1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 jar (6-1/2 ounces) marinated artichoke hearts, drained and chopped
1 medium green pepper, chopped
2 medium tomatoes, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
5 slices deli ham, chopped
5 thin slices hard salami, chopped
5 slices pepperoni, chopped
3 slices provolone cheese, chopped
2 green onions, chopped
1/4 cup olive oil
2 tablespoons red wine vinegar
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons grated Parmesan cheese
Pepperoncini, optional

Steps:

  • In a large bowl, combine the first 11 ingredients. For dressing, in a small bowl, whisk the oil, vinegar, salt and pepper. Pour over salad; toss to coat. Sprinkle with cheese. Top with pepperoncini, if desired.

1/2 cup red wine vinegar
2 tablespoons honey
1 teaspoon dried Italian seasoning
2 cloves garlic, smashed and chopped
Salt and freshly cracked black pepper
1/2 cup olive oil
1 pound bacon
2 cups ditalini pasta, cooked al dente and cooled
1 cup crumbled gorgonzola
2 hearts romaine, chopped
1/4 small head red cabbage, chopped
1/4 head iceberg, chopped
1 to 2 large tomatoes, chopped
1/2 small red onion, minced

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • For the dressing: Place the vinegar, honey, Italian seasoning, garlic and some salt and pepper in a blender or food processor. While the machine is running, slowly drizzle the olive oil until the dressing is combined and emulsified. Adjust the seasoning if necessary, or add more oil if you want it less acidic.
  • For the salad: Lay out the bacon in rows on the prepared baking sheet. Place in the oven on the upper rack and cook until crisp, 10 to 15 minutes. Once it is nice and crispy, chop it up for your salad.
  • In a large bowl, combine the bacon, pasta, gorgonzola, romaine, cabbage, iceberg, tomatoes and red onions. Add the dressing and toss together until all is well coated. Taste and adjust the seasoning.

1/2 pound store-bought pizza dough, thawed if frozen and at room temperature
All-purpose flour, for dusting
Cornmeal or semolina flour, for dusting
3 tablespoons extra-virgin olive oil, plus more for brushing
1 cup tomato-basil sauce, such as Classico® Tomato & Basil Pasta Sauce
1 cup shredded mozzarella
1 cup plus 2 tablespoons grated Parmesan, plus more for serving
1 cup cherry tomatoes, halved
1/2 cup sliced pickled pepperoncini, halved
1/2 cup thinly sliced red onion
1 small clove garlic, grated
1 tablespoon red wine vinegar
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
Kosher salt and freshly ground black pepper
Fresh basil leaves, for garnish

Steps:

  • Place a 10- to 12-inch cast-iron or other heavy ovenproof skillet in the oven and preheat to 450 degrees F.
  • Put the pizza dough on a lightly floured surface. Using your hands or a rolling pin, press or roll the dough into a thin 10- to 12-inch round, depending on the size of your skillet.
  • Remove the hot skillet from the oven and sprinkle the bottom with cornmeal. Carefully place the dough in the skillet. Brush the edges of the dough with olive oil. Top with the sauce, mozzarella, 1 cup Parmesan and half of each of the tomatoes, pepperoncini and onion.
  • Bake until the cheese is melted and bubbly and the crust is golden, 12 to 15 minutes.
  • Meanwhile, put the 2 tablespoons Parmesan, the remaining tomatoes, pepperoncini and onion, along with the garlic, vinegar, dried basil and oregano in a mini food processor. Season with salt and blend until smooth. With the motor running, slowly stream in the 3 tablespoons olive oil. Taste and add more salt and pepper, if desired.
  • Remove the skillet from the oven. Carefully run a metal spatula around and under the crust to ensure no part is sticking to the skillet, then lift and slide the pizza out onto a cutting board. Drizzle with about 1/4 cup of the dressing, sprinkle with fresh basil and pepper. Slice and enjoy immediately, sprinkled with additional Parmesan. Save the remaining dressing for your next salad!

1 large iceberg lettuce
1 3/4 c cooked chicken, diced
4 large roma tomatoes
5 oz dry salami

1 bunch green onions
ITALIAN VINAIGRETTE:
1 egg yolk
1 Tbsp water
1 Tbsp dijon mustard

1 tsp black pepper

2 tsp dried oregano
1/2 tsp granulated sugar
1/3 c red wine vinegar
2 Tbsp lemon juice

Steps:

  • 1. FOR THE SALAD: Chop the lettuce into small bite-size pieces, and place in a large salad bowl. Add the diced chicken to the salad bowl.
  • 2. Chop the tomatoes into small bite-size pieces, and add to the salad bowl. The dice the salami into about 1/2-inch pieces, and add to the salad bowl.
  • 3. Add the grated cheeses and drained garbanzo beans to the salad bowl. Finely chop the basil leaves, and add to the salad bowl.
  • 4. With kitchen shears and working over the salad bowl, snip the green onions into 1/4-inch pieces, allowing the pieces to drop into the salad bowl.
  • 5. FOR THE VINAIGRETTE: Combine egg yolk and water in a small bowl and whisk well. Cover the bowl with a small plate and microwave on high for 10 seconds, or until the mixture starts to expand. Continue to cook 5 seconds longer. Whisk thoroughly. Cover and return bowl to microwave oven and cook on High heat for 5 more seconds. Remove bowl from microwave oven, whisk thoroughly. Cover and let sit for 1 minute.
  • 6. In a food processor combine the egg, Dijon, garlic, salt, pepper, dry mustard, oregano, sugar, vinegar and lemon juice; process to blend thoroughly. Slowly add the olive oil, processing until emulsified. Set aside. (The dressing makes about 1½ cups, which you may not need all of it; refrigerate the excess).
  • 7. Add about 1/2 to 1 cup of the Italian Vinaigrette to the salad, and toss the salad gently with salad tongs or two large serving spoons. Add more vinaigrette, if desired.

I love chopped salads and I love Italian food! This is a great side salad or awesome for a large BBQ to have out on the table for your guests.

One 15-ounce can chickpeas, rinsed and drained
1 tablespoon extra-virgin olive oil
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon red pepper flakes
3 hearts of romaine lettuce, finely chopped
1/2 head radicchio, thinly sliced
3 celery stalks, diced
10 cherry tomatoes, halved
3/4 cup sliced pickled pepperoncini peppers from a jar
1/2 cup oil-packed sun-dried tomatoes, rinsed and roughly chopped
1 cup diced cucumber
1 cup cubed provolone cheese
1/4 cup extra-virgin olive oil
1/4 cup red wine vinegar
1 tablespoon dried oregano
1 garlic clove, minced
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
1/4 teaspoon red pepper flakes

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • For the salad: Place the chickpeas on the prepared baking sheet and sprinkle with the oil, cumin, garlic powder, onion powder and red pepper flakes. Toss to coat. Roast until crisped, about 20 minutes.
  • Meanwhile, combine the lettuce, radicchio, celery, cherry tomatoes, pepperoncini, sun-dried tomatoes and cucumber in a large bowl.
  • For the Italian vinaigrette: In an airtight container, combine the oil, vinegar, oregano, garlic, black pepper, salt and red pepper flakes. Set aside.
  • Remove the chickpeas from the oven and let cool 10 minutes.
  • Toss the salad with 3 tablespoons of the vinaigrette. Place the salad in the center of 4 large plates and top with the cheese and crispy chickpeas.

1 clove garlic
1 oz Romano cheese
2 cups torn pita (pocket) breads
1 tablespoon olive oil
2 tablespoons red wine vinegar
2 tablespoons olive oil
1/2 teaspoon Dijon mustard
1/2 clove garlic
1/2 teaspoon salt
1/4 teaspoon pepper
6 slices salami, cut into strips
4 cups chopped romaine lettuce
1/4 cup drained Progresso™ chickpeas (from 15-oz can)
1/4 cup sliced red onion
3 to 4 sweet pickled peppers, sliced
4 Castelvetrano olives (or your favorite)
Additional grated Romano cheese, if desired

Steps:

  • Heat oven to 400°F. Line cookie sheet with cooking parchment paper.
  • Using hand-held plane grater, grate 1 clove garlic then grate Romano cheese. In large bowl, toss garlic and cheese with torn pita and 1 tablespoon olive oil to coat well. Spread in even layer on cookie sheet.
  • Bake 15 to 20 minutes, stirring once halfway through toasting, until toasted and golden brown. Remove from oven; transfer Croutons to bowl. Set aside to cool. Leave oven on and parchment paper on cookie sheet.
  • In jar with tight-fitting lid, place vinegar, mustard and 1/2 teaspoon olive oil. Grate 1/2 clove garlic into jar using hand-held plane grater. Add salt and pepper. Screw lid on jar; shake jar vigorously to combine. Set Dressing aside.
  • Spread salami strips on same paper-lined cookie sheet. Bake about 15 minutes or until crisp. Remove from cookie sheet to plate; cool slightly.
  • Divide lettuce among 2 to 4 bowls. Divide remaining salad ingredients into bowls. Top salads with salami, croutons, dressing and additional Romano cheese.
