ITALIAN HERB BREAD I

2 (.25 ounce) packages active dry yeast
2 cups warm water (110 degrees F/45 degrees C)
2 tablespoons white sugar
¼ cup olive oil
1 tablespoon salt
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
½ cup grated Romano cheese
6 cups bread flour

Steps:

  • Mix yeast, warm water, and white sugar together in a large bowl. Set aside for five minutes, or until mixture becomes foamy.
  • Stir olive oil, salt, herbs, garlic powder, onion powder, cheese, and 3 cups flour into the yeast mixture. Gradually mix in the next three cups of flour. Dough will be stiff.
  • Knead dough for 5 to 10 minutes, or until it is smooth and rubbery. Place in an oiled bowl, and turn to cover the surface of the dough with oil. Cover with a damp linen dish towel. Allow to rise for one hour, or until the dough has doubled in size.
  • Punch dough down to release all the air. Shape into two loaves. Place loaves on a greased cookie sheet, or into two greased 9 x 5 inch loaf pans. Allow to rise until doubled in size, about a 30 minutes.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove loaves from pan(s), and let cool on wire racks for at least 15 minutes before slicing.

1 cup water (70° to 80°)
3 tablespoons butter
1 egg, lightly beaten
2 tablespoons sugar
1 teaspoon salt
1 teaspoon garlic powder

1/4 teaspoon dill weed

Steps:

  • Combine 1 1/2 cups flour, sugar, yeast, basil, salt, oregano, garlic powder, and rosemary in a large bowl.
  • Combine milk, water, and butter in a small microwave-safe bowl. Heat in a microwave until butter melts, about 30 seconds. Pour over the flour mixture; beat until dough is just moistened. Add egg; beat until smooth. Stir in remaining 3 cups flour to form a soft dough.
  • Turn dough onto a floured surface such as a large cutting board or countertop. Knead until smooth and elastic, about 4 minutes. Cover and let rest for 10 minutes.

2 (1/4 ounce) envelopes active dry yeast
1 tablespoon sugar
1/2 cup sweet onion, minced
3 cups white flour
1 cup whole wheat flour

1 teaspoon sweet basil
3/4 teaspoon garlic powder
1/2 teaspoon medium grind black pepper

6 tablespoons butter, melted (or margarine)
1 3/4 cups white flour (or a mix of 1 cup white and 3/4 cup whole wheat)
1 egg white

Steps:

  • Heat tomato puree in microwave or on stovetop to 100º F-110ºF. Stir in yeast and sugar; allow to stand 5 minutes. Add onions.
  • Combine 4 cups (white and whole wheat) flour, salt, Italian seasoning, basil, garlic powder, black pepper and celery seed in large mixing bowl. Beat in tomato mixture and melted butter. Stir in 1-3/4 cups flour; mix well with electric mixer.
  • Knead 5 to 10 minutes on a floured surface until dough is smooth and elastic. Place in a greased bowl; cover and let rise about 40 minutes or until double.
  • Punch down; divide the dough in half. Form each half into a round loaf and place in a greased 9-inch round cake pan, or place both loaves on a greased baking sheet. Cover; let rise about 40 minutes or until double. Brush surface with egg white.

This is an adaptation from a recipe posted on hungrybrowser.com in the Uncle Phaedrus section. I used my breadmaker to put the dough together and then hand shaped the loaves for baking. To use for a panini sandwich, slice each loaf in eighths (rendering 4 sandwiches per loaf), fill with your favorite ingredients and use your panini maker or grill with press to prepare a delicious sandwich. Mangia!

2 1/2 teaspoons active dry yeast
2 cups warm water
5 cups all-purpose flour or 5 cups bread flour
1 teaspoon salt
1 tablespoon olive oil
4 cloves garlic, peeled and chopped
1 teaspoon dried oregano
1/2 teaspoon dried rosemary or 2 teaspoons chopped fresh rosemary
1/8 teaspoon dried marjoram (optional)
2 teaspoons chopped fresh Italian parsley (optional)
1/2 teaspoon coarse salt
1/4 teaspoon black pepper
1/4 teaspoon lemon pepper

Steps:

  • Prior to placing ingredients in breadmaker, fill the container with water.
  • It needs to accomodate at least 11 cups of water.
  • If it has that capacity, you can dump the water out and proceed.
  • The dough makes a large amount and does rise to the top of the container.
  • Place all ingredients in bread machine in order suggested by the manufacturer.
  • If desired, you can hold off placing the herbs into the machine and wait until forming the loaves to place on top of bread.
  • Set machine to dough cycle.
  • When cycle is complete, punch dough down and knead a few times on a lightly floured surface (the dough should remain somewhat sticky).
  • Place dough in oiled bowl, turn to coat with the oil, cover, and allow to rise again until doubled, about 1 hour.
  • Ten minutes prior to rising is finished preheat oven to 400°F Lightly grease two baking sheets (I line them with Silpat sheets).
  • After dough has risen the second time, press air out and divide dough in half (dough will still be sticky, do not use more flour).
  • Press (using your hands) each half with a light touch into approximately an 8 x 11-inch rectangle on the individual prepared pans (rustic looking is okay, but don't press too flat).
  • Brush with olive oil.
  • If you haven't already added the herbs into the dough, scatter garlic, oregano, rosemary, marjoram, peppers, and parsley over surface of each and press lightly.
  • Sprinkle with salt.
  • Bake about 20-30 minutes or until a light golden.
  • Serve warm or slice to use for a panini sandwich and grill.
  • *Notethat preparation time doesn't include about 3 hours of rising time.

Yield Makes Makes 1 large loaf

Number Of Ingredients 5

500g strong bread flour
7g- a handful of yeast
Pinch of salt
150ml lukewarm water
150ml olive oil- plus a little extra for greasing

Steps:

  • Tip the flour into a bowl and mix in the yeast and salt. Create a well with your hands or the back of the spoon at the bottom of the bowl. Measure out 150ml of both water and oil and stir half of the liquid.
  • Now bring together to make a soft dough- adding what is left of the liquid when needed. I normally use my hand for this bit but a knife or wooden spoon is fine. Tip onto a lightly floured surface and knead for ten minutes- if the bread mix is sticky put flour on your hands. Don't worry if your dough is a bit on the wet side.
  • Oil the bowl you used for the flour and place your dough in the centre- Add a little drizzle of oil over the dough itself as this helps it prove. Cover with cling film- making sure it tightly stretched across the top of the bowl to not let any hot air out and leave in a warm place for 1-2 hrs or till it has doubled in size. Use a spatula to scrape the dough back onto the floured surface you used earlier. Knock back the dough and knead for a further 5 minutes adding the herbs as you go- you can use different herbs then the ones suggested!
  • Place the dough on a baking tray or if you want a proper loaf shape-a loaf tin! and again cover the tray in cling film and leave in a warm place till it doubles in size. When it has done this, uncover and bake your bread at 180C/160 fan/gas 6 for 15- 20 minutes till hollow. Allow the bread to cool for at least 5 minutes before you try to cut or taste the bread.

WHOLE WHEAT ITALIAN HERB BREAD RECIPE
