Sounds interesting. My son's school sent this recipe home and I have never seen a Haroset recipe with bananas! Sweet red wine can be used in place of the grape juice.

2 cups dates, pitted
1 cup walnuts
3 large apples, peeled and chopped
2 large bananas, mashed
1 orange
1/2 cup grape juice
1/2 tablespoon cinnamon
1 tablespoon lemon juice
1/8 teaspoon ground cloves
1 teaspoon matzo meal, as needed

Steps:

  • Chop dates, apples and walnuts and make the whole orange sections into fine pieces.
  • Place these in a bowl with the mashed bananas.
  • Add the grape juice or wine, cinnamon, lemon juice, cloves and mix well.
  • Add matzoh meal if too liquid.

6 apples - peeled, cored and chopped
1 cup finely chopped walnuts
½ teaspoon ground cinnamon
1 teaspoon white sugar
3 ½ teaspoons honey
⅓ cup sweet red wine

Steps:

  • Place the apples and walnuts into a large bowl. Mix together the cinnamon and sugar; sprinkle over the apples. Stir in the honey and sweet wine. Serve immediately, or refrigerate until serving.

Got this years ago from my son's preschool. Haroset is a spread that you smear on matzoh that is usually sweet. In this recipe the haroset is rolled into small balls. I guessed the amount of servings since I haven't made this yet.

1 cup almonds
25 dates, pitted, cut into small pieces
20 dried apricots, cut into small pieces
1/4 cup grape juice
cinnamon

Steps:

  • Mix the fruit with the nuts and add the grape juice to make a smooth paste.
  • Roll into 1 inch balls and sprinkle with cinnamon.

2 apples, red skinned
1 cup canned cherries, pitted, drained
1/2 cup almonds, finely ground
2 teaspoons cinnamon
2 -3 tablespoons honey
1 -2 tablespoon red wine, sweet, to moisten

Steps:

  • Core apples and cut into chunks, no need to peel.
  • Place in food processor and chop coarsely.
  • Add cherries, ground almonds and cinnamon. Process to coarsely chop cherries.
  • Transfer to a bowl.
  • Stir in honey to taste and red wine to moisten.
  • Serve at room temperature.

Charoset is served at the Passover seder and is meant to symbolize the mortar between the brick that the slaves had to use to build the walls. It is served as part of the seder.

8 ounces pitted dates
4 ounces golden raisins
4 ounces dark raisins
2 granny smith apples
2 teaspoons sweet wine
1/4 cup orange juice (not concentrate)
1 teaspoon ground ginger
1/2 cup blanched slivered almond

Steps:

  • Soak the raisins and dates in boiling water for several minutes.
  • Core and peel apple and chop.
  • In separate bowl mix wine, OJ, and ginger.
  • Place drained raisins and dates in food processor and pulse several times.
  • Add nuts and wine mixture and pulse again until you have a coarse paste.
  • I like it a little chunky so I do not pulse as much.
  • Remove to bowl.
  • Add in apple.
  • Cover and refrigerate.
  • It is possible to chop the dates and raisins by hand and use crushed almonds.

This is how I make my charoset but I usually use Passover Heavy Malaga wine or Concord grape wine instead of the grape juice. I personally don't add any honey. It makes about 2 cups. We love this stuff!

4 mcintosh apples, cored, peeled, chopped
3/4 cup walnuts, chopped
1/2 teaspoon cinnamon
1/4 cup grape juice (or red sweet wine)
honey, to taste (optional)

Steps:

  • Chop the apples by hand into little pieces.
  • Mix all ingredients.
  • Store in refrigerator in a covered container for up to 3 days.
  • Enjoy on matzoh.

TRADITIONAL HAROSET FOR PASSOVER

Although there are numerous recipes for Haroset, this is the basic traditional way of preparing it. Various fruits, or combination of fruits, such as dates, raisins, prunes, apricots and even coconut may be added as desired. Amounts of each ingredient may be adjusted to suit your particular taste. The computer does not recognize an ingredient without a specific amount, so I've suggested 1 tablespoon of wine but the amount can be adjusted either way. Keep in mind that the wine is used just to moisten the mixture.

I just saw this in the April 2008 Hadassah magazine and thought I'd post it. It's included in an article about some Guatamalans who have embraced Judaism. This recipe was created by Clara de Medina in Guatamala CIty in a competition created by the Rabbi they were studying under from Kansas City, MO. Clara wanted to add something to make it Guatamalan so she put in onion, garlic, cilantro, wine vinegar, olive oil and chiltepe, which is their spicy pepper.

3 green apples, peeled, chopped, with a splash of
lemon juice
2 tablespoons cashews, chopped
2 tablespoons honey
1 ounce sweet passover wine
1 teaspoon fresh cilantro, chopped
1 ounce green chili, and
red chile, chopped, they are locally called chiltepe
2 teaspoons onions, chopped
2 garlic cloves, peeled, chopped
1 small tomatoes, chopped
1 tablespoon wine vinegar
1 tablespoon extra virgin olive oil
cinnamon

Steps:

  • Toss all haroset ingredients in a bowl and set aside.
  • Liquify all ingredients for the sauce in a blender and season with salt to taste,.
  • Add 1 tablespoons of the sauce to the haroset and blend.
  • Add cinnamon to taste.
