Incredible Gluten-Free Banana Bread image

This is a heavier, more filling banana bread than others. Don't let the long list of ingredients scare you - it comes together quickly! The almond flour, oat flour, and chia or hemp seeds may be found in your grocery store's organic or gluten-free section, at Trader Joe's®, or online. My family isn't gluten free (my sister is!), but we all prefer this recipe to any others.

5 large very ripe bananas, or more to taste
5 eggs
1 cup plain 2% yogurt (such as Fage®)
1 cup unsweetened applesauce
1 ½ teaspoons vanilla extract
1 stick butter, melted
1 ½ cups rolled oats
1 cup oat flour
1 cup almond flour
½ cup sucralose and brown sugar blend (such as Splenda®)
½ cup ground chia seeds
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
¼ teaspoon freshly grated nutmeg
1 ½ cups toasted chopped pecans
1 cup mini chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Puree bananas in a blender. Add eggs, yogurt, applesauce, and vanilla extract; briefly blend until smooth. Drizzle in melted butter while blender is running and mix until combined, about 10 seconds.
  • Whisk oats, oat flour, almond flour, brown sugar blend, chia seeds, baking soda, cinnamon, salt, and nutmeg together in a large bowl. Add liquid mixture from the blender; mix until no dry spots remain. Add pecans and chocolate chips and mix until evenly incorporated.
  • Pour batter into 2 loaf pans and spread out evenly to the corners.
  • Bake in the preheated oven until tops are dark golden brown and a toothpick inserted into the centers comes out with tiny crumbs attached, 70 to 80 minutes.

I've never liked the taste of bananas, but this bread is incredible! I got the recipe from my sister-in-law, and decided to make it for my boyfriend as a treat. He loved it! It's become a favourite with my friends, and everyone asks me to make it. In the words of my little brother - it's the most delicious thing I've ever tasted!

1 cup butter
2 eggs
1/2 cup sour milk (or just add 1 tbs white vinegar to milk and let sit for 5 min)
3 mashed bananas
1 teaspoon banana extract (optional)
1 1/2 cups sugar
2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking powder
3/4 teaspoon baking soda
1 cup walnut pieces
1 cup milk chocolate chips

Steps:

  • Preheat the oven to 350 degrees Celsius. Use butter to grease up a loaf pan.
  • Mix the dry ingredients and wet ingredients into separate bowls.
  • Fold the wet ingredients into the dry ingredients.
  • Mix in the walnut pieces and chocolate chips. Some people use one or the other, but I like to use both to make this bread extra delicious.
  • Pour the batter into the loaf pan and bake for 45 minutes.
  • NOTE: I find that with some ovens, this is not enough time to bake the bread thoroughly. What I usually do is pour the batter into two loaf pans and reduce the time, or I bake the bread until it no longer "jiggles" when I shake the pan gently. This usually takes about 1-1/2 hours. Watch it carefully as it bakes! It's worth the time.

This bread is moist and delicious. Everyone will want this recipe once they taste this bread.

2 c flour
1 tsp salt
2 tsp baking soda
1 tsp baking powder
1 c butter
1 c white sugar
1 c light brown sugar
4 eggs
2 c ripe bananas, mashed
1 tsp vanilla
1 c nuts, chopped
cinnamon-sugar mixture (optional)

Steps:

  • 1. Sift dry ingredients into a large bowl.
  • 2. In a separate bowl, cream butter, white sugar and brown sugar. Add eggs, one at a time, mixing after each addition. Mix in mashed bananas and vanilla.
  • 3. Mix dry ingredients into wet ingredients in 3 batches. Stir just until blended. Stir in nuts.
  • 4. Pour into 2 greased and floured 9 X5 inch loaf pans. Top with cinnamon-sugar mixture. (optional)
  • 5. Bake at 350 degrees for 55-60 minutes or until a knife inserted into the middle comes out clean.
  • 6. Cool loaves in pans on wire rack for 5-10 minutes. Turn out onto a cooling rack; cool completely. Wrap in aluminum foil when cool.
  • 7. Refrigerate the loaves for 2 hours or more before serving.

This bread is a redo of a 1960's better Homes and gardens recipe with the tweaks I did over the years.

1/4 cup(s) brown sugar, firmly packed
1/4 cup(s) sugar
2 large eggs
1 3/4 cup(s) flour

1 cup(s) mashed banana
1 teaspoon(s) banana extract
