I couldn't believe that this simple, yet delicious, tea sandwich isn't here on 'Zaar! This is so good! I've used this for my cooking class, and even those teenagers who said they didn't like cucumbers, gobbled these up! If you want, you can use an English cucumber, then you don't have to peel it! I'm guessing on the servings amount.

1 (8 ounce) package cream cheese, softened (or neufchatel)
2 tablespoons mayonnaise (can use lite)
1 (2/3 ounce) package dried Italian salad dressing mix
1 cucumber, peeled and thinly sliced
rye cocktail bread or French baguette, sliced

Steps:

  • In a bowl, thoroughly mix cream cheese, mayonnaise and salad dressing mix.
  • Spread cheese mixture on bread slices and top with one slice of cucumber.
  • Arrange on serving platter.

These little open faced cucumber sandwiches are always a hit, and I never leave a party without getting asked for the recipe several times! Allow the mayonnaise mixture to sit overnight in the refrigerator if you have the time -- it will taste even better.

1 cup mayonnaise
1 (.7 ounce) package dry Italian-style salad dressing mix
1 (1 pound) loaf cocktail rye bread
1 cucumber, peeled and thinly sliced

Steps:

  • In a medium bowl, thoroughly mix mayonnaise and dry Italian-style salad dressing mix.
  • Arrange the cocktail rye bread slices in a single layer on a serving platter.
  • Place mayonnaise mixture in a pastry bag and squeeze an approximately 1 inch dollop of the mixture onto each cocktail rye bread slice.
  • Top each cocktail rye bread slice with a cucumber slice.

These are great for any type of party or gathering, and I never come home with leftovers. I've even eaten the "extra stuff" for breakfast the next day! This is a fairly salty tasting appetizer, so if you're not up for all the salt, add an extra 1/2 Cup of mayo to the mixture. It's trial and error in my house.

1 c real mayonnaise
1 pkg zesty italian or italian salad dressing mix
1 cucumber, peeled and sliced
1 loaf of party or cocktail style rye bread

Steps:

  • 1. 24 hours before, mix the mayo and dressing mix in a small bowl. Make sure it's mixed completely. Refrigerate until you're ready to use it.
  • 2. On the day you're going to be serving it, peel and slice the cucumber. Thickness is a personal preference. I like mine about the thickness in the picture, or even a little thicker.
  • 3. Put your mayo mixture into a zipper bag and snip a corner off (about the size of a nickel).
  • 4. Squirt a dollop of mayo mixture onto each slice of bread. I usually squirt about a tablespoon or so, but it's not rocket science. Just squirt some! Use the cucumber slice to "smush" it onto the bread so you don't have to spread it with a knife. This saves a LOT of time.
  • 5. The number of cucumbers you'll need depends upon how big they are (too big and you'll lose flavor) and how thick you like them. I always like to buy two medium sized ones, just to make sure I have enough. Leftover ingredients are great for breakfast! No kidding!

These open faceed sandwiches come together really quickly and easily. Try them for a quick brunch, a casual supper, a fun picnic or a filling snack. Adapted from Southern Living magazine(July 1988).

1 (8 ounce) package cream cheese, softened
1 tablespoon Italian salad dressing mix
2 tablespoons milk (dairy, soy, or rice)
6 slices rye bread
1 large cucumber, sliced
fresh ground black pepper

Steps:

  • Peel the cucumber if waxed, then slice into 1/4" slices. Combine cucumbers with the cream cheese and Italian dressing mix.
  • Spread on rye bread.
  • Top with cucumber slices.
  • Sprinkle pepper over the top.
  • Enjoy!
