These are a unique snack that we always have around the house during the Christmas season. Some people (like me) love them, and some people just think they're just ok, but no one can tell what's in them. I always double this recipe!

Number Of Ingredients 8

1 (8 ounce) package chopped dates
1/2 cup butter
3/4 cup sugar
1 cup chopped pecans
1 1/2 cups Rice Krispies
1 teaspoon vanilla
1 pinch salt
confectioners' sugar

Steps:

  • Mix dates, butter, and sugar in large saucepan. Cook 8 minutes over medium-low heat, stirring continuously to avoid burning.
  • Remove from heat. Add other ingredients, stirring carefully to avoid crushing the rice krispies.
  • Let cool for a few minutes until mixture is cool enough to handle. Roll into finger size nuggets and dip in confectioner's sugar to coat. Set out on wax paper to finish cooling. Store at room temperature in airtight container for up to 2 weeks.

Take your stew or casserole to the next level with our easy dumplings. Add them to your dish for instant family-friendly comfort food in a flash

Number Of Ingredients 3

150g self-raising flour, plus a little extra
70g suet
small handful of parsley, chopped (optional)

Steps:

  • Whilst your stew is bubbling, make the dumplings. Weigh the flour into a bowl and add ½ tsp salt. Stir through the suet and parsley, if using. Make a well in the centre and add 3 tbsp cold water, mix to a dough, adding more water until the dough is firm but pliable. Divide into eight equal pieces and roll in a little more flour into balls. Chill until needed.
  • When the stew has about 30 mins to go, arrange the dumplings on top and cover with a lid. With the oven at 160C/140C fan/gas 3, cook the stew and dumplings for 20 mins, then remove the lid and cook for another 10 mins until they're brown and puffed up.
