This may be hard to believe, but the best pasta sauce I ever had was in a small restaurant in San Carlos, Mexico. When we got back home I decided to start experimenting to see if I could duplicate and this is pretty darn close. If you prefer a smooth sauce, substitute tomato sauce for the diced tomatoes. Fresh mushrooms can also be added if desired. Fresh Italian sweet sausage can be used Recipe #362998 or, I highly recommend Kittencal's Recipe #69173 (I wasn't a meatball lover until I tried these.) Next time I make I'm going to try adding diced roasted red peppers. Based on comments of others, the plan is to continue refining this recipe. I look forward to hearing your comments and suggestions!. I serve on my Recipe #227629 and save the leftover sauce to use on a pizza.

1 (28 ounce) can crushed tomatoes
1 (28 ounce) can diced tomatoes (do not drain)
1 (28 ounce) can tomato puree
1 cup red wine (divided)
1/2 cup water
1 1/2 teaspoons salt (to taste)
1 teaspoon McCormick's Montreal Brand steak seasoning
1 tablespoon sugar
1 teaspoon oregano
1 teaspoon basil
2/3 cup grated parmesan cheese or 2/3 cup romano cheese
1 cup sweet onion, diced
3 garlic cloves, diced
1/4 cup olive oil
1 1/2 lbs sweet Italian sausage (Italian Sausage)

Steps:

  • In large pot combine crushed tomatoes, tomato puree and diced tomatoes.
  • Add 1/2 cup of red wine and 1/2 cup water.
  • Bring to a boil and reduce heat to simmer.
  • Stir in seasonings (salt, pepper, oregano, basil) and grated cheese.
  • In frying pan heat olive oil and brown sausage or meat-balls.
  • Remove the meat from the pan (saving the drippings) and add to the simmering sauce.
  • In the same frying pan sauté the onions and garlic (adding more oil if necessary) until translucent.
  • Add onions and garlic to simmer sauce.
  • Deglaze the frying pan with 1/2 cup of red wine and add to the simmering sauce.
  • Stirring occasionally, simmer for three hours or until of desired consistency.
  • To thicken sauce crack the lid and allow to cook down.
  • To thin add a little more red wine.
  • Serve on spaghetti, ravioli or use on pizza.

18 roma (plum) tomatoes
2 (6 ounce) cans tomato paste
½ cup butter
4 cloves garlic, minced
5 bay leaves
1 large white onion, chopped
1 large zucchini, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (8 ounce) package fresh mushrooms, sliced
2 tablespoons dried oregano
1 tablespoon Italian seasoning
2 teaspoons chili powder
¼ cup brown sugar
1 (15 ounce) container ricotta cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add tomatoes and cook for 10 minutes. Drain and rinse with cold water. Remove skins and return tomatoes to the pot and mash them. Stir in tomato paste and 2 cups water. Cover and simmer on low heat.
  • Meanwhile, melt butter in a large skillet over medium heat. Saute garlic and bay leaves for 1 minute, then stir in onions; saute until onions are translucent. Stir in zucchini, green and red bell pepper and mushrooms. Slowly cook and stir for 5 to 7 minutes.
  • Stir vegetables into tomato sauce and add oregano, Italian seasoning, chili powder and brown sugar. Simmer over low heat for 6 to 8 hours. Stir in the ricotta cheese 10 minutes before serving.

A simple, slow cooked, authentic spaghetti sauce, as good as the restaurants serve...or better! The secret ingredient is baking soda, but do not taste the sauce right after adding it. Wait a while, and this sauce will not disappoint you. It is good right from the stove, but the flavors blend overnight. Best served with your favorite meatball recipe, where the meatballs cook in the sauce the last half hour. Be prepared to take a nap after eating.

4 (14.5 ounce) cans whole peeled tomatoes
2 (15 ounce) cans tomato sauce
4 (6 ounce) cans tomato paste
3 cups water
4 cups fresh sliced mushrooms
2 onions, chopped
4 cloves garlic, minced
4 teaspoons white sugar
¼ cup chopped fresh basil
salt to taste
ground black pepper to taste
2 pinches baking soda
¼ cup grated Parmesan cheese

Steps:

  • Mix together whole tomatoes, tomato sauce, tomato paste, water, mushrooms, onions, garlic, sugar, salt and pepper, basil, and 1 pinch of baking soda in a large saucepan. Bring to a boil, stirring. Reduce to a simmer, and cook for 4 hours minimum.
  • Stir in another pinch of baking soda; the sauce will foam. Simmer, stirring occasionally, until thick and almost brown. Make sure to scrape the sides of the pan in to the sauce.
  • After the sauce is fork consistency, stir in Parmesan cheese. Watch that the cheese does not burn. Taste sauce. If it is too tangy or acidic, add another pinch of baking soda and simmer another 1/2 hour.
  • Cool, cover, and refrigerate overnight. The next day, reheat and serve.

I recently made my first grilled pizza and was surprised to find that there were no detailed directions on Recipezaar on how to grill using a pizza pan. The bottom will be the first to brown, so watch the pizza carefully as each grill is different. UPDATE: Recently purchased the most innovative pizza grill pan which has a shield that is preheated before placing the pizza on top . . . it's MUST have. See photo to the left!

1 (14 inch) prepared pizza crust, Recipe # 236785 or 1 (14 inch) ready-made prepared pizza crust
2/3 cup pizza sauce, In Search of the Ultimate Spaghetti/Pizza/Pasta Sauce (or your favorite bottled sauce)
3 ounces ham or 3 ounces sausage, etc
1 1/2 cups mozzarella cheese, shredded
1/2 cup parmesan cheese, grated
garlic
basil
onion
green pepper
mushroom
olive

Steps:

  • Spray pizza pan with non-stick spray.
  • Pizza pans with small holes work best for this recipe.
  • Spread out crust on pan, top with sauce, cheese and your favorite pizza toppings.
  • When coals are hot, place pizza to outer edge. Keep vents (if you have them) half open.
  • Cooking time may vary, usually 12-18 minutes (unless using prebaked crust). You may have to experiment with what times and temperatures work best on your own grill.
  • Done when cheese is melted and crust is brown.

We created this spaghetti sauce because my wife did not like thick sauce. Therefore, we came up with this recipe and have used it for over 20 years. We are always asked for the recipe, but, until now, had never given the recipe to anyone. Hope you enjoy!!

2 tablespoons olive oil
4 cloves garlic, minced
1 large onion, diced
1 large green bell pepper, chopped
6 fresh basil leaves, minced
1 bunch green onions, diced
1 bay leaf
1 teaspoon salt
1 teaspoon ground black pepper
2 (10 ounce) cans tomato sauce
1 (15 ounce) can stewed tomatoes
1 (10 ounce) can diced tomatoes with green chilies, undrained
2 ½ cups water
2 teaspoons white sugar

Steps:

  • Pour the olive oil into a skillet and place over medium heat. Cook the garlic in the hot oil 1 to 2 minutes; add the onion, bell pepper, basil, green onion, and bay leaf and cook until the bell pepper softens; season with salt and pepper. Stir in the tomato sauce, stewed tomatoes, diced tomatoes with chiles, water, and sugar; continue to cook 20 to 30 minutes, stirring every 5 to 10 minutes.
