My Dad's Sausage and Noodles image

When my dad threw this dish together, he was living from paycheck to paycheck, and we were a day or two away from the next paycheck. He looked at what he had on hand, and this is the result. *The better you drain your sausage, the drier the dish will be. I prepare it very dry.

1 lb chub of country breakfast sausage (hot or mild, depending on your taste)
12 ounces uncooked wide egg noodles, cooked according to package instructions
1 medium onion, medium dice
1 -3 teaspoon minced garlic (depending on your taste)
parmesan cheese

Steps:

  • Brown sausage in a skillet, just like you would ground beef. Add onion and garlic to sausage as it cooks. When cooked, drain off fat. Set aside.
  • At the same time, cook egg noodles according to package instructions.
  • After draining noodles, return them to the pot and add the sausage, onion, garlic combination. Stir and mix well.
  • Serve, topping with parmesan cheese and seasoning with salt and pepper to taste (I like red pepper flakes).

8 oz egg noodles
1 Tbsp olive oil
1 lb pork sausage
1 medium onion diced
1 small jar pimentos
3 Tbsp hungarian paprika
1 c chicken broth
2 c fresh spinach leaves
2 c sour cream
salt and pepper to taste
3 Tbsp fresh parsley chopped

Steps:

  • 1. Cook the noodles in salted boiling water drain and set aside. Meanwhile add the oil to a large skillet. Add the sausage and onion cook breaking it up until no longer pink.
  • 2. Add the pilmentos, paprika, and chicken broth. Bring to a low boil. Add the spinach and let wilt. Stir in the sour cream . Season with salt and pepper. Serve over noodles garnished with parsley

I adapted this dish from a recipe my German grandmother gave me. It reminds me of my heritage whenever I make it.

1 pound bulk pork sausage
1 medium head cabbage (about 1-1/2 pounds), thinly sliced
1 large onion, thinly sliced
1 large carrot, shredded
2 teaspoons chicken bouillon granules
1/4 cup boiling water
2 cups sour cream
3/4 teaspoon salt
1/2 teaspoon pepper
8 ounces noodles, cooked and drained
Fresh parsley, optional

Steps:

  • In a large skillet, cook the sausage over medium heat until no longer pink; drain. Add cabbage, onion, and carrot; mix well. Dissolve the bouillon in water; pour over vegetables. Cover and cook over medium-high heat until the vegetables are tender, about 10-15 minutes. Reduce heat; stir in sour cream, salt and pepper. Heat through. Transfer to a serving bowl; add hot noodles and toss. Garnish with parsley if desired.
