Polynesian Ham and Rice image

Give a tropical twist with pineapple to your regular ham and rice meal - perfect for Island-style dinner.

1 can (20 ounces) pineapple chunks in juice, drained and juice reserved
1 1/2 cups chicken broth
2/3 cup uncooked regular long-grain rice
2 teaspoons curry powder
1/8 teaspoon ground red pepper (cayenne)
1 package (6 ounces) frozen snow (Chinese) pea pods, thawed
1/2 pound fully cooked ham, cut into 1/2-inch pieces

Steps:

  • Mix reserved pineapple juice, the broth, rice, curry powder and red pepper in 10-inch skillet. Heat to boiling, stirring once or twice; reduce heat. Cover and simmer 20 minutes (do not lift cover or stir); remove from heat. Fluff rice lightly with fork. Cover and let steam 5 minutes.
  • Cut each pea pod crosswise in half. Stir pea pods, pineapple and ham into rice mixture. Cook over medium heat about 2 minutes, stirring once or twice, until hot.

HAM AND PINE BAKE

3 pounds sliced ham (spiral sliced works great)
1 (20 ounce) can sliced pineapple rings (drain and reserve juice)
1/2 cup brown sugar
1/2 cup honey
2 Tablespoons water
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350 degrees.
  • Carve the ham into pieces as you would when you normally carve your ham.
  • Cut the pineapple slices in half.
  • Spray a 9 x 13 inch pan with non stick cooking spray
  • Place the ham and pineapple slices in a row, in the pan. I did every 2 or 3 slices of ham to 1 slice of pineapple. (Remember to reserve the pineapple juice.)
  • In a bowl, mix the brown sugar, honey, water, cinnamon, nutmeg and 1/3 cup reserved pineapple juice until fully combined.
  • Pour the mixture over the ham and pineapple.
  • Cover the pan with foil, place in oven and bake for 40 minutes or until ham and pineapple are hot.

1 1/2 cups chopped fully cooked ham
1 can (8 oz) crushed pineapple in juice, drained
4 medium green onions, sliced (1/4 cup)
1 cup Original Bisquick™ mix
1 cup milk
2 eggs
2 teaspoons yellow mustard
1 cup shredded Colby-Monterey Jack cheese (4 oz)

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • Sprinkle ham, pineapple and onions in pie plate. In medium bowl, stir Bisquick mix, milk, eggs and mustard until blended; pour over ham mixture.
  • Bake uncovered about 25 minutes or until knife inserted in center comes out clean. Sprinkle with cheese. Bake 3 to 4 minutes longer or until cheese is melted.

A great take on a Hawaiian-style dinner. This one's great for that leftover ham. Cubed ham sauteed with onions and pineapple in a sweet sauce. Kids love it and it's great served over rice or noodles.

2 tablespoons butter
2 ½ cups cooked and cubed ham
2 green onions, chopped
1 cup pineapple chunks, drained
1 ⅓ cups pineapple juice
4 teaspoons cider vinegar
2 tablespoons brown sugar
2 teaspoons prepared mustard
2 tablespoons cornstarch

Steps:

  • Melt the butter in a large skillet over medium heat. Saute the ham, onions and pineapple chunks in the butter for about 5 minutes.
  • In a separate medium bowl, combine the pineapple juice, vinegar, brown sugar, mustard and cornstarch. Stir this together well and pour over the ham mixture in the skillet. Stir well and allow to heat through and thicken, about 5 minutes.
