1/4 cup bulk pork sausage
1 egg
1/3 cup milk
Dash each salt, pepper and ground mustard
1 slice bread, crusts removed
1 green onion, sliced
1 tablespoon shredded cheddar cheese

Steps:

  • In a small skillet, brown sausages; drain. In a small bowl, beat egg, milk, salt, pepper and mustard; set aside. Cube bread; place in a greased 8-oz. custard cup. Top with sausage and onion. Pour egg mixture over top. Sprinkle with cheese. , Bake, uncovered, at 350° for 25-30 minutes or until a knife inserted in the center comes out clean.

3 slices bacon
1/2 small onion, diced
1 (9 ounce) package frozen chopped spinach, thawed, drained and squeezed dry
1/2 teaspoon black pepper
1/8 teaspoon ground nutmeg
1 pinch salt
1 (15 ounce) container whole milk ricotta cheese
2 cups shredded mozzarella cheese (8 ounces)
1 cup grated parmesan cheese (4 ounces)
3 eggs, beaten slightly

Steps:

  • Preheat oven to 350°. Spray muffin pan with nonstick cooking spray.
  • Cook bacon in large skillet on medium-high heat until crisp. Drain, cool and crumble.
  • In same skillet, cook and stir onion in remaining bacon fat 5 minutes or until tender. Ad spinach, pepper, nutmeg and salt. Cook and stir over medium heat about 3 minutes or until liquid evaporates. Return bacon to skillet and remove from heat.
  • Combine ricotta, mozzarella and Parmesan cheeses in large bowl; mix in eggs. Add cooked spinach mixture and combine well.
  • Divide mixture evenly to fill 10 muffin cps. Bake 40 minutes or until filling is set. Let stand 10 minutes. Run thin knife around edges to release. Serve hot or refrigerate and serve cold.

I make these on the weekend and then freeze them. I heat one up in the microwave right before I head to work during the week. You can alter the ingredients and experiment with different spices, maybe add spinach, herbs, mushrooms, other kinds of meat like bacon, different kinds of cheeses.

6 eggs
1 lb sausage
1/2 c onion, chopped
1 clove garlic, minced
1/2 c whole milk
1/2 c grated cheese
1 tsp red curry powder
tube(s) pepper

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. In a frying pan, brown sausage, onion and garlic together. Let cool in a bowl lined with paper towels to soak up grease.
  • 3. In a medium mixing bowl, whisk eggs with milk and curry powder. Add shredded cheese and stir.
  • 4. Once meat mixture is cooled to at least room temperature stir into egg mixture.
  • 5. Spray small ramekin baking dishes with olive oil cooking spray. Spoon egg and sausage mixture evenly between the ramekins until 3/4 full. Grind fresh pepper on top of each. Place all ramekins on a cooking sheet and place in the oven for 30 to 45 minutes or until toothpick stuck in the center comes out clean.

1 (10-ounce) package frozen chopped spinach, thawed and well-drained
7 eggs or 1 3/4 cups egg substitute, well beaten
3/4 cup cheddar cheese, shredded
1/4 cup red bell pepper, finely diced
1/4 cup mushrooms, finely diced
1/4 cup onion, finely diced

Steps:

  • Preheat oven to 350°F. Line muffin pan with foil liners. Set aside. Combine all ingredients in a bowl and mix well. Divide the mixture evenly among the muffin cups. Bake 20 to 25 minutes, until set and a knife inserted in the center comes out clean. Serve immediately or store refrigerated. Remove from foil liners and reheat in the microwave when you're ready to eat them. These also freeze very well. Freeze after fully baking. When you're ready to eat them, thaw, remove from the foil liners, and reheat in the microwave.
