1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
  • Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

We have a disadvantage here at the home, the resident's will ignore any food they don't recognize. So we tried these and they loved them! Yay! These are even good enough for company!

1/2 cup plain breadcrumbs (recommended Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended Heinz)

Steps:

  • Preheat the oven to 350ºF.
  • Heat the olive oil in a medium sauté pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8-10 minutes, until the onions are translucent but not brown. (We cooked ours longer, as we like them caramelized, 10-15 minutes).
  • Off the heat, add the Worcestershire sauce, chicken broth, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork.
  • DON'T MASH or meatloaf will be dense.
  • Divide the mixture into 6(10-11 oz)portions.(That is what the recipe calls for but we made them about 4-6 oz).
  • Then shape each portion into a small loaf on a baking sheet.
  • Spread about a tablespoon of ketchup on top of each portion.
  • Bake for 40-45 minutes, until the internal temperature is 155º-160ºF and the meat loaves are cooked through.
  • Serve hot.

1 large egg, lightly beaten
3/4 cup quick-cooking oats
1/4 cup chopped onion

1/3 cup ketchup
1 tablespoon brown sugar
1 tablespoon prepared mustard

Steps:

  • In a bowl, combine the first seven ingredients. Shape into six loaves, about 4x2-1/2-in. Place in an ungreased 13x9-in. baking dish. Combine the ketchup, sugar and mustard; spoon over loaves. , Bake, uncovered, at 350° for 35-45 minutes or until a thermometer reads 160°.

These little meat loaves from Better Homes and Gardens anyone can cook are a nice cheese change from your everyday meatloaf.

1 egg, lightly beaten
14 ounces pasta sauce, DIVIDED (I used 2 cups home made)
1/4 cup seasoned dry bread crumb, fine
1/4 teaspoon salt
1/4 teaspoon black pepper
12 ounces ground beef
2 ounces mozzarella cheese (I used 2 sticks string cheese) or 2 sticks mozzarella string cheese (I used 2 sticks string cheese)
4 slices prosciutto (about 2 ounces)
9 ounces spinach fettuccine, Fresh (for big eaters or teens you may want to use more than 9 ounces)
parmesan cheese

Steps:

  • Preheat oven to 400°F In a medium bowl combine egg, 1/4 cup of the pasta sauce, the bread crumbs, salt, and pepper. Add ground beef; mix well.
  • Cut mozzarella cheese block into four 2 1/4x3/4x1/2 inch logs or cut each string cheese stick in half crosswise. Wrap a lice of prosciutto around each cheese log. Shape one-fourth of the beef mixture around each cheese log to form a loaf. Flatten the four meat loaves to 1 1/2 inches thick and place in a shallow baking pan.
  • Bake for 20 minutes or until internal temperature registers 160 F on an instant-read thermometer. Meanwhile, prepare fettuccine according to package directions; drain well and keep warm. In a small saucepan heat remaining pasta sauce over medium heat until bubbly.
  • Arrange meat loaves over hot fettuccine. Spoon sauce over top and sprinkle with shredded parmesan cheese.

1 small onion, minced
1 green bell pepper, minced
Salt and pepper
1 clove garlic, minced
3/4 cup milk
2 slices bread
1/2 pound ground beef
1/2 pound ground pork
1/2 pound ground veal
1 egg
2 tablespoons ketchup
1 tablespoon Parmesan cheese

Steps:

  • Saute the onion and pepper in the oil for 4 to 5 minutes, or until tender but not browned. Season to taste with salt and pepper and stir in the garlic. Cook for 1 minute and set aside to cool.
  • Preheat the oven to 350 degrees. In a bowl, pour the milk over the bread and let soak for 5 minutes. Squeeze the excess milk from the bread and combine with the remaining ingredients, adding the onion mixture and season with salt and pepper. 1 cup round buttery cracker crumbs
1 egg, beaten
*1/2 cup finely chopped green pepper
*1/2 cup finely chopped onion
1/2 cup evaporated milk
1 tsp salt
1/4 tsp pepper
1 tsp. seasoned meat tenderizer
1-1/4 cups catsup, divided
3 tbsp. dark corn syrup
*saute onions and pepper before adding to mix if a milder flavor is desired

  • Combine first 9 ingredients and 1/4 catsup. Mix well. Shape mixture into six loaves an wrap individually in freezer paper or aluminum foil. Freeze. To serve, thaw in refrigerator; bake at 350F for 35 minutes. Combine corn syrup with remaining 1 cup catsup. Brush tops of meat loaf. Bake addiional 10 minutes.

2 tablespoons harissa chili paste
1/2 teaspoon ground coriander
1/2 teaspoon salt

1 egg, slightly beaten
1/2 cup ketchup
2 teaspoons harissa chili paste

  • In large bowl, mix all Meat Loaf ingredients, including carrot mixture, until just combined (do not overmix). Shape mixture into 6 small loaves. Place in pan.
  • In small bowl, mix Topping ingredients; spread over tops of meat loaves.
  • Bake uncovered 35 to 40 minutes or until meat thermometer inserted in center of loaves reads 170°F. Meanwhile, in medium bowl, mix Pickled Cucumber Relish ingredients. Let stand 10 minutes. After meat loaves are done, let stand 5 minutes; drain. Remove from pan.
  • Spoon relish on tops of meat loaves before serving.
