2 lbs pork, cubed
1 1/2 lbs sauerkraut, rinse and drained
2 white onions, chopped
2 tablespoons lard (if meat is very lean) or 2 tablespoons oil (if meat is very lean)
2 tablespoons sweet Hungarian paprika (no generic please)
1 (28 ounce) can crushed tomatoes
1 tablespoon sugar
2 bay leaves
1 cup water
1/2 pint sour cream (no yogurt please)
salt and pepper

Steps:

  • Brown the meat and onion (in lard or oil if needed) in a pot with lid.
  • Add the paprika to the meat and onion mix, stir to mix in (do not burn).
  • Put in the drained sauerkraut, crushed tomatos, bay leaves water and sugar.
  • Stir to mix it up and then cover the pot.
  • Cook slowly for about one hour, or until meat is tender.
  • Add the sour cream and stir.
  • Add salt & Pepper to taste.
  • Serve in soup plates, with good crusty bread.

2 lbs barbecued pork, trimmed
2 cups onions, chopped
2 garlic cloves, chopped
1 teaspoon dried dill
1 teaspoon caraway seed
1 tablespoon salt
1 beef bouillon cube
1/2 cup boiling water
1 tablespoon paprika
1 (26 ounce) can sauerkraut, drained
2 cups sour cream

Steps:

  • Cut pork into 2-inch cubes.
  • In large Dutch oven, combine pork, onion, garlic, dill, caraway, salt, bouillon cube and boiling water.
  • Bring to boil; reduce heat and simmer, covered, 1 hour.
  • Add paprika; stir to dissolve. Add sauerkraut; mix well.
  • Simmer, covered, until meat is tender, 1 hour or longer.
  • Stir in sour cream; heat thoroughly.

I'm German/American and sauerkraut was a must in our house. Growing up in Germany for 23 years we had it often and in many different varieties. Many times Mom made it just with hamhogs or smoked pigs feet.

3 lbs sauerkraut or 2 quarts sauerkraut
1 tablespoon sweet paprika
4 tablespoons finely minced bacon
1 large onion, minced
3 -4 cups stock or 3 -4 cups water, as needed
caraway seed
1 cup sour cream
2 -3 tablespoons flour

Steps:

  • Drain sauerkraut pressing excess liquid out.
  • Rinse sauerkraut once or twice until the flavor is mild.
  • Melt bacon in a dutch oven or casserole; when hot add, onion and sweet paprika.
  • Saute for about 8 minutes or until onions are soft.
  • Add sauerkraut,stock and caraway seeds.
  • Cover and simmer slowly for 1 1/2 to 2 hours.
  • To thicken sauerkraut, stir 2-3 tablespoons flour into 1 cup of sour cream and add to sauerkraut.
  • Simmer for 10 more minutes.
  • Season with salt and pepper and a pinch of sugar if necessary.
  • If you like to add some sausages or some other"wurst" that would be fine too.
  • Add it during the last 1/2 hour of cookin.

There is Goulash and there is Goulash and there is this Goulash, they are mostly all good but I find this one distinctive. The saurerkraut gives great flavor. Do ahead and reheat the flavor is even better. I use wine cured kraut.

1 tablespoon lite olive oil
1 lb beef, stewing meat in 1-inch cubes
1 lb pork, cut into 1 "cubes
2 medium onions, sliced
2 tablespoons hot paprika, hungarian
1/2 teaspoon dried marjoram
2 lbs sauerkraut, rinsed,squeezed dry
1 cup sour cream
1 teaspoon caraway seed
salt
cooked hot buttered noodles

Steps:

  • In a dutch oven heat oil and brown the meat on all sides, when browned set aside.
  • Add onions to the skillet, saute 5 minutes.
  • Pour off excess fat and return meat to the pot.
  • Sprinkle in the paprika and Majoram.
  • Top with sauerkraut.
  • Bake covered for 1 hour 350F degrees oven.
  • Add salt.
  • When ready to serve stir in the sour cream and caraway seeds.
  • Serve over hot buttered noodles.

1/2 lb sliced hungarian gypsy bacon or 1/2 lb paprika bacon, cut into pieces
1 cup dried hungarian egg noodles
1 medium onion, chopped
1 small green bell pepper, seeded and chopped
1 garlic clove, chopped
1 1/2 tablespoons all-purpose flour
1 1/2 tablespoons sweet Hungarian paprika
4 cups beef broth
1 lb packaged sauerkraut, rinsed, drained, and finely chopped
1/2 teaspoon dried marjoram
salt & freshly ground black pepper
4 cups water

Steps:

  • In a heavy 6-quart pot, fry the bacon over moderate heat till almost crisp and drain on paper towels. Pour off all but about 2 tablespoons of fat from the pot, add the noodles, and stir till they begin to color, about 2 minutes. Add the onion, bell pepper, and garlic and stir till the vegetables soften and the noodles are golden, about 3 minutes. Sprinkle the flour and paprika over the top, stir, add 1 cup of the broth, and stir about 1 minute longer. Add the sauerkraut, bacon, marjoram, salt and pepper, the remaining broth, and the water, stir, and bring to a boil. Reduce the heat to low, cover, and simmer for 1 hour.
  • To serve, ladle the hot soup into heavy soup bowls.

3 pounds spicy, Hungarian sausage, sliced
1 1/2 pounds stewing beef, trimmed and cut in 3/4-inch cubes
1 1/2 pounds boneless fresh ham or lean pork, trimmed and cut in 3/4-inch cubes
1/3 cup bacon fat or vegetable oil
4 medium-size onions, finely chopped
1/3 cup Hungarian paprika
1/2 pound sauerkraut, drained
4 cups chicken broth
4 bay leaves
1/2 teaspoon thyme
Salt and freshly ground pepper to taste
2 cups sour cream (optional)

Steps:

  • In a large skillet, saute the sausage slices over medium-high heat, tossing, until lightly browned on both sides, about 5 minutes. Remove, drain on paper towels and set aside. In the same skillet, brown the beef and ham cubes in the sausage fat over high heat and set aside.
  • In a large casserole, heat the bacon fat. Add the onions and cook over medium heat, until transparent, 10 to 15 minutes. Stir in the paprika and cook, stirring, until the paprika and onions form a thick paste and the scent of raw paprika disappears, about 5 minutes. Stir in the beef and ham cubes. Rinse the sauerkraut and add it, along with the broth, bay leaves and thyme. Stir well to combine all the ingredients.
  • Bring the stew to a boil. Reduce the heat to simmer and cook, covered, for about 45 minutes. Add the sausage slices and continue cooking until the meats are very tender, about 45 minutes longer. Season with salt and pepper. Let cool, then refrigerate overnight to allow the flavors to develop.
  • The following day, reheat the stew and adjust seasoning with additional salt and pepper. Remove bay leaves. Serve with sour cream on the side, if desired.

Rice -- 1 cup
Stock or water -- 2 cups
Oil -- 2 tablespoons
Paprika -- 2 tablespoons
Onions, minced -- 2
Pork butt or shoulder, cut into 1-inch cubes -- 1 pound
Spicy pork sausage (see variations), sliced into rounds -- 1/2 pounds
Stock or water -- 1 1/2 cups
Salt and pepper -- to taste
Sauerkraut, rinsed and squeezed dry -- 2 pounds
Hard-boiled eggs (optional), sliced into rounds -- 3
Sour cream -- 1 cup
Bacon -- 4 pieces
Paprika -- 1 teaspoon

Steps:

  • Method Preheat oven to 350°F. Place the rice, 2 cups stock or water and a pinch of salt in a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to low, cover tightly and simmer for 15 minutes. Remove from heat and set off to the side, covered. Heat the oil in a sauté pan or skillet over medium flame. Add the paprika and stir to just cook through and color the oil, about 30 seconds. Add the onions and sauté until translucent, about 4 to 5 minutes. Do not brown. Add pork, sausage and the 1 1/2 cups of stock or water. Bring to a boil, reduce heat to low, cover and simmer for about 20 minutes. Add more stock or water if necessary to keep the pan from drying out. Remove from heat and season to taste with salt and pepper. Place 1/3 of the rinsed sauerkraut in the bottom of a large casserole or baking dish. Spread 1/2 of the cooked rice over the sauerkraut. Then spread 1/2 of the meat over the rice. Lay egg slices over the pork and sausages. Repeat these layers a second time, finishing with a layer of sauerkraut. Spread the sour cream over the top of the sauerkraut and lay the bacon strips neatly over the sour cream. Sprinkle the top of the dish with paprika for garnish. Place the casserole in oven and bake for 40 to 50 minutes, or until it is bubbling and browned on top. Variations Try to use a Eastern European sausage like kolbász, kielbasa or Polish sausage. If unavailable, just use a spicy Italian sausage. Some recipes substitute cooked sliced potatoes for the rice

2 cups sour cream
Hot cooked new potatoes in their jackets

  • In saucepan, combine pork, onions, garlic, bouillon powder, caraway seed, dill, salt, and 1/2 cup hot water. Bring to a boil; lower heat, cover, and simmer 1 hour Blend in paprika. Add sauerkraut; stir gently to combine. Cover; simmer 30 to 45 minutes onger, until meat is fork tender. Remove from heat. Gradually stir in sour cream. Return to heat and heat through, but do not boil. Serve with potatoes.

1/4 cup unsalted butter
1 large yellow onion, finely chopped
1 lb boneless beef chuck, cut in 1 1/2 inch cubes
1 lb boneless pork shoulder, cut in 1 1/2 inch cubes
1 lb boneless veal shoulder, cut in 1 1/2 inch cubes
3 tablespoons hungarian sweet paprika
1/4 cup warm water
1 1/2 teaspoons salt
1/4 teaspoon fresh ground blach pepper
3/4 cup beef broth
2 cups sauerkraut, rinsed well and wrung fairly dry
1 cup sour cream, at room temperature

Steps:

  • Melt butter in a large Dutch oven over medium high heat. Add onions and saute until golden, about 7 minutes. Remove to a large bowl.
  • Brown meat in Dutch oven and three batches, allowing about 10 minutes per batch and removing to bowl as it browns.
  • Blend the paprika with the warm water and the salt and pepper.
  • Return onion and meats to pot along with any accumulated juices, the paprika mixture, and beef broth, and bring to a boil. Adjust heat and simmer mixture until all meats are tender, about 2 hours. Check pot occasionally and add a little more water if mixture threatens to scorch.
  • Mix in sauerkraut, cover and simmer 10 minutes, then smooth in sour cream and heat through 5 minutes. Do not allow to boil or sour cream will curdle. Taste for salt and pepper and add if needed.
