ULTRA-BUTTERY IRISH SCONES



Ultra-Buttery Irish Scones image

These tender, flaky scones are all about the butter-but the tart dried currants and a finish of flaky salt certainly don't hurt things.

Yield 8 scones

Number Of Ingredients 9

1 cup cold whole milk
1/4 cup granulated sugar
1 teaspoon kosher salt
3 cups all-purpose flour, plus more for dusting
2 1/2 teaspoons baking powder
1 cup (2 sticks) cold unsalted butter, divided
1/2 cup dried currants
Demerara or turbinado sugar (for sprinkling)
Flaky sea salt (for sprinkling)

Steps:

  • Preheat oven to 375°. Line a rimmed baking sheet with parchment paper.
  • Whisk milk, granulated sugar, and kosher salt in a medium bowl until sugar and salt dissolve. Whisk flour and baking powder in a large bowl. Cut 10 Tbsp. butter into 1/2" cubes, add to flour mixture, and blend with a pastry cutter or your fingertips until pea-size pieces form with some larger chunks remaining. Add milk mixture and stir with a fork until large clumps form. Gently knead in the bowl until dough just comes together. Transfer to a lightly floured work surface.
  • With a lightly floured rolling pin, roll out dough to a 14x8" rectangle, with long side facing you. Heat 2 Tbsp. butter in a small, microwave-proof bowl in the microwave until softened but not melted, about 20 seconds. Spread evenly over dough with fingertips, then sprinkle currants evenly on top and press to adhere. Fold up bottom third of dough over center, then fold down top third to meet bottom edge, as if folding a letter. Fold in half crosswise, then, using a rolling pin, gently flatten into an 8x4" rectangle.
  • Cut dough in half lengthwise and in quarters crosswise to form 8 even squares. Transfer to prepared pan, spacing 2" apart. Sprinkle tops generously with demerara sugar and lightly with flaky sea salt.
  • Bake until scones are golden brown, 25-30 minutes. Meanwhile, melt remaining 4 Tbsp. butter in a small saucepan over medium-low heat. When butter bubbles, remove from heat and skim off foam from surface. As soon as the scones come out of the oven, lightly brush tops with clarified butter, leaving behind white solids in bottom of saucepan. Cool scones on sheet on a wire rack and serve hot, warm, or room temperature.

  • Preheat oven to 400 degrees. In a large bowl, sift together flour, baking soda, and cream of tartar. Add softened butter and sugar, mix well. Stir in milk or buttermilk. Also stir in raisins or dried fruit. Press dough onto a floured surface and roll out gently to 1/2-inch thickness. Cut scones into round shapes or triangles. Brush scones with egg wash for shine. Bake for 20 minutes or until golden brown.

Steps:

  • Preheat oven to 425 degrees. Whisk together flour, baking powder, baking soda, granulated sugar, and salt.
  • Cut butter into small pieces; work into flour mixture with your fingers or a pastry cutter until dough resembles coarse meal. Add currants, caraway seeds, and buttermilk; stir until just combined.

1 large egg
3 tablespoons light brown sugar
1 teaspoon vanilla
2 1/4 cups cake flour (not self-rising)

1/2 teaspoon baking soda
1/2 teaspoon salt
3/8 cup cold unsalted butter, cut into bits
1/2 cup dried sour cherries (available at specialty foods shops)

Steps:

  • In a bowl whisk together 1/2 cup of the buttermilk, the egg, the brown sugar, and the vanilla until the mixture is combined well.
  • In another bowl stir together the flour, the baking powder, the baking soda, and the salt and blend in the butter until the mixture resembles coarse meal.
  • Stir in the cherries and the buttermilk mixture with a fork until the mixture just forms a sticky but manageable dough.
  • Knead the dough gently for 30 seconds on a lightly floured surface, pat it into a 3/4-inch-thick round, and cut it into 8 wedges. On an ungreased baking sheet brush the wedges with the remaining 1/4 cup buttermilk and sprinkle them with the granulated sugar.
  • Bake the scones in the middle of a preheated 400°F oven for 15 to 18 minutes, or until they are golden.

275 g wholemeal flour
275 g plain white flour
1 teaspoon salt
1 teaspoon bicarbonate of soda
400 -500 ml buttermilk (14 to 18 flluid ozs)

Steps:

  • Pre-heat the oven to 220C/450F.
  • Mix all the dry ingredients together in a large bowl. Make a well in the centre and add the smaller quantity of buttermilk, 400ml or 14 fluid ozs.
  • Mix by hand, adding more buttermilk if necessary, until you have a soft but not sticky dough.
  • Turn out on to a floured surface and knead lightly - just enough to shape the dough into a round. Flatten it to about 2.5cm/1in thick and cut out 8-10 scones, using a 7.5cm/3in plain cutter.
  • Put on to a floured baking tray and bake for about 20 minutes, until well risen and golden. Leave to cool slightly on a wire rack.
  • Serve with soup, stews or traditional breakfasts.

2 cups boiled mashed potatoes
2/3 cup flour
3 tablespoons melted bacon fat (NOT margarine) or 3 tablespoons butter (NOT margarine)
1/2 teaspoon salt

Steps:

  • Mash potatoes well, add real butter and salt.
  • Add as much flour as potatoes will take without becoming too dry.
  • Turn out onto a floured board, roll until ¼ inch in thickness.
  • Cut into circles, approximately 2½" in diameter.
  • Prick all over with a fork.
  • Cook on a hot dry griddle or heavy pan dusted with a little flour.
  • When they brown with small darker spots appearing, they are cooked.
  • Serve hot off the griddle with maple syrup, golden syrup, honey or butter.
  • Wrap uneaten scones in greaseproof paper and refrigerate.
  • Reheat cold scones by frying them in bacon fat until crisp, and serve with bacon and eggs - delicious!
  • *Flour amount varies according to the type of potato used.
  • For Vegetarian omit the bacon fat. Do not refry in Bacon fat to reheat for Vegetarian. And you might want to serve it with Vegetarian bacon not real bacon.

¾ cup whole wheat flour
3 tablespoons granulated sugar

1 ¼ teaspoons fine sea salt
8 tablespoons unsalted butter, cold, cut into 1/2 inch (1 cm) cubes
¾ cup buttermilk, plus more for brushing
2 teaspoons caraway seed, divided

4 tablespoons unsalted butter, room temperature
1 tablespoon irish whiskey, leftover from soaking raisins

Steps:

  • In a small saucepan over medium heat, bring the whiskey to a simmer. Turn off the heat, add the raisins, and set aside for at least 15 minutes to allow the raisins to plump.
  • Drain and reserve the raisins and whiskey separately.
  • Preheat the oven to 400°F (200˚C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and fine sea salt.

8 ounces self-raising flour (preferably self-raising soda bread flour)
1 pinch salt
1 ounce butter or 1 ounce hard margarine
1 egg, beaten
5 fluid ounces buttermilk
eggs or milk, to glaze
cinnamon sugar, to dust
1 teaspoon dry mustard
2 ounces cheese, grated
2 tablespoons fresh herbs, chopped (basil or whatever you like)

Steps:

  • Preheat oven to 450°F (gas mark 8).
  • Sift flour with salt and rub in butter or margarine.
  • For Cheese& Herb Scones add mustard, cheese and herbs to the dry ingredients at this point.
  • Make a well in the centre and pour in the egg and most of the buttermilk.
  • Mix quickly to form a soft dough, adding a little extra buttermilk if necessary.
  • Turn out onto a floured surface and roll out lightly until 1" thick.
  • Working quickly, cut into 2" rounds.
  • Glaze with egg or milk and set on a floured baking sheet.
  • Before baking, dust scones with cinnamon sugar for Buttermilk Scones or sprinkle a little grated cheese on top of each scone for Cheese& Herb Scones.

3 cups all-purpose flour
6 tablespoons sugar
1 tablespoon baking powder
Pinch kosher salt
1 1/2 sticks very cold butter, cut into pea-size pieces
2 cups Irish Cheddar, grated
1 cup heavy cream
2 teaspoons malt vinegar
2 Granny Smith apples, julienned
1/4 cup creme fraiche
4 scallions, greens only, cut on a bias
1 pound corned beef, sliced

Steps:

  • Preheat the oven to 375 degrees F.
  • Combine the flour, sugar, baking powder and salt in the bowl of a food processor and pulse once. Sprinkle the butter evenly on top. Pulse, pulse, pulse - in 1-second bursts - until the mixture looks like grated Parmesan cheese.
  • Add 1 1/2 cups of the Cheddar and pulse, pulse, pulse, while slowly drizzling in the cream, until the dough starts to come together.
  • Form the dough into a disk, and transfer to a floured work space. Gently roll the dough with a rolling pin into a 1-inch-thick rectangle. Cut out 35 pieces of dough, using a 1-inch-diameter ring mold, and transfer to a parchment-paper-lined sheet pan.
  • Bake, turning the pan halfway through, until golden brown and cooked through, 14 to 15 minutes. Let cool.
  • Meanwhile, combine the malt vinegar and apples in a medium mixing bowl. Stir in the creme fraiche, scallions and remaining Cheddar, and mix well.
  • When the scones are cool enough to handle, halve them equatorially. Place 1 slice of the corned beef on the bottom half of the scone, and top with the apple, cheese and scallions, followed by the top half of the scone. Repeat until all of the scones are filled.

  • Boil potatoes until tender. Drain. Peel. Rice.

  • Heat an iron skillet over high heat.

zest of 1 orange
1 1/2 Tbsp caraway seeds
1 c dried currants
1/4 c sugar
2 Tbsp sour cream or plain yogurt
1/2 c + 1 t butter
3/4 c well-shaken buttermilk

Steps:

  • 1. Preheat oven to 450F. Sift flour, salt, and baking powder. Add orange zest, seeds, currants, sugar, and sour cream.
  • 2. Add butter in small pieces, cut into flour until mixture resembles coarse crumbs. Add buttermilk, mixing lightly with your fingers.Knead briefly until mixture just comes together. It's important not to overmix. Dough will be a little sticky.
  • 3. Pull off clumps to make 12 mini breads. I sometimes sprinkle these with a pinch of sanding sugar to give them a sparkle.
  • 4. Divide breads onto 2 baking sheets about 3-4" apart. Bake until puffed and golden, 12-14 minutes at 450F.

1 large egg, separated
11/2 c bailey's irish cream coffee creamer
1 c heath bits 'o brickle toffee bits

Steps:

  • 1. Preheat oven to 425 degrees F. Line 2 cookie sheets with parchment paper; set aside.
  • 2. In a large bowl, combine flour, sugar, baking powder, salt and cream of tartar; cut in butter until crumbly.
  • 3. In a separate bowl, whisk together egg yolk and creamer; stir into dry ingredients JUST UNTIL MOISTENED! Do NOT over stir!
  • 4. Fold in toffee bits.
  • 5. Turn dough onto a floured surface and knead 10 times. Divide dough in half; pat each portion into a 7 inch circle and cut into 8 wedges per circle. Separate edges and place on prepared pans.

4 tablespoon(s) flour, + more for dusting
1/4 teaspoon(s) salt
4 tablespoon(s) butter, melted
2 tablespoon(s) fresh parsley, chopped
1/2 teaspoon(s) dried dill or fresh dill
1/4 teaspoon(s) dried summer savory
1/4 teaspoon(s) dried marjoram
1/4 teaspoon(s) dried sage
- oil/butter for frying
- sour cream

Steps:

  • Combine all ingredients (*except* for the oil/butter used for frying) in a large mixing bowl.
  • Heat up a skillet (cast iron this time) on medium heat. Add oil and/or butter and melt; about 1-2 tablespoons.
  • Shape the potato mixture into patties. Lightly dust the potato pancakes with flour. Fry until golden brown; approximately 5 minutes. Turn over, lightly dust with more flour and cook another 5 minutes. Do not crowd the potatoes when frying. Cook in batches.
  • Serve the Irish "scone" pancakes with sour cream on the side, if desired.

IRISH CRAN OAT SCONES

I found this recipe on the Food Network site. It came from the show Calling all Cooks. These are easy and very good!! You can also brush the tops of the scones with cream and sprinkle with turbinado sugar before baking to add a little crunch and some extra sweetness. (we thought they were perfect...with the added sugar crunch!)

2 cups all-purpose flour
1/2 cup oatmeal (we did not use the quick one)
6 tablespoons sugar
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
10 tablespoons unsalted butter, cold
1/2 cup dried cranberries
3/4 cup buttermilk

Steps:

  • Preheat the oven to 375 degrees F.
  • In a bowl, combine the flour, oatmeal, sugar, baking powder, baking soda, and salt. Using a pastry blender, cut the cold butter into the dry ingredients until the dough is crumbly.
  • Fold in the cranberries we also like other dried fruits such as chopped apricots etc. Add the buttermilk and stir lightly with a wooden spoon until the dough comes together to form a ball, (The dough will be sticky, but they warn not too over work dough)
  • On a lightly floured surface, pat the dough into a large circle about 2 inches thick. Cut the dough into wedges.
  • With a spatula, transfer the wedges to a baking sheet lined with parchment and bake for 22 minutes, or until the edges are lightly browned.
  • Cool on a wire rack.
  • Best served warm and on the day they are made.

These are perfect served w/ corned beef and cabbage.

1 cup(s) raisins
3 cup(s) flour
3/4 cup(s) whole wheat flour
1 cup(s) plus 2 tbsp reduced-fat, shredded sharp cheddar cheese
2/3 cup(s) sugar
1 tablespoon(s) caraway seeds
2-1/4 teaspoon(s) baking soda
3/4 teaspoon(s) salt
1-1/4 cup(s) buttermilk
1 large egg
6 tablespoon(s) melted butter

Steps:

  • Heat oven to 325. Coat a baking sheet w/ cooking spray. In microwave-safe bowl, microwave raisins in 1 cup water on high until hot, 1-2 mins. Let stand about 10 min, drain.
  • In bowl, mix flours, 1 cup cheese, sugar, caraway seeds, baking soda and salt. In another bowl, beat buttermilk, egg and 4 tbsp butter until mixed well. Stir into flour mix, along w/ raisins.
  • On floured surface, knead until dough forms. Divide dough into 2 equal pieces. Shape each piece into a 6" disk. Cut each disk into 6 wedges. Transfer wedges onto baking sheet, 2" apart. Brush tops w/ reamining butter. Bake 20 min, or until golden. Sprinkle tops w/ remaining cheese during the last 5 mins of cook time.

RORY'S IRISH SCONES

4 cups white flour
1/2 heaping teaspoon baking soda
1 teaspoon salt
1/2 heaping teaspoon sugar
Sift ingredients into a large mixing bowl.
2 cups buttermilk

Steps:

  • Preheat oven to 400°. Sift ingredients into a large mixing bowl. Make a well in the center of the dry mixture and add buttermilk. Mix together by hand until thoroughly combined (be careful not to overwork the dough, as this causes toughness). Turn out dough onto a well-floured surface and form into a large rectangle about 1 inch thick. Using a rolling pin and extra flour as needed, roll rectangle into a ¾ inch thickness. Using a sharp knife, cut dough into nine strips about 1 inch wide, then cut each of the strips into six 1-inch squares. Lightly flour a large sheet pan and arrange the dough squares in nine rows of six, just barely touching. Bake for 10 minutes, rotate the tray, and bake for 10 more minutes. (If you use a convection oven, bake for 1o minutes, rotate the tray, and bake for 7 minutes more.) Serve Rory's Irish Scones with our soups, salads, or main courses; they are perfect anytime.

IRISH SCONES

My sister Lorraine, who's an Irish chef sent me this recipe and they're really delicious. You can experiment with the fruit using candied mixed fruit or raisins or cherries or all of them!! In Ireland we don't usually eat them with clotted cream, that's more of an English thing!

600 g flour, self raising
180 g butter, cold
1 Tbsp baking powder
500 ml buttermilk
1 tsp salt
100 g sugar
1 pkg candied mixed fruit

Steps:

  • 1. Place flour, sugar, salt and baking powder in a bowl, mix.
  • 2. Cut in cold butter (or margarine) , use your fingers to break up butter until it resembles breadcrumbs. Add mixed fruit and mix lightly.
  • 3. Add buttermilk, start mixing with fork until dough starts to form, then turn out on to floured surface. Knead gently, just enough to bring ingredients together in a ball shape, then pat down to make a flat circle, about 1 inch thick. Using a cutter or a glass if you don't have one, just dip the glass in flour so that your scones drops out easily.
  • 4. Place the scones on a baking tray lined with parchment paper, brush with egg wash and sprinkle a little sugar on each. Bake for 20 minutes, 180 degrees with fan or until they have a nice golden colour. Depends on your oven. Remove and cool on wire rack. Best eaten warm though!!
