Mocha Kahlua Ice Cream Torte with Hot Fudge Sauce image

1 1/2 cups chocolate cookie crumbs (about 6 1/2 ounces)
6 tablespoons unsalted butter, melted
3 tablespoons sugar
2 tablespoons Kahlua
1 quart chocolate ice cream
1 pint coffee ice cream
4 tablespoons Kahlua
4 to 6 heath bars, crushed in food processor or with mallet
8 ounces of chopped semisweet chocolate
2 tablespoons, plus 1 teaspoon butter
1/2 cup sugar
1/2 cup heavy cream
1/4 cup hot water
1 teaspoon vanilla
Pinch of salt

Steps:

  • Preheat oven to 350 degrees. Mix all ingredients in medium bowl. Press crust mixture onto bottom of 9-inch spring form pan with 2 3/4 inches high on the sides. Bake crust until firm, about 8 minutes. Transfer pan to rack and cool crust completely.
  • Mix ice cream, kahlua in large bowl. Mix in heath bars, saving several tablespoons for garnish. Pour ice cream into crust, smooth top, freeze until firm, about four hours. Can be prepared 2 days ahead covered.
  • Using small knife cut around side of pan to loosen torte. Remove pan sides, sprinkle saved crushed heath bar on top. Let torte stand 3 to 5 minutes. Cut into wedges and serve with hot fudge sauce.
  • Combine chopped dark chocolate with butter, sugar, heavy cream, and hot water. Melt mixture stirring, at low heat for five minutes. Remove from heat, add vanilla and salt and serve warm.

RASPBERRY SAUCE:
1 package (12 ounces) frozen unsweetened raspberries, thawed
2 tablespoons sugar
2 tablespoons cornstarch
1/3 cup maple syrup
ICE CREAM LAYERS:
1 quart coffee ice cream, softened
1-1/3 cups sliced almonds, toasted
1 quart chocolate chip ice cream, softened
2 cups heavy whipping cream
2 tablespoons sugar
1/2 teaspoon almond extract
Fresh raspberries

Steps:

  • Place egg whites in a small bowl. Let stand at room temperature for 30 minutes. Line two large baking sheets with parchment paper; draw three 8-1/2-in. circles on paper., Beat egg whites and cream of tartar on medium speed until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high until stiff glossy peaks form and sugar is dissolved. Drop meringue in mounds onto circles; spread to cover. , Bake at 250° for 1-1/4 hours or until set. Turn oven off; leave meringues in oven for 1 hour. Remove from the oven and cool on baking sheets. When completely cooled, remove meringues from paper., Drain raspberries, reserving juice. Set berries aside. Add enough water to juice to measure 1/2 cup. In a small saucepan, combine sugar and cornstarch. Stir in maple syrup and juice mixture until smooth. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened. Top with a second meringue. Spread with chocolate chip ice cream; sprinkle with a third of the almonds. Top with remaining meringue. Cover and freeze overnight., In a large bowl, beat cream until it begins to thicken. Add sugar and almond extract; beat until stiff peaks form. Remove torte from freezer; carefully run a knife around edge of pan to loosen. Remove side of pan. Frost with whipped cream., Garnish with fresh raspberries and remaining almonds. Cover and freeze for at least 2 hours. Remove from the freezer for 20 minutes before serving. Serve with raspberry sauce.

3 tablespoons fresh lemon juice
Sauce
3/4 cup whipping cream
1/4 cup light corn syrup
8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
3 large ripe bananas, peeled, cut on diagonal into 1/4-inch-wide slices
15 small strawberries with stems

Steps:

  • For crust:
  • Preheat oven to 350°F. Finely chop all nuts with sugar in processor. Add butter and blend until well combined. Press mixture firmly onto sides, then bottom of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Freeze 10 minutes. Bake until light brown, about 20 minutes. Cool on rack.
  • For Ice Cream:
  • Bring 1 cup cream, half and half and sugar to simmer in heavy medium saucepan, stirring occasionally. Whisk yolks in medium bowl. Whisk in hot cream mixture. Return mixture to saucepan and stir over medium-low heat until custard thickens and leaves path on back of spoon when finger is drawn across, about 5 minutes; do not boil. Strain into bowl. Add white chocolate; whisk until melted. Mix in remaining 2 cups cream. Chill until cold.
  • Peel and slice 1 1/2 pounds bananas. Puree bananas with lemon juice in processor. Mix puree into custard. Transfer custard to ice cream maker and process according to manufacturer's instructions. Spoon ice cream into prepared crust; smooth top. Cover and freeze overnight. (Can be made 1 week ahead; keep frozen.)
  • For sauce:
  • Bring cream and syrup to simmer in medium saucepan. Reduce heat to low. Add chocolate; whisk until smooth. Cool to lukewarm. (Can be made 1 day ahead. Cover and chill. Rewarm over low heat before using; do not boil.)
  • Remove pan sides from torte. Arrange bananas and strawberries in rows atop ice cream. Serve with sauce.

  • Stir coffee ice cream, 2 tablespoons brandy, and ground coffee in another bowl. Fold in chopped praline. Spoon half of coffee ice cream mixture atop vanilla ice cream in loaf pan. 1/4 cup water
2/3 cup vegetable oil
2 eggs
1/2 gallon (8 cups) chocolate chip mint ice cream, slightly softened
1/4 cup half-and-half
38 thin rectangular crème de menthe chocolate candies, unwrapped

Steps:

  • Heat oven to 350°F. Line 3 (8-inch) round cake pans with foil; grease bottoms only of foil-lined pans. In large bowl, beat brownie mix, water, oil and eggs 50 strokes with spoon until dry particles are moistened. Spread batter evenly in pans.
  • Bake 15 to 20 minutes. DO NOT OVERBAKE. Cool 15 minutes. Use foil to lift brownie layers from pans; place on cooling racks. Cool 30 minutes or until completely cooled. Place layers in freezer 1 to 2 hours for easier handling.
  • Meanwhile, line 2 (8-inch) round cake pans with foil. Scoop and press ice cream evenly into pans, leveling tops. Freeze until firm.
  • In 1-quart saucepan, heat half-and-half and 30 of the chocolate candies over low heat, stirring constantly, until candies are melted and sauce is smooth. Remove foil from brownie and ice cream layers. Place 1 brownie layer on serving plate; top with 1 ice cream layer. Repeat with remaining brownie and ice cream layers, ending with brownie layer. Spoon sauce over torte. Freeze at least 2 hours.
  • Remove from freezer 10 minutes before serving. Cut remaining 8 candies in half diagonally; arrange candies on top outer edge of torte.

Filling:
2/3 cup fresh lime juice
2/3 cup sugar
3 tablespoons finely grated lime peel
1/4 teaspoon finely crushed cardamom seeds
2 quarts premium vanilla ice cream, slightly softened
3 pints assorted berry sorbets (such as strawberry, raspberry, and blackberry)
Berries:
1/3 cup water
1/4 cup sugar
1 12-ounce package frozen blackberries
4 cups mixed fresh berries (such as blackberries, raspberries, and blueberries; about 20 ounces)

Steps:

  • For crust:
  • Preheat oven to 375°F. Finely grind cookies, brown sugar, and salt in processor. Add hot butter and vanilla; blend until moist crumbs form. Add hot nuts; blend just until finely chopped. Press crust onto bottom and up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides to within 1/4 inch of top edge. Freeze crust 15 minutes. Bake until golden, about 15 minutes. Freeze 30 minutes.
  • For filling:
  • Stir lime juice, sugar, and lime peel in large bowl until sugar dissolves. Pour 1/3 cup lime syrup into small bowl; mix in cardamom. Cover; chill to use later. Mix ice cream into remaining lime syrup in large bowl. Spoon all but 2 1/2 cups ice cream into crust; smooth top. Freeze torte and remaining ice cream until firm, about 2 hours.
  • Top torte with large scoops of ice cream, spacing apart and dipping ice cream scoop into hot water between scoops. Top with large scoops of sorbets, spacing apart. Using measuring spoons of various sizes dipped in hot water, scoop remaining sorbets place among larger scoops. Freeze 3 hours.
  • For berries:
  • Stir 1/3 cup water and sugar in medium saucepan over medium heat until sugar dissolves. Add frozen berries. Increase heat; boil until berries are soft and liquid is slightly reduced, about 8 minutes. Puree mixture in processor. Strain through sieve set over bowl, pressing on solids; discard solids. Cover; chill until cold. DO AHEAD: Can be made 1 day ahead. Cover torte; keep frozen. Keep lime syrup and berry sauce chilled.
  • Run knife around pan sides to loosen crust. Release sides. Tuck some fresh berries into spaces between ice cream and sorbet. Toss remaining berries in berry sauce. Cut torte into wedges. Drizzle lime syrup over wedges. Spoon berry mixture alongside.

10 Oreo cookies, coarsley chopped (about 1 cup)
1/2 cup milk
1 -4 ounce chocolate flavor instant pudding and pie filling mix
1 -12 ounce frozen whipped topping, thawed and divided
12 ounces ice cream sandwiches, frozen, unwrapped and divided
2 tablespoons semisweet chocolate morsels, grated or 2 tablespoons multi-colored candy sprinkles

Steps:

  • Combine milk and pudding mix, whisk until smooth and beginning to thicken. Fold in half of the whipped topping; set aside.
  • Quickly, arranges six of the ice cream sandwiches side by side on a large platter.
  • Spread the filling evenly over the sandwiches, then place remaining sandwiches on top - creating a rectangular "torte" shape. Smooth the sides.
  • Spread remaining whipped topping over the top and the sides of the torte.
  • Grate the chocolate morsels over everything.
  • Freeze until firm, but not hard (so that it can be cut). If freezing it over night, remove about 30-45 minutes before serving.

18 macaroons, crushed
1/4 cup butter, melted
3/4 cup hot fudge ice cream topping
26 snack-size Mounds or Almond Joy candy bars
1 quart vanilla ice cream, softened
1 quart strawberry ice cream, softened
1/4 cup sliced almonds, toasted

Steps:

  • In a small bowl, combine cookie crumbs and butter. Press onto the bottom of a greased 10-in. springform pan. Freeze for 15 minutes., In a microwave, heat hot fudge topping on high for 15-20 seconds or until pourable; spread over crust. Trim one end from each candy bar; arrange around edge of pan. Freeze for 15 minutes. Spread vanilla ice cream over fudge topping; freeze for 30 minutes. , Spread strawberry ice cream over vanilla layer; sprinkle with almonds. Cover and freeze until firm. May be frozen for up to 2 months. Remove from the freezer 10 minutes before serving. Remove sides of pan.

1/3 cup butter, melted
1/2 gallon vanilla ice cream, softened
1/2 gallon strawberry ice cream, softened
1 (16 ounce) jar hot fudge sauce
1 (16 ounce) jar strawberry ice cream topping
1 (8 ounce) carton whipped topping
fresh strawberry (optional)

Steps:

  • Set aside 1 cup of cookie crumbs.
  • Mix together remaining crumbs with melted butter.
  • Press mixture into the bottom of a large pan.
  • Spread vanilla ice cream evenly on top of crumb mixture.
  • Freeze pan for 30 minutes.
  • Spread warmed hot fudge evenly on top of vanilla ice cream.
  • Freeze pan for 30 minutes.
  • Spread strawberry ice cream evenly on top of fudge in pan.
  • Freeze for 30 minutes more.
  • Top strawberry ice cream with strawberry topping and freeze for 30 minutes more.
  • Cover top of torte with whipped topping and sprinkle with reserved crumbs, and place strawberries on top.
  • Freeze for 30 minutes more before serving.

1 13-ounce jar Nutella (hazelnut-chocolate spread)
2 pints nut or chocolate chip ice cream or frozen yogurt, softened
2 pints strawberry ice cream or frozen yogurt, softened
2 pints vanilla ice cream or frozen yogurt, softened
Coarsely chopped toasted hazelnuts (optional)

Steps:

  • Spoon 3 tablespoons Nutella into small pastry bag with small plain tip. Set aside to use for topping.
  • Wrap outside of 9-inch-diameter springform pan with 2 3/4-inch-high sides with foil. Spread nut or chocolate chip ice cream evenly in bottom of pan. Using small spoon, drop half of remaining Nutella by teaspoonfuls over ice cream, spacing drops evenly (do not spread). Freeze until firm, about 30 minutes. Spread strawberry ice cream evenly over. Drop remaining Nutella by teaspoonfuls over ice cream, spacing drops evenly (do not spread). Freeze until firm, about 30 minutes. Spread vanilla ice cream evenly over. Using spatula, smooth top. Pipe reserved Nutella decoratively over top. Freeze just until Nutella is firm, about 30 minutes. Wrap torte in plastic and freeze at least 6 hours or overnight. (Can be prepared 1 week ahead. Keep frozen.)
  • Let torte stand briefly at room temperature to soften slightly. Remove foil and plastic from pan. Using knife, cut around sides of pan; release sides. Press hazelnuts into sides of torte, if desired.

I got this one from Pampered Chef. I sprinkle oreo crumbs on top because I didn't have candy sprinkles.

1 c coarsely chopped oreos (about 10 cookies)
1/2 c milk
1 pkg instant chocolate pudding mix
1 container cool whip
12 ice cream sandwiches
2 Tbsp candy sprinkles (optional)

Steps:

  • 1. Coarsely chop cookies in food processor. In a medium bowl combine milk and pudding mix; beat with a mixer until smooth and mixture begins to thicken. Fold in half of the cool whip and all of the cookies; set aside.
  • 2. Working quickly, arrange 6 of the ice cream sandwiches side by sides on a platter (2 rows of 3). Spread pudding mixture evenly over sandwiches.
  • 3. Top with remaining ice cream sandwiches and smooth sides. Spread remaining cool whip over top and sides. Top with candy sprinkles.

My husband and I developed this sweet frozen treat featuring gingersnaps, caramel and ice cream. Since a little of this rich cake goes a long way, it'll easily feed a crowd.

2 cups finely crushed gingersnaps (about 40 cookies)
1/2 cup packed brown sugar
1/2 cup butter, melted
1 package (14 ounces) caramels
1/3 cup half-and-half cream or milk
1-1/2 cups cold milk
2 packages (3.4 ounces each) instant vanilla pudding mix
1/2 gallon vanilla ice cream, softened
1/2 cup chopped pecans

Steps:

  • In a bowl, combine the gingersnaps, brown sugar and butter; set half aside. Press remaining mixture onto the bottom of a greased 9-in. springform pan. Bake at 350° for 10 minutes. Cool completely. In a microwave or heavy saucepan, melt caramels. Stir in cream until smooth; set aside., In a bowl, beat milk and pudding mixes on low speed for 2 minutes. Stir in ice cream until blended. Spoon half into the crust. Top with half of the reserved gingersnap mixture. Drizzle with half of the caramel sauce; sprinkle with half of the pecans. Repeat layers. Cover and freeze for at least 4 hours or until firm. Remove from the freezer 15 minutes before serving.

1 container (12oz) frozen whipped topping, thawed
12 frozen ice cream sandwiches (3.75oz each)
2 Tbs choco chips, grated choco, or sprinkles

Steps:

  • Coarsley chop cookies. Combine milk and pudding mix; using wire whisk mix until mixture is smooth and begins to thicken. Fold in 1/2 of the the whipped topping and cookies. set aside. Working quickly, arrange six of the sandwiches side by side on a platter. Spread filling over sandwiches. Top with remaining ice cream sandwiches. Spread remaining whipped topping over top and sides of torte. Grate choco over torte. Freeze at least 30min or until ready to serve.

30 chocolate wafer cookies (about 2/3 of 9-ounce package), broken
3 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
3 tablespoons (packed) golden brown sugar
3 cups coarsely crumbled vanilla-flavor halvah (about 12 ounces)
3 pints (6 cups) vanilla ice cream, softened slightly

Steps:

  • Preheat oven to 375°F. Blend cookies, butter and sugar in processor until cookies are finely ground. Add 1 1/2 cups halvah and blend in, using on/off turns. Sprinkle 1 1/4 cups crumb mixture over bottom of 9-inch-diameter glass pie dish. Press remaining crumb mixture firmly over bottom and halfway up sides of 9-inch-diameter springform pan. Bake until crumb mixture in pie dish and crust in pan begin to puff, about 10 minutes. Cool crumb mixture and crust completely.
  • Spread 1 1/2 pints ice cream evenly on cooled crust in springform pan. Sprinkle with 1 cup crumbled halvah. Spread remaining ice cream over. Break up crumb mixture from pie dish. Sprinkle evenly over ice cream; press to adhere for top crust. Sprinkle with remaining 1/2 cup crumbled halvah. Cover; freeze torte until firm, at least 3 hours and up to 5 days.
