ITALIAN CHICKEN PARMESAN
This healthier version of chicken Parmesan comes from Margie Pharr of Belmont, Mississippi. The savory seasonings make the chicken and sauce a perfect pair, and you won't even miss the extra fat and calories.

- In a shallow bowl, combine the bread crumbs, Parmesan cheese and basil. In another shallow bowl, beat egg white until foamy. Dip chicken into beaten egg white, then roll in crumb mixture; place in a 1-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 30-35 minutes or until chicken juices run clear., Meanwhile, in a small saucepan, combine the cornstarch, Italian seasoning, sugar, garlic powder, Worcestershire sauce, pepper and tomatoes until blended. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Serve chicken and sauce with pasta if desired.

THE EVERYDAY ITALIAN CHICKEN PARMESAN
This is one of my favorite recipes; adapted from Giada DeLaurentis. You can use dried herbs if you must; use about 1/3 of the fresh amounts listed.

Steps:
- Preheat the oven to 500 degrees.
- Pound the chicken breasts to about 1/4 thickness.
- In a small bowl, stir the oil and herbs to blend.
- Brush both sides of the chicken with the blended oil and sprinkle with salt and pepper.
- Heat oven-proof pan over high heat. Add the chicken and cook until just brown, about 2 minutes per side. Chicken should be nearly cooked through.
- Remove from the heat.
- Spoon the spaghetti sauce over the chicken, top with mozzarella and sprinkle with parmesan.
- Dot the tops with butter pieces, and bake until the cheese melts and the chicken is cooked through; about 5 minutes.

ITALIAN PARMESAN CHICKEN WITH TUSCAN SPINACH SALAD
Steps:
- Heat oven to 375ºF. Coat chicken with cheese mixture and bake as directed on package. Heat dressing in large skillet on medium-high heat. Add peppers; cook and stir 3 to 4 min. or until crisp-tender. Add spinach and beans; cook 3 min. or just until spinach is wilted, stirring constantly. Serve chicken over the spinach salad.

Steps:
- Skin chicken if desired.
- Combine dry ingredients in one pie plate and milk and beaten egg in another.
- Wet drumsticks completely in milk and egg.
- Coat them thoroughly with the breadcrumb mixture, turning so that the crumbs cover the leg.
- Place legs in a lightly greased 9x13, making sure that the legs do not touch.
- Place in an oven preheated to 375* and bake 45-55 min or until juices run clear and chicken reaches an internal temp of 180*.

-  Preheat grill to medium-high heat. Combine tomatoes, olives, onion, capers, 3 Tbsp oil, vinegar, ¼ tsp pepper and garlic in a large bowl. Brush chicken with remaining 1 Tbsp oil, and sprinkle with salt and ½ tsp pepper. Grill chicken, covered with grill lid, 5 minutes per side or until done. Cut chicken into 6 servingsize pieces, and top evenly with tomato mixture. Note: Cook chicken in a grill pan coated with cooking spray, if desired. ---------------------------------------------------------------------------------     Bring 3¼ cups water, broth and salt to a boil in a large saucepan.
