it

- Form the Italian sausage into 4 rectangular patties.
- Over medium heat pan fry the patties, brown one side flip, cover with lid and continue cooking until done (apprx 5 min per side), set aside keep warm or
- if your pan is large enough when you flip the patties add the onions & garlic, then the peppers and finish cooking all at once - otherwise follow along as suggested.
- Remove any excess grease from the pan.
- Meanwhile combine Onions and garlic.
- Add onions & garlic to pan and cook until they are well browned. Apprx 8 minutes
- Add peppers, tomatoes, basil & pine nuts cook 4 minutes.
- Lightly Paint one side of the Panini bread with oilive oil.
- Place a burger & 1/4 on the pepper mixture on 1/2 of the uncoated side of the panini, sprinkle with 1/4 of the parmesan, fold in half.
- Grill in a fry pan (apprx 3 minutes per side or until as crisp and golden as you like it) Brown one side then the other .
- An alternative method is to lay the panini flat, brown it & then add the patty & peppers etc.
- Or use your grill and brown both sides at once with the filling already inside.
- Serve with a nice green salad.

- Slice the bread in half horizontally and spread the cut-sides with the honey mustard. Build the sandwich by layering the bottom half of the loaf with half of the provolone, followed by the ham, turkey, salami and the remaining provolone (the provolone should be touching the bread on both sides, with the meat sandwiched in between).
