1 1/4 cups buttermilk
1/4 cup olive oil
3 tablespoons Dijon mustard
2 cloves garlic, minced
3 tablespoons hot pepper sauce (louisiana is good)
2 teaspoons salt
1/2 teaspoon pepper
1 large onion, sliced
12 chicken pieces
1 cup unseasoned breadcrumbs
1/3 cup parmesan cheese
1/4 cup flour
2 teaspoons thyme
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
1/2 cup melted butter

Steps:

  • Whisk buttermilk, oil, hot pepper sauce, mustard, garlic, 1 tsp salt and 1/2 teaspoon pepper in a large bowl.
  • Add the onion and then the chicken turning to coat each piece with the marinade.
  • Cover; chill at least three hours or up to one day turning the chicken occasionally.
  • Combine breadcrumbs, cheese, flour, thyme, paprika, cayenne and 1 tsp salt in a large baking dish.
  • Remove the chicken from the marinade and roll in the breadcrumb mixture.
  • Set chicken on a rack to dry for about 30 minutes.
  • Preheat oven to 400F degrees.
  • Place chicken in large baking dish and pour butter over the chicken.
  • Bake until crisp and brown, approximately 50 minutes.

4 strips turkey bacon
2 hard-boiled eggs
1 cup sliced strawberry
1/4 cup slivered almonds
3 -4 boneless chicken breasts
1/3 cup fat-free Italian salad dressing
1/2 cup spinach salad dressing (name brand in a jar)

Steps:

  • cut chicken up into small cubes and place in frying pan.
  • Add 1/3 cup of the italian dressing and cook until chicken is no longer pink in separate frying pan (or in microwave) cook bacon.
  • Cut into smaller pieces when done and set aside.
  • Slice strawberries and set aside.
  • slice hard boiled eggs and set aside.
  • in large bowls divide the spinach leaves and top with the chicken, bacon, strawberries, egg, and almond slices.
  • Drizzle the spinach salad dressing or other type of dressing over and enjoy!

1/2 teaspoon salt
1/2 teaspoon rosemary
1/2 teaspoon dried coriander

1/4 teaspoon red pepper
1 crushed bay leaf

Steps:

  • Put dehydrated onion into a food processor and process for about a minute.
  • Add the rest of the dry ingredients except for the cheese and process for 30 seconds.
  • Add the cheese and pulse to blend.
  • Coat chicken with egg and then dip into the mixture.
  • Fry in olive oil.
  • You can also double the dry ingredients and store left over in an airtight container for 10 days.

1/2 cup butter
1/2 lb mushroom, sliced
1/4 cup flour
2 teaspoons pepper
1 onion, sliced
2 garlic cloves, chopped
4 -6 chicken breasts
1 1/2 cups cream
1/3 cup port wine
2 tablespoons fresh parsley, chopped

Steps:

  • In a hot frying pan heat half of the butter (medium-high heat).
  • Add in the mushrooms and onion cook for about 5 minutes along with the garlic.
  • Remove and set aside in a bowl or deep dish.
  • In a bowl combine the flour salt and pepper to coat chicken breasts on both sides.
  • In the same frying pan add in the remaining butter and cook the chicken breasts over medium-high heat, careful not to burn, cook till browned on all sides.
  • Now stir in the cream and the Port Wine, and the mushrooms, bring to a boil, and then reduce heat to low, cover and simmer for 15 minutes or till cooked.
  • Pour into a platter and sprinkle chopped parsley over top.

GUS'S INCREDIBLE CHICKEN TACO FILLING

This is a recipe that I invented about fifteen years ago and has been a favorite among my family and friends ever since. I make this in LARGE amounts, since it goes quickly and can be used in a variety of ways. You can fill toasted taco shells with this then top with lettuce, fresh tomato, cheese, sour cream and or guacamole. I like to put this on tostada shells, sprinkle shredded mozzarella cheese on it, microwave to melt the cheese and then top with sour cream, quacamole and jalapeno slices. You can also do that with the round nacho chips. Another suggestion is to wilt corn tortilla in a skillet with a bit of oil, drain them on paper towels and place some of the filling into them, roll them up and cover with a white cheese and sour cream sauce and garnish with jalapeno slices. Depending on how you use it, this should serve between 6 to 10 people.

1 whole large chicken, boiled and boned
1 (16 ounce) jar of pickled mild banana wax peppers
1 large bell pepper
1 large yellow onion
1 (16 ounce) can diced tomatoes
2 garlic cloves, minced
1 teaspoon cumin powder
1 tablespoon Gebhardt® Chili powder
1/4 cup chopped cilantro

Steps:

  • Boil and bone the chicken, reserve two cups of the broth. Finely chop the chicken and set aside. I use a food processor to do this. Take all the vegetable and mince or chop in a food processor. Sautee the minced peppers, onion, garlic and cumin until everything is nice and tender, then add the canned tomato. Add salt and pepper to taste. Mix in the chicken, stirring well to mix evenly with the veggies. Add one cup of broth and simmer for about ten minutes to let the flavors mix. If it gets too dry, add the second cup of broth. Once it is heated, add the chili powder, stir in well, remove from heat and you are ready to serve in whatever way you choose.
  • If you leave out the MILD banana wax peppers or the chili powder, you will lose 99 percent of the flavor.NEVER overcook chili powder or it will get bitter. Gebhardt's is a very mild chili powder, so if you can't find it, try to substitute with the mildest you can find.

2 tablespoons margarine
1/2 onion, chopped
1 cup fresh mushrooms, sliced
1 (10 ounce) can cream of chicken soup, undiluted
1 (16 ounce) jar alfredo sauce
1 (4 ounce) jar diced pimentos, drained
1/3 cup dry white wine
1/8 teaspoon dried tarragon
1/2 teaspoon dried basil
1 (10 ounce) package frozen chopped spinach, thawed
1 (15 ounce) carton ricotta cheese
1/2 cup grated parmesan cheese
1 egg, beaten
9 lasagna noodles, cooked
4 cups cooked chicken, shredded
1 (16 ounce) package shredded cheddar cheese
2 teaspoons parsley

Steps:

  • In a large skillet, melt margarine and saute onion, and mushrooms.
  • Stir in soup, alfredo sauce, pimentos, wine, tarragon, and basil. Reserve 1/3 of the sauce for top of lasagna.
  • Drain spinach well between several layers of paper towels. The spinach needs to be completely drained.
  • In another large bowl, combine spinach, ricotta, parmesan and egg and mix well.
  • Spray a 10x15 inch baking dish with non-stick cooking spray and place 3 noodles in dish. Make sure 10x15 dish is full size with a depth of 2 1/2 inches.
  • Layer with half of remaining sauce, spinach-ricotta mixture, and chicken. The spinach ricotta mixture may be dry, that is ok, and you might have to spoon it over the sauce and spread it out.
  • Sprinkle with 1 1/2 cups cheddar cheese.
  • Repeat the layer, starting with the sauce, but save some sauce for the topping.
  • Top with the last 3 noodles and reserved sauce.
  • Cover and bake at 350°F for 45 minutes.
  • Remove from oven, and sprinkle remaining cheese on top.
  • Return to oven uncovered and bake for 5 minutes or just until cheese melts.
  • Let stand for 10 minutes before serving.

1 (12 ounce) package thin spaghetti
1 onion, chopped
1 green bell pepper, chopped

2 (4 1/2 ounce) jars sliced mushrooms
1/2 lb shredded sharp cheddar cheese
1/2 lb shredded Velveeta cheese

Steps:

  • In a large Dutch oven, fill 1/2 full with water; add salt and pepper if desired; add chicken breast halves.
  • Bring to a boil; cover and reduce heat; simmer 1 hour or until chicken breasts are done.
  • Remove chicken breasts, reserving broth, and allow chicken to cool; chop chicken meat into bite-size pieces and set aside.

4 bone-in chicken breasts
1/2 cup chicken broth
1/2 cup brown sugar
1/4 cup honey
1/4 cup koop's stone ground mustard
1/2 tsp. ginger powder, optional. (i made without.)

Steps:

  • 1. Preheat oven to 350°. Prepare chicken breasts as you normally would to bake, seasoning with salt and pepper. Bake for approximately 1 hour and 15 minutes or until done.
  • 2. About 20-25 minutes before the chicken breasts are done, combine broth, brown sugar, honey mustard and ground ginger, if using, in a small sauce pan.
  • 3. Heat over medium heat for about 5-8 minutes, allowing it to reduce a bit. Let cool slightly. Remove chicken from oven, plate and spoon honey mustard sauce over chicken. Serve extra sauce in individual ramekins to be spooned over chicken, vegetables or rice.

1/2 teaspoon(s) salt
1/4 teaspoon(s) pepper
8 cup(s) torn iceberg and romaine lettuce
- diced red onion, optional
5 - strips bacon, cooked and crumbled
- prepared breaded or grilled chicken breast strips, optional (i add the chicken for a main course. otherwise we leave it without for a dinner side salad.)

Steps:

  • Combine almonds, chow mein noodles and sesame seeds in a baking pan. Bake, uncovered at 350 degrees for 8-10 minutes or until lightly toasted. Set aside.
  • In a jar with a tight fitting lid, combine oil, sugar, vinegar, salt and pepper. Shake well.
  • In a large bowl, toss lettuce, red onions (if using) and bacon.
  • Just before serving, add almond mixture and dressing; toss. If using as a main course, warm chicken and place on top of a bed of this delicious salad.

  • Cut Chicken into 1/2 inch pieces and cook quickly in a pan coated with cooking spray.

Ingredients:
1 package of frozen puff pastry, thawed
1 egg + 1 tsp water - for egg wash
Filling:
4 cups chicken cut into bite size pieces
6 baby new potatoes cut into bite size pieces
1 cup frozen corn
1 cup frozen green peas
1 cup carrots sliced
3 stalks celery sliced
1 medium onion diced
3 cups chicken stock
1 teaspoon thyme
2 tbsp olive oil
1/2 cup greek yogurt
1/4 cup minced fresh parsley
1/4 cup flour
1 tsp Kosher salt
1 tsp fresh ground pepper

Steps:

  • Cut chicken into bite size pieces, season with salt and pepper; dust with flour.
  • Heat olive oil in skillet, add chicken and cook until done 8-10 mins. Transfer to baking dish.
  • In same skillet add potatoes, carrots, onion and celery. Saute until tender. Transfer to baking dish.
  • Deglaze skillet with chicken stock.
  • Add thyme, parsley, greek yogurt and bring to slow boil.
  • Add green peas and corn to skillet, then add back chicken, potatoes, carrots, onion and celery.
  • Stir together, then transfer to 2 quart casserole dish.
  • On lightly floured surface roll puffed pastry to cover casserole dish with 1 inch to cover sides of casserole dish.
  • Cover casserole dish with puff pastry.
  • Brush puff pastry top with egg wash.
  • Bake 425 degrees for about 25 minutes until crust golden brown.
