TOMATO BASIL PIZZA SAUCE
This is a simple pizza sauce. If you grow fresh plum tomatoes use about 2 cups of them chopped in place of the canned tomatoes.

Steps:
- Heat oil in medium saucepan over a medium heat until hot.
- Add garlic; cook 30 seconds or until fragrant.
- Stir in tomatoes, salt and pepper and cook for 8-10 minutes or until slightly thickened, stirring and mashing tomatoes with potato masher until crushed.
- Stir in basil.
- Place in small bowl; cool to room temperature This sauce may be made up to 3 days ahead and refrigerated or up to 2 months ahead and frozen.

ULTIMATE PIZZA SAUCE
This pizza sauce recipe was given to me as a wedding present, written on the inside cover of a pizza cookbook. It is thick, saucy, spicy and delicious. I'll never use anything else on my homemade pizzas. I like to double or triple it and put it in Ziploc bags in my freezer.

Steps:
- In a large skillet, melt butter with the oil. Add the onion, celery and garlic and saute until soft and transparent.
- Add tomato sauce and tomato paste and stir until smooth.
- Add remaining ingredients and bring to slow simmer.
- Simmer for 30-60 minutes (or not at all depending on your taste and time frame).
- Remove the bay leaf and spread the sauce on your prepared pizza dough.

KITTENCAL'S PIZZA SAUCE
This is a full-flavored rich pizza sauce that I have been making for over 20 years, the longer you simmer this sauce the thicker and richer it will be --- this sauce freezes very well and even tastes better if made a day ahead and left in the fridge overnight to blend flavors --- also see my recipe#232188

Steps:
- In a saucepan, heat the olive oil; saute the onions, Italian seasoning and oregano for about 2-3 minutes, stirring until soft but not brown.
- Add in garlic and saute for 2 minutes, stirring constantly.
- Add in the tomato paste; stir and cook 1 minute.
- Add in the remaining ingredients; cook and simmer on low heat for 1/2 to 3/4 hours, stirring occasionally, adding more salt if needed (the longer you cook this sauce the thicker and richer it will be!).
- Cool slightly and use immediately or refrigerate up to 5 days or you may freeze.
- *NOTE* freeze in plastic containers after cooled, I find that this sauce tastes even better if left in the fridge overnight to blend the flavors before using or freezing.
- Delicious!
ROBUST PIZZA SAUCE
We take pizza very seriously at our house, so I always try to have fresh homemade sauce on hand. One cup is the perfect amount for a 12-14 inch pie and it's easy to store a good supply using very little freezer space if you freeze it by the cup in 1-quart resealable bags and stack them flat on your freezer shelf.

- Heat a large saucepan or Dutch oven over medium heat and add the olive oil. When it is hot, add the anchovies, garlic, and minced red pepper, Stir until the anchovies are about completely melted, keeping the heat low enough to prevent the garlic from browing. Add more EVOO if necessary.
- Next, add the green bell pepper, onion, celery, and salt. Cook over medium-low heat until well wilted taking care not to let them brown, about 10 minutes. Again, add a little more EVOO if it appears too dry.
- While the fragrants are cooking down, pile your fresh herbs on your cutting board, and with a chef's knife, chop them until very fine.
- Add the remaining ingredients to the pan, stir until well mixed, and simmer over low heat until desired consistency, about one hour. Stir frequently to make sure the bottom doesn't scorch.
- When it has cooked down to your preferred consistency, turn off the heat, remove the bay leaves and use a blender stick to smooth it out to a smoother texture, pureeing most of the larger pieces of vegetables.
- Label and date 8 1-quart resealable bags. Using a 1-cup measuring cup, pour one cup of sauce into each bag, lay flat as you remove as much air as possible while sealing each bag. Stack flat in a pile on your freezer floor to store.
