The basis for this recipe came from another site. I modified it a bit so, rather than put my changes as comments for his recipe (I hate when people do that), I am posting it as a separate recipe. I have some hints at the bottom for night-before preparations.

1 tablespoon vegetable oil
1 pound lean ground beef
1 large onion, diced
4 cloves garlic, crushed
½ teaspoon salt
¼ cup chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
1 ½ cups water
4 (15 ounce) cans kidney beans, drained
1 (28 ounce) can crushed tomatoes
2 tablespoons tomato paste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add ground beef. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer cooked beef to a separate container.
  • Pour oil into the Instant Pot® and select Saute function. Add onion, garlic, and salt. Cook until softened, 5 to 7 minutes. Make a hole in the center of the mixture and add chili powder, cumin, and oregano. Let spices sit for 30 seconds, then stir into the onion. Return cooked beef to the pot and add water. Stir, being sure to scrape any browned bits from the bottom.
  • Stir beans, crushed tomatoes, and tomato paste into the beef mixture. Close and lock the lid. Select Chili function and set the timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

1 medium yellow onion, diced
3 cloves garlic, minced
1 jalapeño, seeded and minced
1 lb ground beef

1 teaspoon chili powder
¼ cup tomato paste
1 can whole peeled tomato
1 can kidney bean, drained and rinsed
1 ½ cups chicken stock
shredded cheddar cheese, for serving
fresh cilantro, roughly chopped, for serving

Steps:

  • Set the Instant Pot to sauté and add the olive oil. Once the oil begins to shimmer, add the onion and cook, stirring often, until starting to soften, about 5 minutes. Add the garlic and jalapeño and cook, stirring frequently, until aromatic, 1 minute.
  • Add the ground beef and cook, breaking up with a wooden spoon, until browned and cooked through, about 7 minutes. Add the salt, pepper, cumin, paprika, chili powder, and tomato paste and cook, stirring constantly, until combined, 1 minute.
  • Add the tomatoes and use a potato masher to break up, then add the kidney beans and chicken stock. Place the lid on the Instant Pot and set to pressure cook on high for 20 minutes. Once the timer goes off, set the Instant Pot to quick release.
  • Serve the chili with shredded cheddar cheese, cilantro, and sour cream.

It doesn't get easier than this! Brown some meat, then toss in the rest of the ingredients and hit start! Feel free to adjust the heat level by adding more chipotle peppers and/or adobo sauce. The cocoa powder and cinnamon are ideas I got from my favorite chili seasoning available at a local spice shop - they really transform the dish! I like to top this with sour cream, green onion and shredded smoked cheddar.

Steps:

  • Turn a 6-quart Instant Pot® to the normal saute setting and add the oil. When hot, add the ground chuck, chili powder and 1 teaspoon salt. Cook, stirring and breaking up the meat but still leaving some larger chunks, until browned, about 5 minutes. Stir in the garlic and onion and cook, stirring, 1 minute more. Add the tomatoes, beans, Worcestershire and coffee or cocoa and stir to combine. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 10 minutes.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid.

3 tablespoons chili powder

Steps:

  • Press Sauté and select the lowest temperature. Place the olive oil in the inner pot, wait about 1 minute for it to warm, then add the onions, bell pepper, garlic, and jalapeño. Cook with the lid off, stirring occasionally, until the onions soften slightly, about 5 minutes. Add the beef and sauté until no longer pink, about 5 minutes.
  • Add the chili powder, cocoa powder, salt, pepper, tomatoes, broth, and lime zest and juices and stir to combine, scraping up any brown bits off the bottom.
  • Close and lock the lid. Set the valve to Venting. Attach the condensation collector. Press Cancel, then press Slow Cook and select the lowest temperature. Set the time to 5 hours.
  • When the cooking time is finished, press Cancel and remove the lid. Add the beans, stir to distribute evenly, and then close and lock the lid to allow the residual heat to warm the beans, about 5 minutes.
  • Taste and adjust the seasoning, adding more salt and pepper as needed. Serve hot, garnished with crushed peanuts.

  • Chili will keep, in an airtight container in the refrigerator, for up to 4 days.

Juicy, tender ribs in less than 30 minutes? It sounds impossible, but with the help of a pressure cooker, you'll have perfect, fall-of-the-bone ribs in no time. We replicated the flavors of Chili's famous ribs by incorporating liquid smoke in the cooking process. We also created a cheater's BBQ sauce by upgrading good-quality store-bought BBQ sauce with chipotle in adobo, orange juice, and chili powder.

2 tablespoons coarse salt
1 tablespoon black pepper
1 teaspoon chili powder
¼ teaspoon cayenne pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
½ teaspoon sugar
½ teaspoon white pepper
1 rack baby back ribs, silverskin removed, cut in half crosswise
1 cup water
¼ cup apple cider vinegar
1 teaspoon liquid smoke, optional
½ cup store-bought brown sugar barbecue sauce
1 teaspoon chipotle pepper in adobo sauce
1 teaspoon chili powder
1 tablespoon orange juice

Steps:

  • Make the ribs: In a small bowl, combine the salt, black pepper, chili powder, cayenne, garlic powder, onion powder, sugar, and white pepper. Whisk to combine.
  • Season both sides of the baby back ribs with some of the dry rub, reserving the rest for another use.
  • Add the water, liquid smoke, and apple cider vinegar to the basin of an Instant Pot. Place the rack insert in the bottom and set the ribs on the rack on their sides, spiraling around the inside of the pot.
  • Close the lid of the Instant Pot, making sure the vent is set to sealing. Select manual pressure and set the pressure to high. Set the timer for 25 minutes. When the timer goes off, turn the machine to venting to release the pressure.
  • Meanwhile, make the barbecue sauce: In a medium bowl, stir together the barbecue sauce, chipotle in adobo, chili powder and orange juice. Set aside.
  • When the ribs have about 10 minutes of cook time left, arrange an oven rack in the upper third of the oven and turn the broiler to high. Line a baking sheet with foil.
  • Transfer the ribs to the prepared baking sheet. Brush liberally with the barbecue sauce.
  • Broil the ribs for 2-4 minutes, until the sauce begins to caramelize.

2 teaspoons ground black pepper
2 (29 ounce) cans tomato sauce
