Moist and delicious banana bread that doesn't taste low-fat! A healthier way to prepare an old favorite. This recipe makes two large loaves. Freezes well. I recommend using a blender or food processor to chop the walnuts (they should still be a little chunky, not quite as fine as sand) as well as to mash the bananas (puree until there are still a few small chunks left).

1/3 cup canola oil
1/3 cup unsweetened applesauce
1/2 cup honey
1/2 cup brown sugar or 1/2 cup honey
3 teaspoons vanilla extract
4 eggs
2 teaspoons baking soda
1 teaspoon baking powder
1/2 cup water, hot
1 1/2 cups chopped walnuts
1 teaspoon salt
3 1/2 cups whole wheat flour
1/2 teaspoon nutmeg, ground
2 teaspoons cinnamon
5 ripe bananas, mashed (or be lightly pureed)

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a large bowl, thoroughly combine oil, vanilla, honey and applesauce together.
  • Add eggs, and beat well.
  • Stir in mashed bananas.
  • Add flour, baking powder, cinnamon, sugar, nutmeg and salt, stirring gently to combine ingredients.
  • Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Stir just until smooth.
  • Pour batter into two greased standard-sized loaf pans.
  • Bake for 60 minutes or until knife inserted in center comes out clean.
  • Allow to cool on cooling rack for at least 1 hour before serving. Whatever you don't eat can be refrigerated or frozen and will keep for quite a while.

I actually abandoned my "family" banana bread in favor of this one... It's more a like a cake than a bread. I have increased the bananas from the original recipe, and I prefer to omit the nuts. I like mine warm with butter on top. Yummy!

1/2 cup butter or 1/2 cup margarine
1 cup sugar
2 eggs, slightly beaten
3 medium bananas, preferably frozen, then defrosted (1-2 cups mashed)
1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 cup whole wheat flour
1/3 cup hot water
1/2 cup chopped walnuts

Steps:

  • Melt butter.
  • Put the butter, sugar, bananas and eggs in a blender. Blend until nice and smooth.
  • Now transfer to a mixing bowl.
  • In a separate bowl, stir together flours, salt, and baking soda.
  • Add dry ingredients to banana mixture alternately with hot water.
  • Stir in chopped nuts.
  • Cut a piece of waxed or parchment paper the size of the bottom of your loaf pan.
  • (This helps the loaf come out in one piece while still warm).
  • Put the paper in the loaf pan and spray the pan well with non-stick spray.
  • Scoop the batter into the pan.
  • Bake in a preheated 325 degree F oven for one hour and 10 minutes.
  • Test with a cake tester to make to make sure it's done.
  • Sometimes it takes a little bit longer.
  • If the top gets too brown, cover it with a piece of aluminum foil so it doesn't get too much darker.

3/4 cup whole wheat flour
1/3 cup applesauce
1/3 cup sugar

  • Preheat oven to 350 degrees.

1 teaspoon orange zest

1/4 cup stick margarine
3 tablespoons oil (of your choice)
1/2 cup white sugar
1 teaspoon spoonable stevia
1/4 cup milk
2 eggs
1 cup banana, mashed
1 teaspoon vanilla extract
2 cups whole wheat flour, blended in blender for finer texture
1 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees.
  • Combine margarine, oil, sugar, stevia, and mashed bananas in a large bowl. Mix until creamy.
  • Add vanilla, eggs, and milk to the creamed mix.
  • In a separate bowl, measure out whole wheat flour. To get a finer texture, you can blend it. This helps to achieve the moistness and unique texture of the bread.

1 1/2 cups white whole wheat flour
2/3 cup sugar
1/4 cup flax seed meal
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
3 mashed bananas (use very ripe bananas )
2 eggs
2 teaspoons vanilla extract
2 tablespoons grapeseed oil
1/2 cup raisins
1/3 cup semi-sweet chocolate chips (optional)

Steps:
