White Pizza Sauce image

Great for vegetable pizza, meat pizza, or pasta. Brush your favorite pizza dough with olive oil, spread sauce, add your favorite toppings, and bake per dough instructions. Also great for calzones or chicken, or chicken and broccoli with fettucine. Makes enough sauce for 2 medium pizzas. Freezes beautifully. Just thaw at room temperature.

2 tablespoons butter
1 tablespoon olive oil
¼ cup finely chopped onion
1 large clove garlic, minced
3 tablespoons all-purpose flour
1 cup milk, or more as needed
½ cup grated Parmesan cheese
2 tablespoons minced fresh basil
½ teaspoon chopped fresh oregano
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Heat butter and olive oil in a small saucepan over medium heat; cook and stir onion and garlic until tender and fragrant, about 1 minute. Add flour and whisk until flour is lightly browned and onion is translucent, 2 to 3 minutes.
  • Mix milk, Parmesan cheese, basil, oregano, salt, and black pepper into onion mixture. Cook, whisking continuously, until cheese is melted and sauce has thickened slightly, about 5 minutes. Remove from heat.

Italian Essentials: Sardinian Pizza Sauce image

This is a simple sauce with a minimum of ingredients, and about a 1-hour cook time. My favorite way to use this sauce is making a Sardinian pizza, on Sardinian flatbread. But this sauce would work great on any pizza, calzones, lasagna, and more. So, you ready... Let's get into the kitchen.

2 clove(s) garlic, minced
1 tablespoon(s) olive oil, extra virgin variety
28 ounce(s) crushed, fire roasted, tomatoes, with sauce, 1 can
1 teaspoon(s) dried basil
1 teaspoon(s) fennel seeds
1/4 cup(s) parmesan cheese, freshly grated
salt, kosher variety, to taste
black pepper, freshly ground, to taste

  • PREP/PREPARE
  • This is a one-pot recipe. Choose a sturdy pot with a lid that will hold all of the ingredients.
  • Tomatoes are one of the few items that I do not worry about buying in a can. There are a lot of good canned tomatoes out there. Here are some of my favorites: Carmelina San Marzano Whole Peeled Tomatoes are perfect Italian tomatoes that will help you make authentic Italian recipes. Muir Glen has been ranked consistently as one of the best diced canned tomato brands available in the market today. Sclafani Whole Peeled Tomatoes are made from the best tomatoes grown in the United States. It consists of fresh Jersey tomatoes grown near southern New Jersey.
  • Gather your ingredients (mise en place).
  • Add 1 tablespoon of oil to a saucepan, over medium heat.
  • Add the garlic, and cook until it begins to sizzle, but not brown. About 2 - 3 minutes.
  • Add the tomatoes, basil, and fennel seeds, then a pinch or two of salt, and pepper.
  • Bring up to a light simmer, and cover. Allow to lightly simmer for 50 minutes.
  • Chef's Note: As it is simmering, check for proper seasoning.
  • After 50 minutes, add the parmesan cheese, and stir until incorporated, about 1 - 2 minutes.
  • Remove from heat and keep warm, until needed.
  • Chef's Note: This sauce will last 4 - 6 days in the fridge, and several months, if frozen.
  • PLATE/PRESENT
  • Use to make a yummy pizza, or any Italian recipes that calls for a good tomato sauce. Enjoy.

This White Pizza Sauce is essentially an easy garlic alfredo. It has simple ingredients and comes together in about 5 minutes. It is a family favorite and so much better than the white sauce in pizza chains.

2 Tbsp unsalted butter
2 Tbsp all-purpose flour
1 1/4 cup milk ((2% or whole milk))
1/4 tsp sea salt
1/8 tsp black pepper
2 garlic cloves (pressed or finely grated)
1/4 cup parmesan cheese (shredded)

Steps:

  • Melt butter in a small saucepan over medium heat. Whisk in flour and continue whisking for 1-2 minutes (do not let it brown).
  • Slowly add milk, whisking constantly until smooth, thickened, and bubbly.
  • Whisk in 1/4 tsp salt, 1/8 tsp black pepper, and pressed garlic.
  • Add parmesan cheese and whisk another 30 seconds. Remove from heat and continue whisking just until cheese is melted and sauce is smooth then set aside to cool before using for pizza. Do not boil after adding cheese or sauce may curdle. Once cooled, cover and refrigerate up to 5 days.
