6 ounce(s) pineapple juice
3/4 pound(s) flank steak
2 - bell peppers, sliced
1 large red onion, sliced
1 cup(s) monterey jack cheese, shredded
4 - flour tortillas

Steps:

  • Pour pineapple juice over flank steak in non-metallic dish.
  • Cover; marinate 30 minutes in refrigerator.
  • Discard marinade.
  • Grill or broil steak with peppers, onion for 15 minutes for medium rare or until vegetables are tender.
  • Divide steak and vegetables and cheese among 4 (8 inch) flour tortilla.
  • Roll up.

1 pounds chuck steak
0.5 cups olive oil
2 teaspoons garlic
1 units pepper cored
1 units sweet onion
1 cups molasses
2 teaspoons ginger
3 tablespoons lime juice
3 tablespoons worcestershire sauce
1 cubes beef bouillon
1 heads romaine lettuce
6 units tomatoes
8 ounces shredded cheese
16 ounces sour cream
1 units flour tortillas

Steps:

  • Brown steak in oil and garlic. Add peppers, onion, molasses, ginger, lime juice, Worchestershire, bouillon and simmer 20 minutes.
  • Prepare lettuce, tomatoes, cheese, and sour cream in self-serve bowls on serving area. (I use a lazy susan rotating server).
  • Spoon 1/2 cup of meat mixture onto each flour tortilla. Each person adds desired toppings.
