This hearty and tasty Puerto Rican sopa de fideo soup is perfect for a cool evenings dinner!

Number Of Ingredients 18

1 tablespoon of olive oil
1 chicken breast (cubed)
1 teaspoon of garlic powder
1 tablespoon of dried oregano (divided)
1 teaspoon of salt
1/2 teaspoon of black pepper
1 packet of sazon or 1 teaspoon of turmeric for color
1 teaspoon of ground cumin
1/4 cup of sofrito
4 ounces of tomato sauce
2 bay leaves
1 whole red pepper (chopped)
2 carrots (peeled and chopped)
2 celery stalks (peeled and chopped)
8 cups of chicken broth (or water and chicken bullion)
1/4 cup of fresh chopped cilantro (optional)
4 oz of angel hair spaghetti (cut in half)
fresh lime juice for serving

Steps:

  • In a large bowl season chicken with garlic powder, salt, pepper, and 2 teaspoons of oregano.
  • Heat oil over a large pot over medium high heat. Add in the seasoned chicken and cook for two minutes before adding in the sofrito and remaining seasonings.
  • Cook for an additional two minutes before adding in the tomato sauce, bay leaves, celery, carrots, peppers, and chicken broth.
  • Lower heat to a steady simmer and cook for twenty minutes before adding in the cilantro and spaghetti. Mix and cook until pasta is al dente.
  • Taste for additional salt and pepper and squeeze fresh lime juice over soup when serving.

This is a south-of-the-border version of chicken noodle soup. It's originally from the food section of the February 18, 2009 Houston Chronicle and comes from the cookbook "Zarela's Veracruz" by Zarela Martinez with Anne Mendelson. Fideo noodles are nested thin noodles and can be found in the Mexican or ethnic section of most grocery stores.

1 chicken, cut into quarters (3 1/2 to 4 lb. chicken)
2 small white onions (1 unpeeled, divided uses)
6 garlic cloves (2 unpeeled,divided uses)
1 1/2-2 teaspoons salt
10 black peppercorns
15 mint sprigs
7 -8 cups water
3 ancho chilies, stemmed and seeded
1/4 cup vegetable oil
1 (10 ounce) package fideo noodles (or about 8 oz. vermicelli)
fresh ground pepper, to taste (optional)
sliced fresh jalapeno pepper, for garnish

Steps:

  • Place chicken in stockpot or Dutch oven with unpeeled onion, the 2 unpeeled garlic cloves, 1 teaspoon salt,peppercorns and 3 sprigs mint.
  • Add enough water to cover by 2 inches and bring to a boil over high heat.
  • At once, reduce heat to maintain low rolling boil; skim off any froth that rises to top.
  • Cook, partly covered, until chicken is tender, 20-25 minutes; remove pot from heat and let chicken cool in stock.
  • Lift out chicken pieces. Discard skin, remove meat from bones and cut into bite-sized pieces.
  • Strain stock into a bowl, discarding solids. Rinse out and dry pot.
  • Place chiles in small bowl and cover with 2 cups of the hot stock. Let sit for 20 minutes; transfer chiles and soaking liquid to blender and puree with remaining peeled and coarsely chopped onion and 4 peeled and quartered garlic cloves.
  • Add oil to clean stockpot and heat over medium-high heat until rippling.
  • Add the nests of fideos and brown lightly on both sides. If using vermicelli, stir-fry until lightly browned.
  • Lift out with slotted spoon and drain on paper towels.
  • Pour out all but a thin film of oil from pot.
  • Add pureed chile mixture, reduce heat to low and cook 10 minutes, stirring frequently.
  • Add chicken, fried noodles and remaining stock. Bring to a boil and taste for salt, adding a little if it seems flat.
  • Cook over low heat until noodles are al dente, about 5 to 7 minutes.
  • Meanwhile, chop remaining mint. Add most of the mint to the soup; serve immediately with a sprinkling of the remaining mint, a few grinds of black pepper if desired and several jalapeno slices.

1 whole chicken, cut in pieces
2 1/2 teaspoons salt
1 teaspoon pepper
4 tablespoons olive oil (1 reserved)
8 cups chicken stock
1/2 teaspoon oregano
3 tablespoons sofrito sauce
2 celery ribs, sliced
1 large onion, diced
1 medium carrot, sliced
1 large potato, cube
sazon goya con culantro y achiote, 1 package

Steps:

  • Rub the chicken with salt, pepper and oregano and one tablespoon olive oil and set aside for 30 minutes.
  • In a large heavy pot sauté the sofrito, onions and celery with remaining olive oil, for 5 minutes over medium-low heat. Brown the chicken pieces to seal in their flavor. Add the chicken stock or water to the chicken and bring to a boil. Cover, reduce heat and simmer for 10-15 minutes.
  • Raise the heat and bring to a boil once more; add carrots, potatoes, sazon and bay leaf. Reduce heat to medium and cook uncovered for 20 minutes, until carrot and potatoes are tender, stirring occasionally. During the last 5 - 10 , minutes add the angel hair and cook until pasta is done.

7 ounces angel hair pasta, uncooked
1 medium poblano peppers or 1 medium green bell pepper, seeded and chopped
1 small jalapenos or 1 small serrano pepper, seeded and chopped
1/2 cup onion, chopped
6 garlic cloves, finely chopped
1 (8 ounce) can tomato sauce (Hunts)
6 cups water
2 tablespoons chicken bouillon (caldo con sabor de pollo)
2 cups cooked chicken, shredded
1/4 teaspoon sazon seasoning
2 tablespoons fresh cilantro, chopped

Steps:

  • Heat oil in large saucepan over medium-high heat. Crush noodles and add to saucepan. Stir to coat with oil. Cook 2 minutes or until browned, stirring constantly. Add peppers, onion and garlic; cook 5 minutes or until vegetables are tender, stirring occasionally.

1 chicken, cut into parts
bay leaf
1/2 teaspoon ground cumin, to taste
1/2 teaspoon garlic granules, to taste
salt
2 tablespoons vegetable oil
2 (10 ounce) boxes dry fideo noodles (pieces about 1 1/4 inch long) or 2 (10 ounce) boxes broken dry vermicelli (pieces about 1 1/4 inch long)
1 white onion, chopped
1 large bell pepper, seeded and chopped
1 (8 ounce) can tomato sauce (just enough for some color and flavor)
cilantro (optional) or jalapeno, for seasoning and color, to garnish (optional)

Steps:

  • Combine first five ingredients in a large stockpot with enough water to cover; boil until done, about 30 minutes.
  • Drain and reserve broth.
  • While the chicken is cooking, heat the oil in a large skillet.
  • Sauté the fideo in oil a few minutes until lightly browned over medium heat.
  • Add onion and bell pepper pieces and cook until onion is translucent.
  • Add cooked vegetables and noodles to the cooked chicken pieces.
  • Pour in some broth and tomato sauce, enough to cover everything (just a little for thicker stews, more for thinner soups), then cover and simmer until noodles are cooked through.
  • Finish with more seasonings (cumin, salt, garlic, to taste).
  • Can be garnished with cilantro and/or jalapeño.
