TROPICAL ISLAND CHICKEN

- In a small bowl, combine first 10 ingredients. Set aside 1/3 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag. Add chicken; seal and turn to coat. Refrigerate 8 hours or overnight., Prepare grill for indirect heat, using a drip pan. Place chicken over drip pan; grill, covered, over indirect medium heat 45-60 minutes or until a thermometer reads 170°-175°, turning and basting frequently with reserved marinade during the last 20 minutes.

ISLAND BREEZE CHICKEN
When we go to the island of Cozumel, all you can smell wafting through the air are limes, no matter the time of day or night. When I get home sick to go back and I can't, I have to make some of this Island Breeze Chicken. Tender, juicy, sweet lime. What could be better?

Steps:
- 1. Brown chicken well in oil in 12 inch skillet over medium heat. Season with salt and pepper. Combine corn syrup, lime zest, lime juice and rum flavoring. Pour over chicken. Reduce heat, cover and cook over low heat until chicken is tender 20-26 minutes or until done in center.
- 2. Drizzle with a little olive oil before serving.
