"I usually get two frying pans going and have four cookie sheets full of chicken when I'm done. The hardest part is keeping my fellas out of it 'til dinner-time," notes the Belleville, Illinois cook.

1 package (15 ounces) dry bread crumbs
1 can (8 ounces) grated Parmesan cheese
2 tablespoons Italian seasoning
2 teaspoons garlic salt, divided
6 eggs
1/4 cup water
2-1/2 pounds boneless skinless chicken breasts, cut into 1/2-inch strips
Oil for deep-fat frying

Steps:

  • In a large resealable plastic bag, combine the bread crumbs, Parmesan cheese, Italian seasoning and 1 teaspoon garlic salt. In a shallow bowl, beat eggs, water and remaining garlic salt. Dip chicken strips into egg mixture, then shake to coat in crumb mixture., In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry chicken in batches until golden brown, about 4 minutes. Drain on paper towels. Serve immediately; or cool and freeze for up to 3 months.

6 -8 chicken strips (Frozen)
2 eggs, slightly beaten and mixed with small amount of milk
1/2 cup cracker crumb (Crushed)
1/2 cup Italian breadcrumbs (seasoned)
1 dash pepper, and or 1 dash garlic powder

Steps:

  • Combine the cracker crumbs, bread crumbs and spices in a Ziploc bag. (add any spices you wish).
  • Dredge the frozen chicken strips in the egg/milk mixture and then drop into the ziploc with the cracker/spice mixture.
  • Shake well to coat the chicken strips.
  • Place chicken in a baking dish ( that will fit into the NuWave oven) that has been sprayed with Pam.
  • Set NuWave oven to cook for 9 minutes at power 9.
  • Turn chicken over and continue cooking for another 9 minutes.
  • The chicken will be very moist and tender, and it will also be browned to perfection!

2/3 cup cornflake crumbs
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/3 cup reduced-fat ranch salad dressing
1 teaspoon water
1/2 pound boneless skinless chicken breasts, cut into eight strips

Steps:

  • In a shallow bowl, combine the cornflake crumbs, Italian seasoning and garlic powder. In another shallow bowl, combine dressing and water. Dip chicken into dressing mixture, then coat with crumb mixture. , Arrange chicken on a baking sheet coated with cooking spray. Lightly spray top of chicken with cooking spray. 8 oz. linguine
3 garlic herb chicken breasts, cut into strips or chicken breasts seasoned with italian herbs
1 cup shredded sharp cheddar cheese
3/4 c. frozen corn, thawed
1 (3 1/2 oz.) jar prepared pesto
1/4 c. seasoned bread crumbs
1/4 t. crushed red pepper flakes
1/4 t. pepper
salt to taste

Steps:

  • Cook linguine according to package directions, drain. Add chicken, cheese, corn, pesto, bread crumbs, red pepper flakes, salt & pepper. Toss to coat. *When I made this dish, it was VERY dry once all the ingredients were added. Possibly because I used less than the 3.5 oz. pesto? If you find this to be the case with yours, add a bit of chicken broth to moisten. You could also keep some of the water the pasta is boiled in and use that.

6 boneless, skinless, chicken breast halves
1 c milk
2 eggs, beaten
2 c italian seasoned bread crumbs
canola oil for frying
2 Tbsp butter
2 Tbsp olive oil
8 oz sliced mushrooms
2 clove garlic, minced
2 1/4 c chicken broth
1/4 c white wine
1/4 Tbsp flour
1 c shredded mozzarella
fresh chopped parsley (optional)

Steps:

  • 1. Cut each breast fillet into 3 strips. Mix together eggs and milk. Dip chicken in egg mixture and roll in bread crumbs; brown in hot oil in large skillet over medium-high heat.
  • 2. Remove chicken to a glass 9x13 baking pan.
  • 3. Next heat 2 Tbsp. olive oil, and 1 Tbsp butter in a large iron skillet and saute mushrooms and garlic until mushrooms are softened. Sprinkle flour over garlic & mushrooms. Add more butter to smooth out the flour. Mixing to combine .
  • 4. Pour chicken broth and wine into pan. Reduce heat and simmer five minutes. Stir constantly until thickened. Salt & pepper to taste.
  • 5. Pour over chicken.
  • 6. Sprinkle mozzarella cheese over the top. Bake in a preheated 350 degree oven for 25 minutes.
  • 7. Serve with a side of pasta or egg noodles. Garnish with fresh chopped parsley.

2 Boneless, Skinless Chicken Breasts
2-3 Cups Buttermilk (enough to soak raw strips)
2 Tbsp Garlic Powder
2 Cups Cornflakes Cereal (NOT FROSTED)
1/2 Cup Parmesan Cheese (Fresh or Canned)
1/4 Cup Italian Seasoning (any brand, preferably salt-free)
1 Egg
1/2 Cup of Milk
1 Tbsp Vegetable Oil

Steps:

  • Prep and Marinade: 1) Clean chicken breasts of all fat and other "undesirable" bits. 2) Slice the chicken into strip form (I found that slicing on a 45deg bias made nice strip slices). 3) Place sliced chicken into marinating container and spread garlic powder over them, then cover in buttermilk. Stir gently to make sure that garlic is mixed and buttermilk is touching all sides. 4) Let marinate in buttermilk for up to 3 hours, but anything over 30 minutes is fine. Breading and Cooking: 1) Place cornflakes in a plastic bag and crush to desired consistency. 2) Mix Parmesan Cheese and Italian Seasoning with cornflakes in "dry" dish. 3) Mix Milk and Egg in another "wet" dish. 4) Pull single strip from buttermilk mixture and dip in egg mixture to coat liberally, then place the strip in the dry mixture and coat both sides very well. Press breading into it well. 5) Place strip on plate and repeat process for all other strips. 6) Add oil to Acti-Fry and spread in pan. 7) Add prepped chicken strips into pan in a single layer, do not overfill. 8) Close lid and set timer for 10 minutes. Check strips for doneness and possibly add 2-3 more minutes as necessary.
