I got this recipe from a local newspaper, I most always make this as a side dish along with a turkey dinner....very delicious!

Number Of Ingredients 9

1 1/2 lbs sweet potatoes, peeled and cut into chunks
1 1/2 lbs carrots, peeled and cut into chunks
3 tablespoons butter
1 small onion
2 cloves garlic, minced
2 tablespoons chopped fresh gingerroot
1/2 teaspoon curry powder
1/2 cup bottled mango chutney, chopped
salt and pepper

Steps:

  • Cook potatoes and carrots in boiling water until tender; drain, reserve some cooking liquid.
  • In a small pan, melt butter.
  • Cook onion, garlic and ginger until soft but not brown.
  • Add curry powder, and cook 1 minute more.
  • Puree potatoes and carrots using a food processor, food mill, or mash with potato masher.
  • Mix in curry mixture and chutney; if mixture is too thick, thin with reserved cooking liquid.
  • Season to taste with salt and pepper.

3 medium sweet potatoes (2 pounds), peeled and quartered
1/4 cup butter, cubed
3 tablespoons honey
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/8 teaspoon pepper

Steps:

  • Place steamer basket and 1 cup water in a 6-qt. electric pressure cooker. Set potatoes in basket. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 8 minutes. Quick-release pressure. , Transfer sweet potatoes to a food processor; discard cooking liquid. Add butter, honey, salt, nutmeg, cinnamon and pepper; cover and process until smooth.

This is a fast recipe to prepare and has a fabulous different flair! It calls for coconut milk, sweet potatoes and Jamaican dark rum, which are all indigenous to the Caribbean. My family loves it, mon!

2 cups heavy cream
1 cup coconut milk (not cream of coconut)
2 eggs, beaten
1/2 cup sugar
1 -10oz. box Candied Sweet Potatoes, cooked and cooled
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/2 teaspoon vanilla extract
2 tablespoon dark rum or 1 teaspoon rum extract

Steps:

  • In a medium saucepan, combine cream, milk, eggs and sugar and cook stirring over medium heat until mixture thickens slightly and coats the back of a spoon (aprox. 10 minutes).
  • In blender puree sweet potatoes (including the sauce in package), ginger, nutmeg, vanilla and rum together until well blended and smooth. Stir into cream mixture and cool. Freeze in electric ice cream maker. Place a couple of scoops in a dish top with nut mixture and garnish with a few gingersnap cookies.
  • Topping: 1 small jar nut topping for ice cream or finely chopped pecans
  • Garnish: Thin Ginger Snap Cookies

Yams or sweet potatoes are popular Hawaiian island fare, made more festive for luaus and other celebrations with the addition of typical, homegrown Hawaiian flavors.

2 ½ pounds yams, peeled and cubed
1 cup pineapple and orange juice blend
2 tablespoons softened butter
½ cup (packed) dark brown sugar
½ cup chopped macadamia nuts

Steps:

  • Place yams into a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Return yams to the cooking pot, and mash with juice until smooth. Pack mashed yams into a 3 quart casserole dish, dot with butter, then sprinkle with brown sugar and nuts. Loosely cover with aluminum foil.
  • Bake in preheated oven until hot and bubbly, 35 to 40 minutes.
