I LOST MY NOODLES! LOW CARB/SOUTH BEACH EGGPLANT LASAGNA
I was looking for a yummy South Beach recipe to curb my Italian Cravings. I found a vegetarian lasagna recipe using eggplant slices as noodles, substituted my own meat sauce, and voila! A low carb keeper in our home! The eggplant taste is indistinguishable with all of the bold italian flavors, and adds the needed texture of the missing noodles. I've also seen zucchini strips used as the mock noodles. Try it!

Steps:
- Preheat oven to 425 degrees.
- Spray cookie sheet, arrange eggplant slices and season with salt and pepper.
- Cook slices 5 minutes on each side.
- Lower oven temp to 375.
- Brown meat, onion and garlic in olive oil for 5 minutes.
- Add red pepper and mushrooms, and cook 5 minutes.
- Add spinach, tomatoes, tomato sauce, spices and wine and simmer for 5-10 minutes.
- Blend ricotta, egg and Green onion.
- Blend together Mozzarella and Parmesan Cheese.
- Spread 1/3 of meat sauce in bottom of 9" x 13" glass pan.
- Layer ½ eggplant slices
- Dollop and Spread ½ ricotta
- Layer 1/3 mozzarella/parmesan mixture.
- REPEAT
- Add last layer of sauce, then mozzarella/parmesan mixture on top.
- Cover with foil and bake at 375 degrees for 1 hour.
- Remove foil and bake or broil another 5-10 minutes until cheese is browned.
- Let it rest 10 minutes before slicing, if you can wait that long!

"YOU'LL NEVER MISS THE NOODLES" LASAGNA
I found this recipe on a low carb site and modified it slightly to suit our tastes. We had it for dinner last night and it was AWESOME!! Very yummy and the flavor of all those fresh veggies blended beautifully with the sauce! DH went back for seconds, so this is definitely a keeper. Add a side salad and your meal is complete!

Steps:
- Brown the meat and sausage in a large frying pan.
- When meat is about half done, add the onion, bell pepper, and garlic and continue cooking until the onion is transparent.
- Add the tomato sauce, paste, water and seasonings; mix well.
- Cover and simmer for 20 minutes, stirring occasionally.
- Beat the eggs and ricotta together; season to taste with salt and pepper.
- Preheat oven to 325° and spray a 9x13-inch pan with olive oil cooking spray.
- Spread 1/2 of the meat mixture in the bottom of the pan.
- Top with sliced zucchini.
- Spread the zucchini with the ricotta mixture and top with the spinach and mushroom slices.
- Top that layer with with half of the Mozzarella and Parmesan cheeses.
- Cover with the remaining meat mixture and top with the remaining cheeses.
- Bake at 325° until the cheese is bubbly and beginning to get golden, about 35 to 45 minutes.

Steps:
- Preheat the griller.
- Combine the lemon juice and olive oil and brush it on the eggplant slices.
- Lay them in a single layer on a nonstick baking tray and grill both sides for about 3 minutes each or until golden brown.
- Preheat the oven to 180C degrees.
- In a bowl combine the tomato puree, tomatoes, oregano, basil, cayenne pepper and garlic.
- In another bowl combine the parmesan and breadcrumbs.
- Spoon one third of the tomato mixture into the base of a lasagne or casserole dish.
- Sprinkle with one third of the breadcrumb mixture and cover with a layer of eggplant.
- Spread half the ricotta cheese over the eggplant and continue to layer in the same order, ending with the breadcrumb mixture (in my case hopefully).
- Scatter the mozzarella cheese over the top and bake for about 45 minutes or until golden and bubbly.
- Serve with salad and crusty bread.

Steps:
- Combine eggplant, onion, peppers, garlic, tomatoes and olive oil in a large bowl and mix.
- Put on a large cookie sheet, spread evenly.
- Place in oven at 350 degrees, stirring occasionally and to check that veggies are not too dry, add more oil if needed.
- Cook about 1 hour or until veggies are very tender, 350 degrees.
- Add salt to taste.
- Cook lasagna according to box directions.
- In a 9x13 baking dish, cover bottom with spaghetti sauce.
- Layer 3 lasagna noodles, eggplant mixture, cottage cheese, 1 cup mozzarella cheese and top with spaghetti sauce. Add 3 lasagna noodles and top with remaining spaghetti sauce and 1 cup mozzarella cheese.
- Cover with foil and bake 30-35 minutes or until hot and bubbly.

NORTHERN ITALIAN STYLE LACTO-VEGETARIAN LASAGNA
Modified for the vegetarian from a tried and true Northern Italian Style Lasagna with Bologna Meat Sauce recipe my mother has used for years. (Original recipe this is based on can be found in the Better Homes and Gardens "Italian Cook Book", 3rd printing, 1984.)

- In a large saucepan (or Dutch oven) cook tofu until browned. Add undrained tomatoes, onion, carrot, celery, parsley, tomato paste, bullion granules, nutmeg, 1 teaspoon salt, 1 teaspoon pepper to tofu. Stir. Stir in wine and ¼ cup water. Bring to a boil; reduce heat. Boil gently, uncovered, for 45 to 60 minutes or until desired consistency, stirring occasionally. Remove from heat.
- Cook pasta in boiling water just until tender; drain. Rinse with cool water.
- Combine cheeses.
- For the sauce melt butter in saucepan. Stir in flour, pepper, nutmeg, and ½ teaspoon salt. Add milk; cook and stir until thick and bubbly (don't let burn!).
- Arrange a single layer of the pasta in the bottom of a greased 13"x9"x2" baking dish. Spread 1/3 white sauce over noodles. Spread 1/3 Tofu "meat" filling over white sauce. Spread 1/3 cheese over tofu. Repeat layers of pasta, sauce, tofu mix and cheese 2 more times.
- Cover with foil and bake at 350degrees for 40 to 50 minutes.
- Remove from over. Let stand 10 minutes.
- Serve.
