Steps:
- Pre-heat the oven to 400F
- If needed, clean and trim the Brussels sprouts and cut them in halves and place them in an oven safe dish. Make sure to dry them very well before cooking.
- Add the garlic, Parmesan cheese, salt, and pepper, followed by the olive oil. Toss to coat.
- Roast in the oven uncovered for 20-25 minutes until crisp, brown and caramelized on the outside and tender on the inside. Serve with more grated cheese.

Brussels Sprouts hiding inside ground beef balls! No, it's not going to fool human enemies of the beloved sprouts, but you can toy with them if they've been bad little denizens. This recipe uses frozen sprouts. I wish I had the know how to adapt it to fresh, but I'm hoping someone else will. *hint, hint* ;o) Nabbed offline somewhere...

- In a large bowl, combine the first seven ingedients and mix well.
- Shape a scant 1/4 cupful around each frozen brussels sprout to form a meatball. Place in an ungresed 15 x 10 x 1 (inches) baking dish.
- Combine tomato sauce, water and thyme (salt and pepper too if u want), pour over meatballs. Cover and bake at 350 F for 1 hour and 15 minutes or until meatballs are cooked through.

This is a new recipe that my Neice gave me to try. She has 6 children and they all love it, sounds good. I think I will try it for Meet & Eat at church on the last Wednesday night of the month.

- 1. Mix first 6 ingredents, take about 1/4 cup of mixture and form around frozen brussel sprout place in a baking dish, continue until all is used and mix tomato sauce, water & thyme and pour over meatballs and cover with tin foil and bake at 350 for 1 hr.

- Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, salt and pepper. Pour them on a sheet pan and roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly.
