1 pound imitation crabmeat, flaked
1 cup Italian bread crumbs, divided
1/4 cup egg substitute
2 tablespoons fat-free mayonnaise
2 tablespoons Dijon mustard
1 tablespoon dill weed
1 tablespoon lime juice
1 teaspoon lemon juice
1 teaspoon Worcestershire sauce

Steps:

  • Combine crabmeat, 1/2 cup of bread crumbs, egg substitute, mayonnaise, mustard, dill, lime and lemon juices and Worcestershire sauce. Shape into eight patties. Place remaining bread crumbs in a shallow bowl; dip each patty into crumbs to cover. Refrigerate for 30 minutes. , In a large skillet coated with cooking spray, cook patties over medium heat until browned on both sides.

When we set out to make the "best" crab cakes, opinions in the test kitchen were strong and varied. But we could all agree on plenty of fresh, high-quality crabmeat with very little filler. After some tinkering, we created these decadent cakes-generously sized and highly seasoned-with plenty of lemon juice, fresh herbs and spices. The jumbo lump crabmeat is front and center, so splurge on the best and freshest you can find.

2 pounds fresh jumbo lump crabmeat, picked over for shells and cartilage
1 1/2 cups panko
1/2 cup mayonnaise
1/4 cup chopped chives
1 tablespoon Dijon mustard
2 teaspoons seafood seasoning, such as Old Bay
Kosher salt and freshly ground black pepper
Juice and zest of 1 lemon, plus more lemon wedges for serving
3 tablespoons unsalted butter
3 tablespoons olive oil
1 cup mayonnaise
1/2 cup chopped dill pickles (about 2 whole pickles)
1 tablespoon capers, chopped
1 tablespoon minced chives
Juice and zest of 1 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • For the crab cakes: Gently fold together the crabmeat, breadcrumbs, mayonnaise, chives, Dijon mustard, seafood seasoning, 1 teaspoon kosher salt, 1 teaspoon freshly ground pepper and the juice and zest of one lemon in a large bowl. Refrigerate the crab mixture for 15 minutes to firm up; this allows the breadcrumbs to absorb some of the liquid, helping the crab cakes bind together.
  • Meanwhile, make the tartar sauce: Combine the mayonnaise, dill pickles, capers, chives, zest and juice of 1 lemon in a medium bowl and mix until combined. Season to taste with salt and pepper. Cover and refrigerate until ready to use.
  • Scoop heaping half cups of the crab mixture and pat into 2 1/2-inch wide patties. Lightly press them together so they do not fall apart while cooking. You should have 8 patties.
  • Heat 3 tablespoons unsalted butter and 3 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the crab cakes to the pan and cook until golden, about 2 minutes, then flip using a flat metal spatula. Continue to cook until lightly golden, about 1 1/2 minutes then transfer the pan to the oven. Cook until the crab cakes are completely heated through, about 10 minutes.
  • Serve the crab cakes with the tartar sauce and lemon wedges.

ITALIAN CRAB CAKES

When I was younger, we used to have blue claws that had been steamed through with garlic. I wanted to bring that flavor to a crab cake and my family really loves it. I hope you enjoy!

1 lb lump crab
1/4 c mayonnaise
1 large egg
1 Tbsp yellow mustard
2 lemons
1 tsp tuscan blend seasoning
1/8 tsp black pepper
1 1/4 can(s) panko bread crumbs, seasoned
1/2 c butter
4 clove garlic
PESTO
1 1/2 c fresh basil
1/8 c parmesan
2 clove garlic
1 tsp fresh lemon juie
1/3 to 1/2 c olive oil
salt & pepper to taste

Steps:

  • 1. In a small saucepan, melt butter until bubbly and turn off burner. Mix in garlic and juice of one lemon and allow to sit.
  • 2. In medium bowl add mayonnaise, eggs, mustard juice of half one lemon, Tuscan blend and pepper and whisk together. Gently fold in crab. Stir in 3/4 c of panko. Add more bread crumbs if needed.
  • 3. Portion into 4 crab cakes and place on platter, cover and refrigerate for at least 10 minutes. Place remaining panko on plate/bowl and dredge crab cakes. Set on wax paper until ready to cook.
  • 4. Heat skillet and place on 3-5 tbl of the garlic butter in large skillet. Add patties and fry approximately 4-5 minutes on each side or until done. Add more butter as needed while frying. Remove to paper lined plate until ready to serve.
  • 5. For the pesto: Place garlic in food processor and process until minced. Add basil, cheese, and lemon juice and start to blend. Slowly add in the olive oil while the blender is running. Blend until completely smooth.
  • 6. Place in small saucepan and bring to a boil. Reduce and simmer, stirring occasionally for 5 minutes. Add more olive oil if too thick and add salt and pepper to taste.
  • 7. Serve crab cake with pesto sauce and garnished with lemon and fresh basil leaves.

1 onion, finely minced
4 garlic cloves, finely minced
1 1/2 pounds jumbo lump crabmeat
1 1/2 cups fresh bread crumbs (made from 4 or 5 slices white bread with the crusts removed and processed in food processor)
2 tablespoons mayonnaise, plus more if needed
1 large egg white
1/2 lime, juiced
1/4 cup freshly chopped cilantro leaves, plus whole leaves, for garnish
Kosher salt and freshly cracked black pepper

1 recipe Garlic Aioli with Celery Root, for serving, recipe follows
Lemon wedges, for garnish
2 cloves garlic
1/2 cup sour cream
1 cup mayonnaise
1 tablespoon celery seed
1 lemon, juiced

About 2 cups shredded celery root, shredded using the grater attachment of a food processor or a mandoline
2 tablespoons freshly chopped chives

Steps:

  • Make the crab cakes first so they have time to firm up in the refrigerator before you cook them.
  • Heat a 2-count of olive oil in a frying pan over medium heat. Add the onion and garlic and cook for 5 to 7 minutes, until the onion gets kind of caramelized. Dump that into a bowl and fold in the crabmeat, bread crumbs, mayonnaise, egg white, lime juice, and cilantro, mixing just until well blended. Season with salt and pepper. Shape the mixture into 6 fat crab cakes. Put them on a plate, cover, and stick them in the refrigerator to chill.
  • To serve, heat a 3-count of olive oil in a large saute pan over medium heat. Add the crab cakes and cook for about 4 minutes each side until nice and crisp. Serve on torn butcher paper with fresh lemon wedges and Garlic Aioli with Celery Root.
  • Mince garlic and make into paste using the side of your knife. Hint: to make this go faster add a bit of salt to the garlic and continue mashing with the side of your knife.
  • Place the paste in a large bowl and add: the sour cream, mayonnaise, celery seed, lemon juice, and oil. Season well with salt and freshly ground black pepper. Fold in the shredded celery root and chives. Give it a final taste and adjust seasoning, if necessary.

I'm drawn to any recipe with pesto in it! There's pesto in the crab cakes and in the sauce. You can use real or imitation crabmeat (surimi) in these. Garnish with fresh basil leaves, Italian plum tomato slices, or julienned sun-dried tomatoes if desired. This recipe is from the 1998 Pillsbury Bake-Off.
