1 cup johnnycake white cornmeal
2 cups cold water
1/4 cup butter
1 cup fruit juice (blackberry, blueberry, or raspberry)
2 cups berries
1 teaspoon nutmeg
3/4 cup cream
3/4 cup maple syrup
3 eggs, beaten

Steps:

  • Soak the cornmeal in the water. Melt the butter in a large pot the add the cornmeal mixture. Heat slowly, stir constantly for 15 minutes, or until thickened.
  • Add the juice, berries, & nutmeg then bring to a boil, stirring constantly. Then add the cream & maple syrup, blending throughly.
  • Add the eggs & remove from the heat, stirring until the mixture stops bubbling. Serve either hot or chilled.

½ cup yellow cornmeal
1 ¼ cups all-purpose flour
½ cup white sugar
2 teaspoons baking powder
1 teaspoon salt
4 eggs
1 (14 ounce) can sweetened condensed milk
⅔ cup milk
⅓ cup canola oil
1 teaspoon vanilla extract
½ cup fresh blueberries
½ cup fresh raspberries
½ cup sliced fresh strawberries
½ cup fresh blackberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 9x9 inch baking dish.
  • Stir the cornmeal, flour, sugar, baking powder, and salt together in a mixing bowl. Combine the eggs, condensed milk, milk, oil, and vanilla in a second mixing bowl. Add egg mixture to the cornmeal mixture all at once and beat until well blended, about 2 minutes. Spread berries over the bottom of prepared dish. Spoon batter evenly over the berries to completely cover.
  • Bake in preheated oven until top is golden brown, about 45 minutes.

Very simple easy yummy recipe. This is a Native American dish (which I am not) with a couple of twists that I added. The dish is actually called Wajapa and wasicu meens white man in Dacota and Lacota Sioux.

2 lbs mixed berries
3/4 cup simple syrup
1/2 teaspoon vanilla extract
1/4 cup cornstarch
2 tablespoons lemons

Steps:

  • Place berries in a med saucepan, cover with cold water, place over med high heat, bring to a boil stirring often. Add sweetener, vanilla extract and lemon juice. Continue to boil and stir until berries brake down. Add cold water to corn starch and some about ( 2 tbs) of hot liquid from pan and make slurry stirring it slowly back into mix, continue to boil and stir until thick. Let pudding cool, serve warm or chilled, great hot over fry bread.

2 cups berries (blueberries, raspberries and or or black raspberries)
1 1/3 cups all-purpose flour
1/2 cup cornmeal
1 tablespoon basil, finely snipped
2 teaspoons baking powder
1/4 teaspoon salt
2 eggs, lightly beaten (or 1/2 cup egg substitute)
1/2 cup sugar
2/3 cup milk
1/3 cup canola oil

Steps:

  • Preheat oven to 350 degrees F.
  • Grease 8-inch round cake pan, line bottom with parchment paper, grease.
  • Arrange 1 1/2 cups berries in bottom of pan; set aside.
  • In bowl stir together flour, cornmeal, basil, baking powder and salt. Set aside.
  • In another bowl, whisk together eggs, sugar, milk and oil.
  • Add milk mixture all at once to flour mixture. Stir until combined; pour over berries. Spread evenly.
  • Bake 40 to 45 minutes or until pick inserted near center comes out clean.
  • Cool cake in pan 5 minutes. Run knife around edge of pan to loosen sides. Invert. Remove parchment. Top with remaining berries and a sprig of basil and/or mint.

1/4 cup brown sugar
1 1/2 tablespoons cornstarch
4 cups about 1 1/4 pounds frozen mixed berries, thawed
3/4 cup stone-ground cornmeal
2 tablespoons whole wheat pastry flour
1 1/2 tablespoons brown sugar
1 1/2 teaspoons baking powder
salt
2 1/2 tablespoons cold butter, cut into chunks
1/3 cup nonfat milk

Steps:

  • Preheat the oven to 350ºF. Coat an 8" x 8" baking dish with vegetable oil spray. Set aside.
  • To prepare the berries: In a mixing bowl, combine the sugar and the cornstarch. Stir to mix. Add the berries. Toss to combine. Transfer to the baking dish. Wipe the bowl clean with a paper towel.
  • To prepare the crust: In the bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Stir with a fork or pastry blender. Add the Better Butter or spread. Cut into the dry ingredients until the pieces are the size of peas. Add the milk and stir quickly just to moisten. Dollop over the berries, leaving some bare patches.
  • Bake for about 40 minutes, or until the topping is golden and the fruit is bubbling. Let stand for 10 minutes before serving.

2 1/2 cups shelled sunflower seeds (fresh or dried)
3 cups water
6 tablespoons fine cornmeal
3 tablespoons maple syrup
1/2 cup oil

Steps:

  • Simmer the seeds in the water, covered, for 1 hour. Drain & grind the seeds when done.
  • Mix the syrup & cornmeal, 1 tablespoon at a time, into the ground seeds, making a stiff dough. Shape into 3 inch flat cakes, about 15 cakes.
  • Fry the cakes in hot oil on both sides. Drain on paper towels & serve hot.
