1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard
hot pepper sauce to taste

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

2 lb. lean ground beef
2 cups breadcrumbs
1 lb. portobello mushrooms
1/2 yellow onion, diced
2 tablespoons garlic, minced
2 large eggs, beaten
4 teaspoons Worcestershire sauce
1 tablespoon Italian seasoning
Salt and pepper to taste

Steps:

  • Pulse the onions, garlic and mushrooms in a food processor until finely chopped.
  • Combine ground beef, breadcrumbs, mushroom mixture, eggs and seasonings and mix thoroughly.
  • Shape it into a loaf with your hands and place it on a greased baking sheet.
  • Bake at 350°F for 45 minutes or until a meat thermometer reads 160°F in the center of the meatloaf.
  • Let it stand for 10 minutes before slicing.
  • Dish and serve hot with gravy of your choice.

1/2 cup old-fashioned oats
1/2 cup chopped red onion

1 package (19-1/2 ounces) Italian turkey sausage links, casings removed, crumbled
1 pound lean ground beef (90% lean)
1 cup marinara or spaghetti sauce
Shredded Parmesan cheese, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine the egg, mushrooms, oats, onion, flax and pepper. Crumble turkey and beef over mixture; mix lightly but thoroughly., Shape into a 10x4-in. loaf. ½ pound fresh mushrooms, all minced except for 6
¾ cup fresh bread crumbs
½ cup minced onion
½ cup ketchup
2 eggs, beaten
1 ½ teaspoons salt
½ teaspoon ground black pepper

  • Preheat oven to 350 degrees F (175 degrees C).

This recipe calls for wild mushrooms, but you can easily use button mushrooms or baby bella mushrooms if you prefer. Dried mushrooms can be reconstituted in the liquids that will eventually go into this recipe 15 minutes before making.

2 tablespoons olive oil
1 onion, diced, plus 1 onion, sliced
2 garlic cloves, minced
2 slices bread, day old
2 tablespoons milk
1 1/2 lbs lean ground beef
1/2 cup parmesan cheese, freshly grated
2 tablespoons prosciutto, chopped (or other cured ham)
2 eggs, beaten
salt & freshly ground black pepper
1 tablespoon butter
1 cup dry white wine
1/2 cup beef stock
6 ounces wild mushrooms, sliced (such as porcini or shiitakes)
2 tablespoons parsley, minced
1 tablespoon lemon zest, minced

Steps:

  • In a small saucepan, heat 1 tablespoon olive oil and saute onions over medium heat until golden, about 7 minutes.
  • Add garlic and cook another 2 minutes; remove from heat and let cool.
  • Pulse bread in a food processor to make about 1 cup of fresh bread crumbs; set aside 1/2 cup for the meatloaf (spread the rest on a baking sheet to dry out).
  • Combine the 1/2 cup bread crumbs with the milk, then squeeze out all the liquid you can and discard.
  • In a large mixing bowl, combine sauteed onion, garlic, damp bread crumbs, beef, Parmesan, prosciutto, and eggs; season with salt and pepper.
  • Form the mixture into a loaf shape and roll in the dried bread crumbs on the baking sheet.
  • Let rest in the refrigerator 30 minutes.
  • Preheat oven to 400 degrees F.
  • In a skillet, heat 1 tablespoon oil, over medium heat, and cook the sliced onions until golden, about 7 minutes; remove and set aside.
  • Melt butter in loaf pan, or casserole, or other stove-top and oven safe cooking vessel, add meatloaf and gently brown on all sides for about 7 minutes.
  • Add wine, stock, mushrooms, and sliced onions, and bring to a simmer; cover and transfer to oven.
  • Cook 45 minutes until internal thermometer reaches 160 degrees F.
  • Transfer meatloaf to a serving platter, skim any fat from sauce, then spoon sauce over meatloaf.
  • Garnish with parsley and lemon zest.

1 cup chopped mushrooms
½ cup chopped red bell pepper
½ cup finely chopped onion
1 clove garlic, minced
½ cup Italian-seasoned bread crumbs with Romano cheese
3 sprigs Italian parsley, finely chopped
1 large egg
1 teaspoon Italian seasoning
11 ounces ground pork
18 ounces lean ground beef
¼ cup tomato sauce
1 teaspoon Dijon mustard (such as Maille®)
1 teaspoon dark brown sugar
1 teaspoon white vinegar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Heat 1 tablespoon oil in a skillet over medium heat. Add mushrooms, bell pepper, and onion; cook and stir until just soft, 3 to 4 minutes. Add garlic and cook until fragrant, about 30 seconds. Set mixture aside and let cool.
