Light and fluffy pancakes with lots of soft cabbage and onions that goes perfectly with a little dollop of sour cream on top and an onion-rhubarb relish on the side.

1 tablespoon olive oil
½ small head cabbage, cored and sliced thin
1 onion, thinly sliced
black pepper to taste
1 ⅓ cups plain yogurt
⅔ cup milk
¼ cup vegetable oil
2 eggs
2 cups flour
4 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon butter

Steps:

  • Heat the olive oil in a large skillet over medium heat. Stir in the cabbage and onion; cook and stir until the vegetables are soft and fragrant, about 10 minutes. Season with pepper, and set pan aside to cool.
  • Whisk together the yogurt, milk, vegetable oil, and eggs in a bowl until evenly blended; set aside. Stir together the flour, baking powder, and baking soda in a large bowl. Make a well in the center of the dry ingredients. Pour the wet mixture into the well, then stir until well combined. Fold the cooled cabbage and onions into the pancake batter.
  • Heat a large skillet over medium heat, and butter or oil if necessary. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

This is a recipe created by Russian German immigrants. It is very popular in the Nebraska, South Dakota region where I am from. Cabbage and ground beef are encased in a neat little bread package.

3 (1 pound) loaves frozen bread dough, thawed
5 pounds ground beef
¼ cup water
1 large head cabbage, chopped
1 large onion, chopped
2 cloves garlic, chopped
salt and freshly ground black pepper to taste
2 tablespoons butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Divide each loaf of frozen bread dough into 6 pieces, and roll into balls. Set aside.
  • Crumble the ground beef into a large pot over medium heat. Cook and stir until evenly browned. Drain off grease. Add the water, cabbage, onion, and garlic. Cook over medium-low heat, stirring as needed, until the cabbage is soft. Season with salt and pepper to taste. I like to use more pepper than salt. Drain off any excess liquids, and set aside.
  • On a lightly floured surface, roll the dough balls into 5 inch (approximate) squares. Place about 3/4 cup of the cabbage burger into the center, fold the dough over, and pinch to seal. Place on a baking sheet with the seam side down.
  • Bake for 15 to 18 minutes in the preheated oven, or until golden brown. Remove from the oven, and brush with melted butter. Serve hot.

1 head cabbage, chopped
8 -10 ounces smoked ham hocks
2 eggs (room temperature)
1/2 cup parmesan cheese
1/4 cup Italian seasoned breadcrumbs
1 teaspoon Tony Chachere's Seasoning
1/4-1/2 cup olive oil
7 cups water

Steps:

  • Place the chopped cabbage and smoked ham hocks in a medium stock pot and cover with water.
  • Use a slow boil to soften leaves of cabbage.
  • When done, drain and squeeze dry. Allow cabbage to cool before proceeding to next step.
  • In a mixing bowl combine the cabbage, egg, parmesan cheese, Tony Chachere's seasoning, & Italian bread crumbs.
  • Make into patties. Heat oil over medium heat in a medium size frying pan.
  • Fry the patties until golden brown on.

1 medium head cabbage, coarsely shredded
1 pound lean ground beef (90% lean)
1 large green pepper, chopped
1 medium onion, chopped
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
3 tablespoons tomato paste
1-1/2 teaspoons dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/8 teaspoon salt
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Place cabbage in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 6-8 minutes or until tender. Drain and set aside., In a large nonstick skillet over medium heat, cook and stir the beef, green pepper and onion until meat is no longer pink; drain. Stir in the tomatoes, tomato sauce, tomato paste and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes., Place half of the cabbage in an 11x7-in. baking dish coated with cooking spray; top with half of beef mixture. Repeat layers (dish will be full). Sprinkle with cheese. Bake, uncovered, at 350° for 15-20 minutes or until heated through., Serve immediately or before baking, cover and freeze casserole for up to 3 months., To use frozen casserole: Remove from the freezer 30 minutes before baking (do not thaw). 3 slices bacon (chopped into 1/2 inch pieces)
2 cups fried chopped cabbage
2 knockwurst, sliced into 1/4 inch slices
salt and pepper
1 cup breadcrumbs (approximately)
2 eggs
1/4 cup flour
1/2 cup oil

Steps:

  • Fry bacon until cooked through and add to cabbage.
  • Add knockwurst, salt, pepper, eggs, and enough bread crumbs to form a semi firm dough.
  • Shape into desired size patties (I get about 4), roll in flour and cook in oil over medium high heat until cooked through.
  • Usually about 5-7, minutes each side depending on size.

3 slices bacon, diced
1 pound bulk mild Italian sausage
1 (14 ounce) can beef broth
2 cups diced celery
1 white onion, diced
5 ounces shredded carrots
2 tablespoons Italian seasoning
2 teaspoons ground coriander
1 ½ teaspoons garlic, minced
1 teaspoon ground black pepper
½ teaspoon coarse sea salt
1 head cabbage, shredded
1 sweet apple, diced

Steps:

  • Cook and stir bacon in a Dutch oven over medium heat until browned and crisp, 5 to 10 minutes. Transfer bacon to a paper-towel lined plate and drain grease from Dutch oven.
  • Cook and stir Italian sausage in Dutch oven until browned and crumbly, 5 to 10 minutes. Pour beef broth into Dutch oven and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon.
  • Stir celery, onion, carrot, Italian seasoning, coriander, garlic, black pepper, and sea salt into beef broth mixture; bring to a simmer and cook until vegetables are tender and liquid is reduced, 15 to 20 minutes.
