This is my version of a traditional Kentucky stew recipe my brother brought back after going to school in Louisville. A favorite on Derby Day or any day!

3 tablespoons olive oil
1 pound cubed pork shoulder roast
1 pound cubed beef stew meat
4 cups chicken broth
1 ½ pounds bone-in chicken parts
2 cups diced potatoes
1 cup diced carrots
1 (15 ounce) can stewed tomatoes
1 cup smoky barbeque sauce
1 cup green beans
1 cup diced okra
1 cup corn
¾ cup diced onion
1 green bell pepper, seeded and diced
½ cup diced celery
¼ cup apple cider vinegar
1 tablespoon Worcestershire sauce
3 cloves garlic, chopped
3 bay leaves
1 teaspoon salt
½ teaspoon ground black pepper
1 dash hot pepper sauce, or to taste

Steps:

  • Heat olive oil in an 8-quart pot over medium heat; brown pork and beef cubes in the hot oil, working in batches if necessary.
  • Stir in chicken broth, chicken pieces, potatoes, and carrots. Bring to a boil, reduce heat to low, and simmer stew for 1 hour.
  • Stir in stewed tomatoes, barbeque sauce, green beans, okra, corn, onion, green bell pepper, celery, apple cider vinegar, Worcestershire sauce, garlic, bay leaves, salt, black pepper, and hot pepper sauce.
  • Bring stew back to a boil, reduce heat to low, and simmer 1 more hour.
  • Discard bay leaves before serving stew in bowls.

2 tablespoons vegetable oil
1 lb boneless beef roast, trim excess fat
1 lb boneless pork roast, trim excess fat
salt
fresh ground black pepper
1/4 cup red wine
2 medium onions, quartered
4 peeled garlic cloves
1 medium fresh hot pepper, quartered
water, to cover
1 (3 lb) whole chickens, cut into 8 pieces (pick of the chick works well)
2 cups chopped onions
2 cups chopped carrots
1 cup chopped celery
1 cup medium diced bell pepper
1 lb russet potato, peeled and diced
2 cups peeled seeded and chopped tomatoes
1/2 lb fresh green beans, strings removed and cut into 2 inch pieces
2 cups fresh corn kernels (about 4 ears)
spice essence, to season

Steps:

  • In a large, heavy pot, over medium heat, add the oil.
  • Season the beef and pork with salt and pepper.
  • Sear the meat, in batches, for 2 minutes on all sides.
  • Add the red wine to deglaze (about 1 minute).
  • Add the onions, garlic, and hot pepper.
  • Cover with water (approx. 3-4 quarts).
  • Bring to a boil, reduce heat to medium low, and simmer until tender (approx. 3 hours) Season the chicken with salt, pepper and essence.
  • Add the chicken during the last 1 ½ hours of cooking.
  • Remove the meat, chicken and vegetables, set aside to cool.
  • Discard the vegetables.
  • Add the remaining vegetables to the pot.
  • Continue to cook for 1 hour.
  • After the meat is cool, cube the beef and pork into 1" pieces.
  • Remove the skin and bones from the chicken and cube into 1" pieces.
  • Add the cubed meat to the vegetables.
  • Continue to cook for 30 minutes.
  • Re-season if necessary.
  • Ladle into serving bowls.
  • Serve with fresh bread or corn bread.

1 pound boneless chuck, cut into 1-inch pieces
1 pound boneless pork shoulder, cut into 1-inch pieces
4 tablespoons all purpose flour
4 tablespoons vegetable oil
1 pound skinless boneless chicken thigh, cut into 1-inch pieces
1 pound onions, cut into 1-inch pieces
3 cups canned low-salt chicken broth
3 large carrots, cut into 1-inch pieces
6 bay leaves
1/4 teaspoon ground allspice
2 large russet potatoes, peeled, but into 1-inch pieces

Steps:

  • Place beef and pork in large bowl; season with salt and pepper. Sprinkle 3 tablespoons flour over; toss to coat. Heat 3 tablespoons oil in large Dutch oven over medium-high heat. Working in batches, add beef and pork to pot; sauté until brown, about 4 minutes per batch. Using slotted spoon, transfer meats to plate. Place chicken in same large bowl; season with salt and pepper. Sprinkle 1 tablespoon flour over; toss to coat. Add chicken to pot; sauté until brown, about 4 minutes. Transfer chicken to small bowl.
  • Add remaining 1 tablespoon oil and onions to same pot; sauté until brown, about 5 minutes. Return beef, pork and any collected juices to pot. Add broth, carrots, bay leaves and ground allspice. Bring to boil. Reduce heat to medium-low. Cover; simmer 30 minutes.
  • Add chicken with any juices and potatoes to pot. Cover and simmer until all meats and vegetables are tender, about 45 minutes. Remove bay leaves. Season to taste with salt and pepper.

SLOW COOKER CHICKEN STEW WITH WILD RICE



Slow Cooker Chicken Stew with Wild Rice image

This thick, stick-to-your-ribs stew features tender wild rice and buttery-soft chicken. The poultry slowly simmers on the bone all day long, lending more flavor to the soup and moisture to the meat. After the long cook time, the meat falls off the bone and shreds easily.

1 teaspoon ground black pepper
2 pounds bone-in chicken breast halves
5 sprigs fresh thyme
2 bay leaves
3 cups 2% milk
½ cup all-purpose flour
1 tablespoon chopped fresh parsley, or to taste

Steps:

  • Stir chicken broth, onion, carrot, rice, celery, mushrooms, garlic, salt, and pepper together in a 6-quart slow cooker. Nestle in chicken, thyme, and bay leaves.
  • Cover and cook on Low until chicken and wild rice are tender, about 7 hours. An instant-read thermometer inserted near the bone of each breast should read 165 degrees F (74 degrees C).
  • Remove chicken from the slow cooker. Increase heat to High. Discard chicken bones and shred meat; set aside. Discard thyme sprigs and bay leaves.
  • Whisk milk and flour together in a medium bowl. Stir into slow cooker and cook on High until thickened, about 10 minutes. Gently stir in chicken. Garnish with parsley.

When growing up in Georgia, I felt BBQ wasn't BBQ with out some Brunswick Stew. This is a great recipe. Warning: it makes a lot. But, it freezes well, so not to worry.

2 lbs fryer chickens
2 lbs pork butt
2 lbs chuck roast
3 quarts water
3 lbs potatoes (peeled or cubed)
3 cups onions (chopped)
1 (28 ounce) can diced tomatoes
1 (17 ounce) can creamed corn
1 (14 ounce) bottle catsup
1 tablespoon jalapeno (chopped)
1/4 cup red wine
3 tablespoons lemon juice
2 tablespoons dry sherry
2 teaspoons paprika
1 tablespoon brown sugar
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon crushed red pepper flakes

Steps:

  • Combine three meats in large pot and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour or until meat is tender.
  • Remove meat and reserve broth. When cool, shred or chop meat.
  • Add potatoes and onions to broth and cook over medium heat until tender.
  • Add meat and remaining ingredients, bring to a boil. Reduce heat and simmer for 2 1/2 hours, stirring often.
  • Serve with your favorite BBQ. I prefer Carolina-style Pulled Pork sandwiches recipe#152801.
