1 tablespoon butter
2 tablespoons olive oil
½ cup chopped onion
¼ cup finely chopped celery
½ teaspoon minced garlic
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 tablespoons grated Parmesan cheese
1 teaspoon fennel seeds, ground
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon white sugar
¼ teaspoon ground black pepper
1 large bay leaf

Steps:

  • Melt butter with olive oil in a large skillet over medium heat. Cook and stir onion, celery, and garlic in the butter mixture until the onion is soft and translucent, 5 to 7 minutes.
  • Stir tomato sauce and tomato paste into the onion mixture until smooth; add Parmesan cheese, fennel seeds, basil, oregano, salt, sugar, pepper, and bay leaf. Stir the sauce and bring to a slow simmer; cook at a slow simmer for 1 hour. Remove and discard bay leaf before use.

In Search of the Ultimate Spaghetti/Pizza/Pasta Sauce image

This may be hard to believe, but the best pasta sauce I ever had was in a small restaurant in San Carlos, Mexico. When we got back home I decided to start experimenting to see if I could duplicate and this is pretty darn close. If you prefer a smooth sauce, substitute tomato sauce for the diced tomatoes. Fresh mushrooms can also be added if desired. Fresh Italian sweet sausage can be used Recipe #362998 or, I highly recommend Kittencal's Recipe #69173 (I wasn't a meatball lover until I tried these.) Next time I make I'm going to try adding diced roasted red peppers. Based on comments of others, the plan is to continue refining this recipe. I look forward to hearing your comments and suggestions!. I serve on my Recipe #227629 and save the leftover sauce to use on a pizza.

1 (28 ounce) can crushed tomatoes
1 (28 ounce) can diced tomatoes (do not drain)
1 (28 ounce) can tomato puree
1 cup red wine (divided)
1/2 cup water
1 1/2 teaspoons salt (to taste)
1 teaspoon McCormick's Montreal Brand steak seasoning
1 tablespoon sugar
1 teaspoon oregano
1 teaspoon basil
2/3 cup grated parmesan cheese or 2/3 cup romano cheese
1 cup sweet onion, diced
3 garlic cloves, diced
1/4 cup olive oil
1 1/2 lbs sweet Italian sausage (Italian Sausage)

Steps:

  • In large pot combine crushed tomatoes, tomato puree and diced tomatoes.
  • Add 1/2 cup of red wine and 1/2 cup water.
  • Bring to a boil and reduce heat to simmer.
  • Stir in seasonings (salt, pepper, oregano, basil) and grated cheese.
  • In frying pan heat olive oil and brown sausage or meat-balls.
  • Remove the meat from the pan (saving the drippings) and add to the simmering sauce.
  • In the same frying pan sauté the onions and garlic (adding more oil if necessary) until translucent.
  • Add onions and garlic to simmer sauce.
  • Deglaze the frying pan with 1/2 cup of red wine and add to the simmering sauce.
  • Stirring occasionally, simmer for three hours or until of desired consistency.
  • To thicken sauce crack the lid and allow to cook down.
  • To thin add a little more red wine.
  • Serve on spaghetti, ravioli or use on pizza.

A pizza and pasta red sauce with sauteed vegetables and tomatoes. Every time I make this dish, I vary it based on available fresh vegetables, so feel free to do the same! Excellent with pizza, pasta, or chicken Parmesan. Freeze sauce if needed. Servings size depends on intended dish.

2 tablespoons extra-virgin olive oil
2 cups diced carrots
½ cup diced green bell pepper
½ cup diced red bell pepper
2 cups diced onions
4 cloves garlic, diced
3 tablespoons tomato paste
4 fluid ounces red wine
2 (27 ounce) cans diced tomatoes
1 tablespoon dried oregano
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Heat oil in a large pot over medium-high heat. Saute carrots and bell peppers, about 5 minutes. Add onion and garlic and saute to desired softness, about 5 minutes.
  • Add tomato paste to the pot and distribute evenly. Pour in red wine and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon to deglaze; reduce heat to low. Add diced tomatoes, oregano, salt, and pepper. Simmer for 15 to 20 minutes.
  • Blend the red sauce to desired thickness using an immersion blender or food processor. Simmer further for enhanced flavor, at least 1 hour, or until ready to use.

This pizza sauce recipe was given to me as a wedding present, written on the inside cover of a pizza cookbook. It is thick, saucy, spicy and delicious. I'll never use anything else on my homemade pizzas. I like to double or triple it and put it in Ziploc bags in my freezer.

2 tablespoons olive oil
1 tablespoon butter
1/2 cup onion, chopped
1/4 cup celery, chopped
1 garlic clove, minced

I have spent a lifetime trying to duplicate the red sauce and meatball recipe my mother, Anne Marie Zappa, cooked every week when I was growing up. I'll never do it, but this is close. This is a forgiving recipe. Maybe you want to add a couple of chicken thighs, or mix in a few browned hot sausages. Just keep a good ration of pork to beef.

1 pound pork spareribs, neck bones or pork chops
1 pound beef chuck roast, blade steak or brisket
3 tablespoons olive oil
3/4 cup chopped onions
2 cloves garlic, minced
1 6-ounce can tomato paste
1 teaspoon dried oregano
1 tablespoon dried basil
1 teaspoon dried red pepper flakes
1 1/2 teaspoons kosher salt
1 bay leaf
1 28-ounce can crushed tomatoes, preferably Italian
1 28-ounce can tomato sauce
1/2 teaspoon sugar
2 tablespoons fresh parsley, roughly chopped
4 small or 2 large pickled peperoncini
Cooked meatballs
1 pound dried spaghetti for serving
Grated Parmesan for serving

Steps:

  • Sprinkle salt and pepper all over pork and beef. Place large pot over medium-high heat; when hot, add olive oil and brown meat. (Or cook meat in same pot used for meatballs, browning in the leftover fat.) Remove meat to a platter. Turning heat under pot to medium, add onions, and cook 3 minutes, stirring. Add garlic, and cook 2 minutes longer. Add tomato paste, and stir: cook until it absorbs fat in pan. Add oregano, basil, red pepper flakes, kosher salt and bay leaf, stirring to combine.
  • Add cans of tomatoes and tomato sauce, then 4 1/2 cups water. Stir in sugar, parsley and peperoncini. Return meats to pot with their juices. Bring sauce to a gentle boil. Turn heat down to a simmer, partly cover and leave sauce to simmer 21/2 hours or more, stirring regularly.
  • About 20 minutes before serving, add meatballs to pot. Boil spaghetti according to package directions. Drain, return spaghetti to pan and add 3 cups sauce. Toss pasta in pan for a minute to coat with sauce, and place on a large platter. Pour 2 more cups sauce over pasta. Place meat and meatballs on pasta, slicing large pieces. Serve with bowls of remaining sauce and Parmesan.

1 lb ground chuck
1/2 lb ground lean pork
1/4 cup olive oil
2 tablespoons butter
1 cup onion, chopped
2 garlic cloves, chopped fine

1/2 cup water
1/2 cup celery, chopped fine
1/4 cup green pepper, chopped

Steps:

  • Trim fat from chuck and pork and grind together.
  • Brown together till just light tan, stirring constantely.
  • Add onions to meat, cook till onions are trainsparent.
  • Add the following to the meat and onions: garlic, tomato paste,tomatoes,water, celery,parsley,oregano,basil leaves,rosemary,green pepper,bay leaf, brown sugar, black pepper,salt.
  • Cook and bring to a boil stirring constantly.
  • Turn heat to simmer, keep stirring till burner reaches simmer stage and don't scorch.
  • Simmer about 3 hours stirring occasionally.
  • Serve over spaghetti.
