Why throw away the rest of that good, dense loaf you picked up at the bakery the other day? This is what the Italians do with day-old (or older) bread. Simply delicious!!!

2 tomatoes, cut into bite-size pieces
1 small cucumber, peeled and sliced
1 small red onion, thinly sliced
1 clove garlic, very finely minced
1 cup fresh basil leaf, torn into small pieces
1/2 cup extra virgin olive oil, plus more as needed
3 tablespoons balsamic vinegar or 3 tablespoons red wine vinegar, plus more as needed
salt & freshly ground black pepper, to taste
6 -8 slices thick country bread, torn into bite-size pieces (sourdough is good - dense, bakery bread)

Steps:

  • In a bowl, combine the tomatoes, cucumber, onion, garlic and basil.
  • Drizzle with the 1/2 cup olive oil and the 3 tblsps vinegar, season with salt and pepper and toss well.
  • Place half of the bread in a wide, shallow bowl.
  • Spoon half of the tomato mixture over the bread.
  • Layer the remaining bread on top and then the remaining tomato mixture.
  • Cover and refrigerate for 1 hour.
  • Just before serving, toss the salad and adjust the seasonings with salt and pepper.
  • If the bread seems dry, add a little oil or vinegar.
  • Serve immediately.

MID-SUMMER ITALIAN BREAD SALAD

Everything in this salad is fresh, except the bread! Prepare this salad by using a loaf of artisan bread or rosemary bread that is a touch stale. If your bread is too fresh, toast it until it is about half as dried and crunchy as a crouton.

1 (1 pound) loaf Italian bread
1 cup chopped tomatoes
1 cup cucumber - peeled, seeded and chopped
1 cup chopped red onion
1 clove garlic, minced
2 cups chopped fresh basil
⅛ cup chopped fresh thyme
¼ cup olive oil
2 tablespoons balsamic vinegar

Steps:

  • Rub a peeled clove of garlic around a wooden salad bowl.
  • Pull apart or chop the bread into bite-size pieces.
  • In the prepared salad bowl, combine the bread, tomatoes, cucumbers, red onions, garlic, basil and thyme. Add enough olive oil and vinegar to lightly coat, toss and serve.

Like so many Mediterranean bread salads, stale bread is combined here with red onion and tomato and dressed with vinegar and olive oil. It's like a bread salad version of gazpacho.

1 pound stale country bread or baguette, cut in thick slices
1 small red onion, sliced very thin
Cold water
1 pound ripe tomatoes, chopped
2 tablespoons chopped fresh basil
2 tablespoons chopped flat-leaf parsley
2 tablespoons red wine vinegar or sherry vinegar (more to taste)
1 large garlic clove, minced or crushed in a mortar and pestle
Salt and freshly ground pepper
1/4 cup extra virgin olive oil

Steps:

  • If your bread is very hard, douse it with water first and saw it into a few pieces that will fit into a medium bowl. Cover with the onions. Pour on cold water to cover and let sit for 20 minutes. Lift the onions off the bread and rinse in a strainer. Drain the bread, squeeze out excess water and crumble the bread into a salad bowl.
  • Add the tomatoes, basil, and parsley to the bowl. Mix together the vinegar, garlic, salt, pepper, and olive oil, and toss with the bread mixture. Cover and refrigerate for 1 hour or longer before serving.

Italy's famous bread salad is usually associated with Tuscany, but my husband's father emigrated from Sicily, so I made up this version of bread salad using the flavors of Sicilian cuisine.

8 ounces country style white bread, cut into 1 inch cubes
3 tablespoons garlic flavored olive oil
½ teaspoon coarse salt
1 (15 ounce) can garbanzo beans, rinsed and drained
2 cups red or yellow teardrop tomatoes, halved
⅓ cup chopped green bell pepper
⅓ cup chopped red bell pepper
1 small red onion, cut into 3/4 inch slices
10 kalamata olives, pitted and halved
⅓ cup basil pesto
¼ cup balsamic vinegar
1 tablespoon minced fresh rosemary
¼ teaspoon black pepper
4 ounces crumbled goat cheese
1 head green or red leaf lettuce
¼ cup toasted pine nuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Toss the bread cubes with the olive oil to evenly coat. Sprinkle with salt, and toss again. Spread the cubed bread evenly over a baking sheet, and bake in the preheated oven until golden brown, about 12 minutes. Remove from oven and allow to cool completely.
  • Toss together the garbanzo beans, tomatoes, peppers, onion, and kalamata olives in a large bowl. In a separate bowl, whisk together the pesto, balsamic vinegar, rosemary, and pepper. Toss the tomatoes with the pesto mixture, and let stand at room temperature for 30 minutes to 1 hour.
  • To serve, toss the toasted bread cubes and goat cheese with the tomato mixture. Line a serving platter with a few lettuce leaves. Shred the remaining lettuce, and mound in the center of the platter. Spoon the bread mixture over the lettuce, and sprinkle with toasted pine nuts.

1 1/2 pounds ripe local tomatoes
1 small Kirby cucumber
8 ounces red onion
3 tablespoons extra-virgin olive oil
2 tablespoons red-wine vinegar
1/4 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Cut bread into 1/2-inch thick slices, then break up or cut up into 1/2-inch cubes. Place into large serving bowl.
  • Wash and trim tomatoes, and cut in quarters. Squeeze juice from tomatoes over the bread; then, dice the tomatoes in 1/2-inch cubes and stir into bread.
  • Scrub and trim cucumber, and slice thinly. Cut slices into match-sticks, and add to bowl.
  • Finely mince onion, and add. Drizzle oil and vinegar over ingredients, and mix well to moisten bread and meld ingredients. Season with salt and pepper.

6 c day old italian bread torn into bite size pieces
1/3 c olive oil
3 clove garlic, minced
1 pinch salt and pepper
1/4 c olive oil
2 Tbsp balsamic vinegar

10 small leaves basil,shredded
1/2 c black olives, pitted and halved [green if you prefer]

  • 1. Preheat oven to 400 degrees. In a large bowl toss bread with 1/3 cup of olive oil, salt, pepper, and garlic. Lay bread on baking sheet and toast until golden. About 5 or 10 minutes, allow to cool slightly. While bread is in oven, Stir together 1/4 cup of olive oil and balsamic vinegar. Gently toss together the bread, tomatoes, onion, basil,olives,and the mozzerella. Toss with vinaigrette and let stand for 20 minutes before serving.

1/2 loaf italian bread (5 ounces)

1 head Belgian endive, stem end trimmed, thinly sliced

  • Preheat oven to 450 degrees. Bring a large pot of salted water to a boil. Cook pasta until al dente, according to package instructions; drain and reserve.

1/4 cup extra-virgin olive oil
3 tablespoons fresh lemon juice
Coarse salt and ground pepper
1 1/2 pounds mixed heirloom tomatoes, cored and cut into thick wedges
1 English cucumber, peeled in strips, halved lengthwise, and sliced 1/2 inch thick
1 small bulb fennel, stalks removed, bulb halved lengthwise and thinly sliced
1 small red onion, halved and thinly sliced
1/3 cup pitted Kalamata olives, halved
4 1/2-inch-thick slices whole-wheat country bread
1 garlic clove, peeled and halved
1/2 cup fresh basil leaves
4 ounces ricotta salata cheese, shaved

Steps:

  • In a large bowl, whisk together oil and lemon juice; season with salt and pepper. Add tomatoes, cucumber, fennel, onion, and olives. Toss to combine. Refrigerate for at least 1 hour and up to 4 hours.
  • Heat broiler with rack set 4 inches from heat. On a baking sheet, toast bread until light brown on both sides, 1 to 2 minutes a side. Place the bread on a work surface and rub cut side of garlic against bread. Discard garlic. Cut bread into 2-inch pieces.

6 ounces bocconcini (1 cup, halved)
5 ounces provolone cheese, cut into 3/4-inch by 1/4-inch pieces

2 large tomatoes, cut into wedges
1 cup assorted pitted deli olive
3 ounces pepperoni slices, 3/4 cup

This yummy garden-fresh salad was a perfect complement to grilled summer favorites. I've got a bunch of late tomatoes ripening, so I've still been making it. You want to make sure you have the freshest tomatoes possible for this salad -- the anemic, pinkish, bland super market variety won't do!

6 cup(s) rustic italian or french bread, cubed
1/2 cup(s) olive oil, extra virgin
- salt and pepper, to taste
6-8 clove(s) fresh garlic, roughly chopped
1 1/2 - fresh tomatoes, cored, seeded and roughly chopped
3 tablespoon(s) red wine vinegar
1 - small onion, sliced thin
1/4 cup(s) fresh basil, chopped

Steps:

  • 1. Adjust oven rack to middle position and heat oven to 400 degrees. Toss bread pieces with 2 tablespoons oil, ¼ teaspoon salt and garlic; arrange bread in single layer on rimmed baking sheet. Toast bread pieces until just starting to turn light golden, 15 to 20 minutes, stirring halfway through. Set aside to cool to room temperature.
  • 2. Gently toss tomatoes and ½ teaspoon salt in large bowl. Transfer to colander and set over bowl; set aside to drain for 15 minutes, tossing occasionally.
  • 3. Whisk remaining 6 tablespoons oil, vinegar, and ¼ teaspoon pepper into reserved tomato juices. Add bread pieces, toss to coat, and let stand for 10 minutes, tossing occasionally.
  • 4. Add tomatoes, onion, and basil to bowl with bread pieces and toss to coat. Season with salt and pepper to taste, and serve immediately.

6 cups cubed (3/4-inch) country bread (about 1/2 pound)
1/2 seedless cucumber
1 celery rib, thinly sliced (1 cup)
1/2 cup chopped scallion
1/2 cup chopped pitted Kalamata olives
1 tablespoon drained capers, chopped
3/4 cup packed flat-leaf parsley leaves
3/4 cup packed basil leaves, torn
1/3 cup fine-quality extra-virgin olive oil
1/4 cup red-wine vinegar

Steps:

  • Preheat oven to 300°F with rack in middle.
  • Spread out bread in a 4-sided sheet pan and toast in oven, stirring occasionally, until pale golden, 20 to 25 minutes. Cool completely.
  • While bread cools, halve cucumber lengthwise, then core and thinly slice.
  • Toss together bread, cucumber, remaining ingredients, 1/4 tsp salt, and 1/2 tsp pepper and let stand, tossing occasionally, 30 minutes. Season with additional oil, vinegar, salt, and pepper.

1 and 1/2 cups Rustic Bread (not baguette - too hard), cubed into bite-size pieces (she uses take and bake bread from grocery or large french bread)
3 tablespoons Fustini's Varietal Olive Oil (she likes Arbequina and Hojiblanca)
1/4 teaspoon Salt and Pepper (1/4 tsp each)
1 l Large Heirloom tomato
1/2 cup Cherry or grape tomatoes
1 bunch Fresh mozzarella balls, quartered
1 teaspoon Kosher salt
5 ounces Fresh baby arugula, spinach, or spring mix, chopped to bite-size
4 tablespoons Basil, chopped
1/4 cup Sliced red onion
2-1/2 tablespoons Fustini's Herbs of Naples balsamic vinegar (2 to 2-1/2 T)
5 tablespoons Fustini's olive oil (arbequina)
1 pinch salt and pepper (pinch of each)
1/2 teaspoon Italian herbs

Steps:

  • Whisk dressing ingredients together and set aside (herbs of naples balsamic, arbequina oil, s&p, italian herbs).
  • In a non-stick pan, heat the varietal olive oil, basil, and salt and pepper. Add bread cubes and toss until crisp . Want toasted crisp on outside, soft inside. (Can also do on a sheet pan and toast in the oven.) Let cool.
  • In a large mixing bowl, add tomatoes and season with kosher salt. add the cooled bread cubes, arugula, basil and onion.
  • Pour the dressing over the salad and toss thoroughly and serve (note: just need a small amount of dressing until it just coats).

4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 tsp. minced garlic, divided
1 Tbsp. lemon zest
1/4 tsp. freshly ground black pepper
2 ciabatta sandwich rolls (3/4 inch thick), cut horizontally in half
4 cups baby arugula
1 large avocado, sliced
1 lb. grape tomatoes, coarsely chopped
1/4 cup HEINZ Balsamic Vinegar, divided
1/4 cup olive oil
1/2 tsp. sugar

Steps:

  • Heat oven to 400°F.
  • Place cream cheese onto parchment-covered baking sheet. Spray with cooking spray; sprinkle with 1/2 tsp. garlic, zest and pepper. Bake 8 to 10 min. until lightly browned. Cool slightly.
  • Meanwhile, cut each bread piece diagonally in half; place on baking sheet. Spray with cooking spray. Bake 3 to 5 min. on each side or until golden brown on both sides.
  • Arrange bread, arugula, avocados, tomatoes and cream cheese on platter. Beat vinegar, oil, sugar and remaining garlic with whisk until well blended. Drizzle over salad.

1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt

1 recipe - 3 roma/plum tomatoes, seeded and diced
2 ounces feta cheese, crumbled
3 tablespoons red onion, diced
1/4 cup olive oil
2 tablespoons olive oil
1/4 cup red wine vinegar
2 tablespoons honey

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Toss bread cubes with 2 tablespoons olive oil, garlic powder, onion powder, salt, and black pepper on a large baking sheet until evenly coated; spread mixture into a single layer.
  • Bake in preheated oven until toasted, about 10 minutes. Transfer toasted bread to a large bowl and mix with strawberries, tomatoes, feta cheese, and onion.
  • Whisk 1/4 cup olive oil, vinegar, and honey in a small bowl; drizzle over bread and tomato salad. Toss to coat.
  • Note: If not serving this immediately, wait to combine the bread with the rest of the salad as it will get soggy.
