Italian Mushroom and Celery Salad image

Whenever I teach this Italian salad in a cooking class the students always tell me how skeptical they were before tasting it. It may seem plain, but there's something about the combination of textures and the tart and savory flavors of the lemon juice and Parmesan that really works here.

Number Of Ingredients 8

1/2 pound cremini or white button mushrooms, very thinly sliced
4 celery stalks, from the heart of the celery, very thinly sliced
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon minced chives
Salt and freshly ground pepper
1 1/2 tablespoons lemon juice, or 1 tablespoon lemon juice and 1/2 tablespoon (1 1/2 teaspoons) white wine vinegar or sherry vinegar
1/4 cup extra-virgin olive oil
2 ounces shaved Parmesan

Steps:

  • Toss together the mushrooms, celery, parsley, and chives, and season with salt and pepper. Mix together the lemon juice (or lemon juice and vinegar) and olive oil, and toss with the vegetables. Just before serving, toss again with the Parmesan.

1 package (10 oz) fresh spinach leaves, rinsed and patted dry
1 package (8 oz) sliced mushrooms
1 can (19 oz) Progresso™ chickpeas (garbanzo beans), drained, rinsed
1/3 cup Betty Crocker™ Bac~Os® bacon flavor bits or chips
1/2 cup seasoned croutons
1/2 cup Italian dressing

Steps:

  • In large salad bowl, toss all ingredients except dressing. Just before serving, drizzle with dressing and toss gently.

2 cups fresh mushrooms, sliced
1 cup zucchini, sliced
1 cup cherry tomatoes, halved
1 cup pitted black olives
mixed salad green
1/3 cup olive oil
1/3 cup red wine vinegar
2 teaspoons capers
1 teaspoon garlic salt
1/4 teaspoon rosemary, crushed
1/4 teaspoon oregano, crushed

Steps:

  • Arrange first four ingredients in a shallow glass pan.
  • Combine salad dressing ingredients in a jar with a lid; shake very well and pour over vegetables.
  • Cover and refrigerate for an hour.
  • Drain dressing into salad cruet.
  • Toss vegetables and arrange on chilled plates lined with mixed salad greens.
  • Serve with extra dressing to pass.

1/4 cup salad oil
2 tablespoons wine vinegar
2 tablespoons lemon juice
1/4 teaspoon salt

Steps:

  • Shake together oil, vinegar, lemon juice, salt and pepper.
  • Pour over very thinly sliced mushrooms.
  • Toss lightly until mushrooms are thoroughly coated.
  • Cover and refrigerate at least 1 to 2 hours, or overnight if preferred.
  • To serve, place drained mushrooms on lettuce, endive, or watercress.
  • Garnish with green onion, chives, or anchovies.

1/2 lb white mushrooms cleaned and trimmed
4 oz spinach chopped
juice from 1 lemon
olive oil to taste
salt and pepper to taste
wedge parmesan cheese

Steps:

  • 1. using a sharp knife, slice the mushrooms thinly and arrange them in a layer on a serving platter. scatter the spinach chopped over top.
  • 2. squeeze the juice of lemon over top drizzle sme olive oil over top season with salt and pepper to taste. using a peeler shave the parmesan evenly over top. serve
