INDIVIDUAL ORANGE AND CHOCOLATE CHEESECAKES



Individual Orange and Chocolate Cheesecakes image

1/3 cup finely crushed chocolate wafers
2 tablespoons butter, melted
1/4 cup ricotta cheese
2 ounces cream cheese
1/4 cup sugar, plus 2 tablespoons
1 orange, zested
1 egg
Butter, for greasing

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the crushed chocolate wafers and the melted butter. Place a tightly packed teaspoon of the wafer mixture into each mini-muffin cup and press down firmly.
  • In a food processor combine the ricotta cheese, cream cheese, 1/4 cup of the sugar, half of the orange zest, and the egg. Blend until smooth. Lightly grease the sides of the mini muffin tin with butter. Fill the cups with about 1 1/2 tablespoons of the cheesecake mixture. Place the mini muffin tin in a baking dish and pour enough hot water in the baking dish to come halfway up the sides of the mini muffin tin. Bake for 25 minutes. Transfer the mini muffin tin to a wire rack and let cool for 30 minutes. Refrigerate for 15 minutes. Use a small knife to gently pop the cheesecakes out of the cups.
  • Just before serving, combine the remaining orange zest with the remaining 2 tablespoons of sugar. Top each individual cheesecake with about 1/4 teaspoon of the orange zest mixture and serve.

2 tablespoons granulated sugar
3 tablespoons butter, melted
1 cup dark chocolate chips

1 1/4 cups heavy cream
1/2 cup powdered sugar
1 (12-ounce) package frozen dark, sweet pitted cherries

Steps:

  • Process the cookies and granulated sugar in a food processor for 30 seconds or until finely ground. Add the butter; pulse 8 to 10 times or until combined. Press the mixture into bottoms of 8 (8-ounce) serving glasses (or small canning jars).
  • Microwave the chocolate in a medium-size, microwave-safe bowl 50 seconds to 1 minute or until melted and smooth, stirring after 30 seconds. Let cool slightly.
  • Beat the cream cheese with a mixer at medium speed 2 to 3 minutes until fluffy. Add the vanilla, salt, and melted chocolate, beating at low speed until well blended.
  • Beat the whipping cream until foamy; gradually add the powdered sugar, beating until soft peaks form. Fold the whipped cream into the chocolate mixture. Spoon into the glasses. Cover and chill 4 hours or until set.
  • For the topping, cook the cherries and sugar in a small saucepan over medium 5 minutes or until the sugar dissolves. Stir the cornstarch with 1 tablespoon water in a small bowl. Stir into the cherries; cook, stirring frequently, 5 minutes or just until thickened. Remove from the heat. Stir in the orange liqueur (or orange juice) and salt. Let cool.

Steps:

  • Line six large (8-ounce) cups of a muffin tin with plastic wrap; set aside. Combine sugar and crackers in the bowl of a food processor fitted with the metal blade; pulse until very finely chopped. Transfer to a small bowl, and stir in melted butter. Press into prepared muffin tin. Place in freezer while preparing filling.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the cream cheese, creme fraiche, and confectioners' sugar until combined. In another bowl, beat heavy cream just until stiff peaks form; fold into cream-cheese mixture. Spoon into crusts, and freeze until firm, about 30 minutes.
  • Meanwhile, heat pomegranate jelly in a small saucepan over low heat, stirring until melted and smooth. Remove from heat; let stand until cool but pourable.

Steps:

  • For cheesecake:
  • Preheat oven to 325°F. Butter six 1 1/4 cup custard cups. Toss ground cookies with melted butter in medium bowl to blend. Press 3 tablespoons cookie mixture evenly onto bottom of each prepared cup; reserve remaining cookie mixture.
  • Using electric mixer, beat cream cheese, sugar, and vanilla in large bowl until fluffy, occasionally scraping down sides of bowl, about 1 minute. 10 chocolate graham crackers, broken
1/4 c semisweet chocolate chips
3 Tbsp unsalted butter, melted
1 lb cream cheese, softened
3/4 c sugar
2 large eggs, room temperature
2 tsp pure vanilla extract
1 tsp grated orange zest
SAUCE
1 c frozen strawberries, thawed
2 Tbsp sugar

Steps:

  • 1. Preheat oven to 325 degrees F. Process the graham crackers and chocolate chips in a food processor, until finely ground. Add the butter and pulse until the mixture is sandy in texture and moist. Divide the mixture evenly among 6 large muffin cups, then press it evenly over the bottoms and about two-thirds of the way up the sides. Bake until the crusts are set - approx. 8 minutes. Cool.
  • 2. Clean out the food processor - then pulse the cream cheese, sugar, eggs, vanilla and orange zest until smooth. Divide the filling evenly among the muffin cups and bake until the rims are slightly puffed and the centers are almost set - approx. 30 minutes. Cool the mini cheesecakes in the cups, on a rack. Then refrigerate, uncovered, for at least 2 hours.
  • 3. Meanwhile, for the sauce: In a clean food processor or blender, puree the strawberries with the sugar.
  • 4. When you are ready to serve, run a small knife around the outside of the cheesecakes, then use the knife to gently lift them from their molds. Transfer chessecakes to small plates. Spoon some sauce over each and serve. Enjoy!

2/3 cup (about) raw sugar*
2 cups pure maple syrup
1/2 cup whipping cream
12 ounces cream cheese, room temperature
1/3 cup sugar
4 large eggs
1 1/2 teaspoons vanilla extract
1 1/2 pounds mascarpone cheese**
Fresh berries (optional)
Fresh mint sprigs (optional)
Raw sugar, also called turbinado or demerara sugar, is available at natural foods stores and most supermarkets.
Mascarpone cheese is an Italian cream cheese sold at Italian markets and many supermarkets nationwide.

Steps:

  • Butter twelve 3/4-cup custard cups. Sprinkle raw sugar in each buttered cup, turning to coat bottom and sides and tapping out excess raw sugar. Arrange prepared custard cups in large roasting pan.
  • Bring maple syrup to boil in heavy large deep saucepan over medium-high heat. Reduce heat to medium and boil gently until maple syrup is reduced to 1 cup, stirring occasionally, about 30 minutes (syrup will bubble vigorously). Remove saucepan from heat and stir in whipping cream (mixture will bubble up high). Return saucepan to medium heat and simmer until any crystallized bits dissolve and mixture is reduced to 1 cup, stirring constantly, about 5 minutes. Cool completely.
  • Preheat oven to 325°F. Using electric mixer, beat cream cheese and sugar in large bowl until smooth. Beat in eggs 1 at a time, then beat in vanilla extract. Add mascarpone cheese and beat just until blended and smooth. Add cooled maple syrup mixture to cheese mixture and beat until well blended.
  • Pour batter into prepared custard cups, dividing equally. Add enough hot water to roasting pan to come halfway up sides of custard cups. Bake until cheesecakes are light golden on top and centers move slightly when custard cups are gently shaken, about 1 hour. Cool in water bath 15 minutes. Remove custard cups from water bath. Refrigerate uncovered overnight. (Cheesecakes can be prepared 2 days ahead. Cover with plastic wrap and keep refrigerated.)
  • Run small sharp knife around sides of cheesecakes to loosen. Place dessert plate atop 1 cheesecake. Invert cheesecake onto plate; shake gently to release. Repeat with remaining cheesecakes. Garnish each with fresh berries and fresh mint sprigs, if desired. Serve cold.

2 cups frozen raspberries, thawed but not drained
1/4 cup sugar

1/2 cup chocolate wafer, crushed (10 cookies)
1 teaspoon sugar
2 tablespoons butter, melted
1 (8 ounce) package cream cheese, room temperature
1/4 cup sugar
1 egg
1 egg yolk
2 teaspoons water
1 tablespoon whipping cream
1/2 teaspoon vanilla
1/4 cup whipping cream, plus
2 tablespoons whipping cream
5 ounces bittersweet chocolate, chopped
fresh raspberry, garnish

Steps:

  • Place a fine sieve over a small saucepan and press the thawed raspberries and juices through it, extracting as much liquid as possible. Stir in sugar. Bring mixture to a boil over medium high heat, stirring constantly until sugar dissolves. Boil liquid, stirring constantly,until mixture is reduced to 3 tablespoons (20 minutes). Remove from heat and set aside, cooling completely.
  • Preheat oven to 325-degrees F. Grease inside of cans with butter. Place cans on parchment paper, tracing circles to fit inside cans. Line bottom of cans with paper circles. Place cans on cookie sheet and set aside.
  • Place the crushed cookies and sugar in a small bowl and mix with a fork. Add melted butter to crumbs and stir with fork unil crumbs are moistened. Spoon crumb mixture into cans, dividing evenly among the three cans, pressing down with fingers. Bake for 10 minutes. Remove from oven but keep oven on.
  • Place cream cheese and sugar in mixing bowl and beat with electic mixer on medium speed for 45 seconds or until mixture is creamy. Add egg, yolk and water, reduce mixer speed to low and beat until combined (20 seconds). Beat in the prepared raspberry reduction (the raspberries that were boiled down and set aside), cream and vanilla (15 seconds) until blended. Spoon batter into cans, dividing evenly among the three cans. Return to oven and bake until set (25-30 minutes). Remove from oven and transfer cheese cakes to cooling rack. Cool completley in cans. Cover and refrigerate 6 hours or overnight to cool completely.
  • The next day- pour cream (1/4 cup plus 2 tablespoons) into saucepan and bring to a boil over medium high heat. Remove from heat and add chocolate, swirling to incorrporate chocolate into cream. Let stand one minute. Stir with a whisk until chocolate is completely melted and mixture is smooth. Use immediately.
  • To serve - run a knife around the insides of the cans to loosen cheesecakes. Turn cakes out and remove paper circles, placing cakes upright on cooling rack. Spoon chocolate sauce over cheesecakes, using a spatula or knife to smooth it over top and sides of cakes. Arrange a few raspberries on each cake, if desired. Refrigerate until firm (20 minutes or up to 4 days). Transfer cakes to individual dessert plates.

  • Add 1 more Bar of cream cheese and combine.

1 cup graham cracker crumbs
3 Tbsp. sugar
3 Tbsp. butter or margarine, melted
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3/4 cup sugar
1 tsp. vanilla
3 eggs

Steps:

  • Preheat oven to 300°F. Mix cracker crumbs, 3 Tbsp. sugar and the butter; press scant 1/3 cup crumb mixture onto bottom of each of four mini (4-1/2-inch) springform pans. Bake 7 min.
  • Beat cream cheese, 3/4 cup sugar and the vanilla with electric mixer on medium speed until well blended. Add eggs, one at a time, mixing on low speed after each addition just until blended. Pour one-fourth of the batter (about 1 cup) into each of four bowls. If desired, add one of the Stir-In Ideas to each bowl of batter. Pour over crusts. Place pans on baking sheet.
  • Bake 40 to 45 min. or until centers are almost set. Run knife or metal spatula around rims of pans to loosen cakes; cool before removing rims. Refrigerate at least 4 hours.

18 paper baking cups
18 gingersnap cookies
12 oz cream cheese, softened
3/4 cup sugar
1 Tbsp corn starch
1 tsp pumpkin pie spice
2 eggs
1 cup canned pumpkin
1/3 cup Karo lite syrup (or substitute Karo light corn syrup)

Steps:

  • 1. Place paper baking cups in muffin pans. Place 1 gingersnap in each cup. 2. Beat cream cheese, sugar, corn starch and pumpkin pie spice with an electric mixer until well mixed. Add eggs and blend well. Add pumpkin and syrup. Beat 1 minute. 3. Pour filling into cups, dividing evenly. Bake in a preheated 325F oven for 30-35 min, until just set. 4. Chill for 1 hour. Garnish with whipped cream.
