This popcorn is a take on the Indian snack chiwda, a sweet and savory mix often made with puffed rice, dried fruit, nuts, spices, and herbs. It's a mainstay during Diwali, much like you'd have Chex Mix during the American holiday season.

Yield Makes about 6 cups

Number Of Ingredients 12

1 (3.2-ounce) bag microwave popcorn (movie-theater butter flavor or plain and salted, popped according to package directions)
2 tablespoons canola oil
1 teaspoon fennel seeds
1 teaspoon coriander seeds
1 teaspoon cumin seeds
1 teaspoon coarsely chopped fresh Thai green chile
10 (1 1/2 inch) fresh curry leaves (more if smaller), whole or cut crosswise into thin strips.
1/4 teaspoon Kashmiri chile powder
1/4 teaspoon ground turmeric
1/8 teaspoon asafetida
1/4 teaspoon sugar
1/4 teaspoon salt

Steps:

  • Place the popcorn in a large bowl.
  • In a small saucepan, heat the oil over medium-high heat until it shimmers. Add the fennel seeds, coriander seeds, and cumin seeds and let them crackle. Stir in the green chile, curry leaves, Kashmiri chile powder, turmeric, and asafetida. Pour the mixture over the popcorn. Add the sugar and salt and stir or toss to coat evenly. (Keep tossing as you eat it to distribute the spice.)

Popcorn is roasted with butter and a blend of spices to make an addictive snack. I make this for watching movies or even sports.

20 cups popped popcorn
½ cup butter or margarine, melted
2 teaspoons paprika
2 teaspoons lemon pepper
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon cayenne pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place the popped popcorn in a large roasting pan.
  • In a small bowl, stir together the melted butter, paprika, lemon pepper, salt, garlic powder, onion powder, and cayenne pepper. Pour over the popcorn and stir until it is somewhat evenly coated.
  • Bake for 15 minutes, stirring every 5 minutes. Remove from the oven and cool completely. Serve immediately, or store in an airtight container for later.

1/2 teaspoon curry powder
1/2 teaspoon garam masala
1/4 teaspoon ground turmeric
1/4 teaspoon black pepper
12 cups popped popcorn
nonstick cooking spray

Steps:

  • In a small bowl stir together the curry, garam masala, tumeric and black pepper.
  • Spread popcorn in an even layer in a large shallow baking pan. Lightly coat popcorn with cooking spray. Sprinkle the curry mixture evenly over popcorn; toss to coat.

3 chicken breasts, diced
1 tablespoon chili powder
1 tablespoon turmeric
1 teaspoon salt
1 teaspoon pepper
2 tablespoons garlic, minced
½ lemon lemon juice
1 cup breadcrumb
1 teaspoon chili powder
1 teaspoon turmeric
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon salt
1 teaspoon pepper
egg wash
4 cups oil, for frying

Steps:

  • Prepare the spice marinade by mixing all the spices together with the chicken.
  • Cover with cling film and leave to marinate for 1 hour.
  • Next, prepare the spice coating by mixing the bread crumbs, chili powder, turmeric, cumin, coriander, salt and pepper together.
  • Coat each chicken piece in egg wash, followed by the spice coating.
  • Heat the oil in a deep saucepan to 350°F (180°C).
  • Carefully place each chicken piece in the oil using a slotted spoon and fry for about 3-4 minutes, until golden brown and cooked through.
  • Serve with salad and favourite dips of your choice.
