SAVORY ISLAND FAJITAS
Steps:
- Pour pineapple juice over flank steak in non-metallic dish.
- Cover; marinate 30 minutes in refrigerator.
- Discard marinade.
- Grill or broil steak with peppers, onion for 15 minutes for medium rare or until vegetables are tender.
- Divide steak and vegetables and cheese among 4 (8 inch) flour tortilla.
- Roll up.
ISLAND FAJITAS
Steps:
- Brown steak in oil and garlic. Add peppers, onion, molasses, ginger, lime juice, Worchestershire, bouillon and simmer 20 minutes.
- Prepare lettuce, tomatoes, cheese, and sour cream in self-serve bowls on serving area. (I use a lazy susan rotating server).
- Spoon 1/2 cup of meat mixture onto each flour tortilla. Each person adds desired toppings.
