1 medium apple, peeled, cored and thinly sliced
1 teaspoon butter, melted
1 tablespoon packed brown sugar
1 teaspoon Gold Medal™ all-purpose flour
1/4 teaspoon apple pie spice
1/2 cup Nature Valley™ cranberry almond protein granola
Vanilla Greek yogurt and additional apple pie spice, if desired

Steps:

  • In medium bowl, toss apple slices and butter. Add brown sugar, flour and 1/4 teaspoon apple pie spice. Toss to coat evenly.
  • Spray two 4- to 6-oz microwavable ramekins with cooking spray. Divide apples between ramekins. Microwave ramekins uncovered on High 1 minute 30 seconds to 2 minutes or until apples are softened. Top each with 1/4 cup of the granola.
  • Top with dollop of yogurt and additional apple pie spice. Serve immediately.

1 cup thinly sliced peeled tart apple
1 tablespoon sugar
2 teaspoons water
2 tablespoons plus 2 teaspoons all-purpose flour
2 tablespoons brown sugar
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Dash salt
2 tablespoons cold butter
Whipped cream, optional

Steps:

  • In a small bowl, combine the apple, sugar and water. Divide between two 6-oz. ramekins or custard cups coated with cooking spray. , In a small bowl, combine the flour, brown sugar, cinnamon, nutmeg and salt. Cut in butter until mixture resembles coarse crumbs. Sprinkle over apple mixture. Bake at 375° for 20-25 minutes or until tender. Serve warm with whipped cream if desired.

My BF is type 1 diabetic, so I adapted my tride and true apple crisp recipe and wow! You can't even tell! Great for low-carb diets too.feel free to add some finely chopped pecans to both the aplles and the topping. My family doesn't prefer it, but it really adds a nice crunch and balance. I added the reguar full-sugar option as well.

6 granny smith apples, peeled, cored, chopped small
3 tablespoons all-purpose flour
1/4 cup Splenda brown sugar blend (1/2 cup regular brown sugar)
2 tablespoons sugar-free maple syrup (or regular syrup)
1 tablespoon lemon juice
3/4 cup all-purpose flour
1 1/2 tablespoons Splenda brown sugar blend (1/3 cup regular brown sugar)
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
6 tablespoons chilled butter, cut into pieces

Steps:

  • Preheat oven to 350 degrees F.
  • For the Filling:.
  • Mix all the ingredients together. Place into 6 small ceramic ramekins.
  • For topping:.
  • Mix the flour, brown sugar, cinnamon and salt in large bowl. Blend the butter into the mixture with a fork until it forms pea size lumps. Sprinkle over filling equally.
  • Bake crisps for 35 to 40 minutes. Cool 10 minutes before serving. These taste great with a scoop of vanilla ice cream on top! (We use Dreyer's French Vanilla Sugar-Free Ice Cream).

1 oz. PHILADELPHIA Neufchatel Cheese, softened
1 Tbsp. brown sugar
1/8 tsp. ground cinnamon
dash ground nutmeg
1 large fresh apple, peeled, chopped
4 vanilla wafers, coarsely chopped
1 Tbsp. chopped almonds
1 Tbsp. butter, melted
2 Tbsp. thawed COOL WHIP Whipped Topping

Steps:

  • Heat oven to 350°F.
  • Mix Neufchatel, sugar and spices in medium bowl until blended. Stir in apples. Spoon into 2 custard cups sprayed with cooking spray; place in shallow pan.
  • Mix wafer crumbs, nuts and butter; sprinkle over cream cheese mixture.
  • Bake 25 min. or until hot and bubbly. Serve topped with COOL WHIP.
