- Coat a stovetop ridged grill pan or large nonstick skillet with nonstick cooking spray; heat over medium-high.
- Meanwhile, assemble panini; lay slices of bread on cutting board; top each with a slice of Cheddar.
- Place a tomato slice on top of 4 slices of cheese.
- Assemble to make 4 sandwiches.
- Cook 3-4 minutes, turning once halfway through.
- Press down with a spatula until cheese melts.

- In a small bowl, combine cheeses. Spread the cheese on the bottoms of the ciabatta rolls. Top with tomato slices and brush with olive oil. Sprinkle with basil and add 2 arugula leaves and close the panini.
- Set a large cast-iron skillet or griddle over moderately high heat. Arrange the panini in skillet and weight them down with a smaller pan (can fill with water if you need more weight). Cook the panini until the outside is crisp and the cheese is melted, 3 minutes per side.
- Cut panini in half and serve at once.

- Slice paninis in half. Spread pesto onto each half.
- Evenly distribute both cheeses and peppers on four bottom halves and top with four top halves.
- Heat skillet over medium-low heat.
- Cook sandwiches approximately 5 minutes on each side while applying pressure to flatten them.
- Sandwich is ready when bread is browned and cheese is melted.
