IRISH COUNTY MAYO CASSEROLE
I have not made this dish. It was in our weekly TV guide and thought it appropriate to post it. The originator of the recipe, JoAnnaM. Lund said that she named the recipe in honor of her grandmother's family who came from County Mayo in Ireland. Erin Go Braugh. It is quite low cal and sounds tasty. Very economical

Steps:
- Preheat oven to 350F, spray an 8x8 baking dish with oil.
- In a large skillet saute the cabbage, celery, onion,& carrots for 10 minutes or until tender.
- Stir in the corned beef, noodles& Swiss cheese.
- Add mushroom soup.
- mustard& salt& pepper.
- Spreadf the mixture in the baking dish.
- Bake for 30 minutes.
- Cool for 5 minures and serve.

IRISH POTATO AND CHIVE CASSEROLE
A new twist for mashed potatoes. I usually add a dash of onion and garlic powder. I also do a taste test prior to baking to see if they need more salt. Potatoes are combined with cream cheese, sour cream, chives, butter, and paprika...Delicious!!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place potatoes in a large pot of water. Bring to a boil, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain.
- Combine hot potatoes, cream cheese, sour cream, butter, and salt together in a large bowl. Mash until creamy.
- Spoon potato mixture into a 2-quart casserole dish. Sprinkle with chives and paprika.
- Bake in preheated oven until bubbling, about 30 minutes.

Steps:
- Brown thin strips of bacon in large skillet til golden & crispy. Remove bacon to paper towel lined plate.
- In the same skillet saute the onion until it begins to soften and then add the cabbage & cook until the cabbage is tender but not mushy.
- Stir cabbage & onion, corned beef & bacon into Simply Potatoes shredded hash brown potatoes & place all in a 9 x 13 casserole dish. Top with the shredded cheese & bake in 350 degree over for 30-45 minutes until cheese is melted & bubbly and everything is hot.
