3/4 cup ketchup
3/4 cup reduced-sodium soy sauce
1/3 cup sherry or chicken broth

24 boneless skinless chicken thighs (about 6 pounds)

Steps:

  • In a small bowl, mix the first 6 ingredients. Reserve 1-1/3 cups for basting; cover and refrigerate. Divide remaining marinade between 2 large shallow dishes. Add 12 chicken thighs to each; turn to coat. Refrigerate, covered, for 8 hours or overnight., Drain chicken, discarding marinade. , Grill chicken, covered, on an oiled rack over medium heat for 6-8 minutes on each side or until a thermometer reads 170°; baste occasionally with reserved marinade during the last 5 minutes.

'Huli Huli Chicken' (turn, turn) was invented by Ernest Morgado when he cooked teriyaki chicken for a group of farmers in 1955. This has been a Hawaiian staple with sticky rice ever since. This is my family's version of Huli Huli Chicken. Use aji mirin (sweet rice wine) in place of sherry if desired.

2 (3 pound) chickens, each cut into 8 pieces
1 cup unsweetened pineapple juice
½ cup soy sauce
½ cup brown sugar
⅓ cup ketchup
¼ cup sherry
1 (2 inch) piece fresh ginger, crushed
3 cloves garlic, crushed
4 green onions, chopped
¼ teaspoon dry mustard

Steps:

  • Rinse chicken pieces and pat dry with paper towels. Combine pineapple juice, soy sauce, brown sugar, ketchup, sherry, ginger, garlic, green onions, and dry mustard in a large resealable plastic bag, stirring the marinade until brown sugar has dissolved. Place chicken pieces into the bag, squeeze out air, seal bag, and lomi (massage) bag to coat chicken with marinade. Refrigerate at least 4 hours to overnight.
  • Move an oven rack 6 inches from heat source and preheat oven to 425 degrees F (220 degrees C).
  • Remove chicken from marinade and arrange chicken, skin sides up, on a broiler pan.
  • Bake chicken in preheated oven until browned on both sides and the juices run clear, turning every 10 minutes, 30 to 45 minutes. Baste with remaining marinade after each turning. An instant-read meat thermometer inserted into the thickest piece of chicken, not touching bone, should read at least 160 degrees F (70 degrees C).

1/2 cup kosher salt
1/2 cup sugar
3 bay leaves
3 cloves garlic, peeled and smashed
3 cups ice
One 5- to 7-pound whole chicken
1 cup pineapple juice
1/2 cup ketchup
1/2 cup soy sauce
2 tablespoons sherry vinegar
1/2 cup light brown sugar
2 teaspoons ground ginger
2 tablespoons garlic powder
2 tablespoons kosher salt
1 tablespoon plus 1 teaspoon paprika
1 tablespoon cayenne pepper
1 tablespoon onion powder
1 teaspoon ground cumin
Freshly cracked black pepper
1 lemon, juiced

Steps:

  • Begin by placing the whole chicken, breast-side down, on the preparation surface. Using kitchen shears, remove the backbone by cutting up from the tailbone to the neck on both sides. Open the bird, remove the breastbone and wishbone. Make small cuts on both sides below the thighs to tuck the wings under so you have a flattened "spatchcock" chicken.
  • To a small saucepan, add 1 cup water, the salt, sugar, bay leaves and garlic cloves. Bring to a simmer to dissolve the salt and sugar. Once at a simmer, turn off the heat and add the ice. Once the liquid is cool, place into a resealable bag over a bowl and add the chicken to the brine, making sure it is completely submersed. Allow to brine in the fridge for 1 hour.
  • In a small saucepot over medium-low heat, combine the pineapple juice, ketchup, soy sauce and sherry vinegar. Once the liquid simmers, whisk in the brown sugar and ginger. Continue to simmer until the liquid begins to thicken, about 5 minutes. Remove from the heat and let stand (or prepare ahead and refrigerate until ready for use). Once ready for use, reserve about a cup to serve.
  • Preheat a grill to medium heat.
  • Remove the chicken from the brine and pat dry. Thoroughly mix the garlic powder, salt, paprika, cayenne, onion powder, cumin and some black pepper together in a small bowl. Coat the chicken with the dry rub, making sure to sprinkle well inside the cavity. Lay the chicken flat on the preparation surface, making a neat, rectangular package with the thighs tucked next to the breasts and the wings inserted into the slits.
  • Secure the chicken in a medium rectangular wire-mesh grilling basket and set over an open grill flame. Char with the breast side down first, 7 to 8 minutes. Turn once and continue to grill, bone-side down for another 15 minutes.
  • Continue to turn as it cooks so it doesn't burn and it replicates the Huli Huli machine cooking process. Squeeze the lemon juice over the chicken as you turn it. Finish by alternating sides until the chicken is thoroughly browned, the skin is crispy and a digital instant-read thermometer tucked under the breast confirms the internal temperature is 165 degrees F. The total cook time will be 35 to 40 minutes. With a heat-resistant silicone pastry brush, glaze the chicken with the Huli Huli sauce the last 5 minutes. Remove from the basket and allow the chicken to rest for 6 to 8 minutes.
  • Carve the chicken into breasts, thighs and wings. Arrange on a large serving dish alongside the reserved Huli Huli sauce.

2 cups soy sauce
1 tablespoon vegetable oil
6 garlic cloves, minced
1 tablespoon grated fresh ginger
4 chicken halves (about 8 pounds total)
2 1/4 cups pineapple juice
1/4 cup brown sugar
1/4 cup soy sauce
1/4 cup ketchup
1/4 cup rice vinegar
4 garlic cloves, minced

2 teaspoons asian chili-garlic sauce (Sriracha Sauce)

Steps:

  • Brine chicken: Combine water and soy sauce in large bowl. Heat oil in large saucepan over medium high heat until shimmering. Add garlic and ginger and cook until fragrant, about 30 seconds. Stir in soy sauce mixture. Add chicken and refrigerate, covered, for at least one hour or up to eight hours, not longer cuz it will get salty.
  • glaze: Combine pineapple juice, sugar, soy sauce, ketchup, vinegar, garlic, ginger, and chili garlic sauce in empty saucepan and bring boil. Reduce heat to medium and simmer until thick and syrupy (you should have about one cup), 20 to 25 minutes.
  • Remove chicken from brine and pat dry with paper towels. Arrange chicken skin side up on grill. Grill until well browned not burned, now flip with skin side down, and brown skin until done. Transfer chicken to platter, brush with half of glaze,(other half for dipping) and let rest 5 minutes.

In 1955, Ernest Morgado, a Honolulu businessman, served a group of farmers grilled chicken that had been marinated in his mother's teriyaki-style sauce. It was such a hit that he decided to market it with the name "huli huli." Huli means "turn" in Hawaiian and refers to how it's prepared: grilled between two racks and turned halfway through cooking. This simplified version calls for chicken pieces and a standard grill. The original recipe is a trade secret, but you can find many slightly different variations on the internet, typically including ginger, garlic, soy sauce, something sweet (honey, brown sugar or maple syrup) and something acidic (vinegar, white wine, lime juice or pineapple juice). This recipe is adapted from "Aloha Kitchen: Recipes from Hawai'i" by Alana Kysar (Ten Speed, March 2019). It also works beautifully with boneless chicken thighs, but adjust your cooking time accordingly.

Add the chicken to the grill, cover, and cook 25 to 35 minutes, turning every 5 minutes to keep the chicken from burning, and basting it with the reserved marinade after you turn it, until cooked through. Made with pineapple juice, soy sauce, brown sugar and ketchup, it's sweet, sour and packs a little kick of heat -- the perfect flavor combo for grilled meats. Because boneless, skinless chicken thighs cook in about half the time as the bone-in variety (the traditional choice), here we give the sauce a head start by reducing it on the stovetop before using it to baste the chicken.

Steps:

  • Remove 1 1/2 cups of the marinade and add to a small saucepan. Bring to a simmer over medium heat and cook until slightly thickened, 6 to 9 minutes. Transfer to a small bowl and let cool, then cover and refrigerate until ready to grill.
  • Place the chicken thighs in the remaining marinade in the large bowl, turning to coat. Cover and refrigerate for 4 hours.
  • Prepare a grill or grill pan for medium-high heat. Lightly oil the hot grill grates with vegetable oil. Remove the chicken thighs from the marinade, letting the excess drip back into the bowl, place on the grill (see Cook's Note) and season with salt and pepper. Grill, basting with the sauce frequently, until the chicken is charred and registers 165 degrees F on an instant-read thermometer, 5 to 8 minutes per side. The sauce should caramelize and turn a deep red color. Transfer the chicken to a plate.
  • Drizzle the pineapple with the olive oil and rub to coat evenly. Grill until charred and lightly caramelized, 4 to 5 minutes per side.

1 cup pineapple juice
1/2 cup chicken stock
1/4 cup dry white wine or 1/4 cup sherry wine
1/4 cup soy sauce
1/4 cup ketchup
2 tablespoons dark sesame oil
1 tablespoon Worcestershire sauce
2 teaspoons minced peeled fresh ginger
fresh ground black pepper
1 (3 1/2 lb) chicken
coarse salt

Steps:

  • Add the pineapple juice, chicken stock, wine, soy sauce, ketchup, sesame oil, Worcestershire sauce, ginger, and ½ teaspoon pepper to a nonreactive bowl; whisk to combine.
  • Remove the packet of giblets from the body cavity of the chicken; rinse the chicken, inside and out, under cold running water, then drain and blot dry, inside and out, with paper towels.
  • Place the bird on its breast; using poultry shears and starting at the neck end, cut out the backbone by making one lengthwise cut on either side of the bone.
  • Remove and discard the backbone; open the chicken like a book, skin side down.
  • Use a paring knife to cut along each side of the breastbone.
  • Run your thumbs firmly along both sides of the breastbone and white cartilage, then pull these out.
  • Cut off the wing tips and trim off any loose skin; season the bird on all sides with salt and pepper.
  • Place the bird in a nonreactive baking dish just large enough to hold it and pour the marinade/glaze over it.
  • Let the chicken marinate in the refrigerator, covered, for 4 hours or as long as overnight, turning the bird several times.
  • Drain the marinade into a heavy saucepan, place over high heat, and bring to a boil.
  • Decrease heat to medium-high and let the marinade boil until thick, syrupy, and reduced by almost half, 6-10 minutes, stirring with a wooden spoon to prevent scorching.
  • Set up the grill for direct grilling and preheat to medium.
  • When ready to cook, brush and oil the grill grate.
  • Place the chicken on the grill and grill until cooked through, 15-20 minutes per side, turning several times with a large spatula.
  • Test for doneness by using an instant-read meat thermometer; insert it into the thickest part of a thigh but not so that it touches the bone.
  • The internal temperature should be about 180°; during the last 2 minutes of cooking on each side, baste the chicken with some of the glaze.
  • Transfer the cooked chicken to a platter.
  • Place the saucepan with any remaining glaze over high heat and bring to a boil; let boil 2 minutes, then drizzle the glaze over the chicken.

1 teaspoon salt, or as needed
2 cloves garlic, peeled
1 (1/2 inch) piece ginger, peeled and roughly chopped

  • Pulse garlic and ginger in a food processor until combined. Add brown sugar, soy sauce, chicken broth, pineapple juice, and rice vinegar; process until well combined. Strain marinade into a bowl, pressing with the back of a spoon to remove all liquid. Discard pulp.
  • Blot chicken with paper towels to remove excess salt and moisture. Place skin-side down on the prepared broiler pan.
  • Cook under the preheated broiler, turning every 5 minutes, until raw surface have cooked, about 20 minutes. Continue to cook, turning and basting with the marinade every 5 minutes until well browned, another 20 minutes. Cover with foil and cook for 10 more minutes.

HULU HULI MARINADE & GLAZE:
2 whole chickens or 4 half chickens
1/2 cup mango nectar
1/2 cup orange or pineapple juice
1/4 cup shoyu or soy sauce
1/4 cup ketchup
2 tablespoons sesame oil
1 teaspoon sriracha chile sauce, optional
1/4 cup dry sherry or white wine
3 tablespoons ginger, finely chopped
1 tablespoon Worcestershire sauce
1 tablespoon honey
1 tablespoon kosher salt
1 tablespoon black pepper, freshly ground

Steps:

  • Drain the marinade from your chickens. Do not throw it out; reserve the marinade for making your glaze for the chickens. Place your marinade in a non-reactive or non-stick sauté pan and bring to a simmer. Cook it over low heat until it reduces by 25 to 30 percent. Take a spoon and coat the back of the spoon with sauce, if you run your finger through the sauce and it does not run and cover the line you just made it is ready. If it is too thick ad a little water. Test it the same way. Since this sauce/glaze has both fruit and honey keep the heat low when reducing it. Turn off the heat and reserve for glazing the chicken. Prepare a two-zone fire one side for direct heat, the other for indirect cooking. If cooking on charcoal I like to use mesquite or Kiawe for this recipe or at least some mesquite chips on the fire to add some of that flavor. Clean your grills nicely and place the chicken on the in direct side of the grill. I like to do the backside first to in case any flare ups occur on the hotter time of the grill. Cook for five to ten minute per side over the indirect heat. This is a good time to use the wood chips if you are opting to do so. By now your coals should be a bit cooler and it is time to put some nice grill marks on your chickens. Keeping an eye on them to prevent flare-ups from burning your birds "al Carbon". If you are using a kettle style BBQ you can just spin the side of the grill over the coals. Once your grill marks are on, now move your bird back to the indirect side of the grill. Using your simmered and reduce marinade which is now a nice glaze, paint your chickens with the glaze. Cover and let it cook on for a while. Repeat as necessary or desired. Using a thermometer check the temperature of the chickens at the thickest part of the thigh and leg or thickest part of the breast. When it is at 165°F pull it off the grill and let it rest for a few minutes before cutting.

Huli huli means to turn over and over in Hawaiian, so no matter what method you choose to make this recipe, the key is to Huli Huli :) This chicken dish is tender and so DELICIOUS, and is a FAVORITE in my household. I hope you enjoy it as much as I do! Try it on pork or ribs, it's great also!!! Cooking time does not include marinating time.

2 (2 -3 lb) fryer chickens
3/4 cup soy sauce, reduced sodium works fine
1/2 cup lime juice
1/2 cup honey
1/3 cup brown sugar
3 tablespoons olive oil
3 garlic cloves, minced
3 tablespoons ketchup
2 tablespoons fresh gingerroot, minced
1 teaspoon sambal oelek or 1 teaspoon asian chili paste
fresh ground black pepper, to taste
salt, to taste
1 teaspoon sesame oil (optional)

Steps:

  • Split each chicken down the backbone, but leave attached at breast. Remove neck bone.
  • Rinse off chickens, and pat dry with paper towels. Set into a lg. plastic container.
  • To make marinade, mix together soy sauce, lime juice, honey, brown sugar, oil, garlic, ketchup, gingerroot, sambal oelek or Asian chile paste, salt and pepper, and sesame oil if using.
  • Pour marinade over chicken, then cover, and store in refrigerator.
  • Marinate split chickens for 20 minutes to 4 hours. (If you are short on time it is not absolutely necessary to marinate chicken).
  • During the marinating time, turn chickens often, to coat all areas of the chickens well.
  • Secure chickens on rotisserie and roast 60-80 minutes, basting often with the marinade while cooking.
  • If you don't have a rotisserie, grill the chicken on a barbecue rack over med. coals, turning often for about 45 minutes Baste frequently with the marinade, flipping chicken often while cooking.
  • If you'd prefer, you can roast the chicken at 325, for 1 1/2 hrs., basting chicken often with the marinade, and flipping the chicken often while cooking.
  • Do not save the marinade, or serve over chicken!

6 bone-in skin on chicken breasts
3 cups unsweetened pineapple juice, divided
1/2 cup tamari
1 cup ketchup
1/2 cup brown sugar
1/3 cup sherry wine
1/4 cup grated gingerroot
1/4 cup green onion, diced
1 tablespoon garlic, minced
1 teaspoon black pepper

Steps:

  • Place chicken breasts and 1 and 1/2 cups pineapple juice in a heavy duty freezer bag.
  • Press out all the air, seal and marinate in the fridge overnight.
  • The next morning, in a medium saucepan combine remaining ingredients.
  • Bring to a boil, reduce heat and simmer for 20 minutes, stirring often.
  • Remove from heat, reserve 1/2 cup.
  • Drain Chicken and pat dry.
  • When marinade is cool, place in a freezer bag with the chicken, press out all the air, seal and let marinate for 8 hours.
  • Prep Grill.
  • Remove chicken from marinade and grill, using the reserved marinade to baste.
  • Depending on the size of your chicken breasts, this will take 30 minutes for small ones, up to 50 for large ones.
  • (Tamari is Soy Sauce aged in oak barrels-prep time reflects marinating time).

Jumped out at me while leafing through the August '08 issue of "Cuisine at Home." According to the article, this grilled chicken is cooked and sold from roadside stands in Hawaii. I haven't tried it yet, but it sounds wonderful. At first sight it looks like a lot of work, but I bet it isn't. Just a lot of ingredients. If you make it before me, let us all know how it is, O.K?

8 chicken legs
1/2 cup pineapple juice
1/2 cup fresh lime juice
1/2 cup dark brown sugar
4 tablespoons ketchup
4 tablespoons dark soy sauce
2 tablespoons garlic, minced
2 tablespoons fresh ginger, minced
2 tablespoons vegetable oil
salt and pepper

Steps:

  • Whisk all ingredients together in a bowl.
  • Place drumsticks in half the pineapple juice mixture in a large resealable plastic bag; refrigerate 1 hour.
  • Reduce remaining mixture in a saucepan over medium-high heat until thickened; set aside for basting.
  • Preheat grill to high.
  • When hot, turn off one burner, leaving the other lit.
  • Remove drumsticks from marinade.
  • Arrange on UNLIT portion of the grill.
  • Cook chicken to an internal temperature of 165 degrees (about 40 minutes).
  • Baste with reserved glaze regularly.
  • Turn after 20 minutes; continue basting until done.

1 cup pineapple juice
1 cup chicken broth
1/4 cup soy sauce
1/4 cup ketchup or red barbecue sauce
1/4 cup rice vinegar
1/4 cup dark brown sugar, packed
4 tablespoons fresh ginger, skinned and grated fine
2 tablespoons Worcestershire sauce
1 teaspoon dark Asian sesame oil
2 teaspoons Sriracha Sauce
4 medium cloves of garlic, pressed or finely minced
Chicken:
2 chickens cut into quarters (4-5 lbs of meat)

Steps:

  • Marinade: 1) Mix all the ingredients together in a saucepan and simmer gently for about 10 minutes. You can refrigerate it for several weeks. Chicken: 2) Pour marinade in a large bowl, or better still, into a large zipper bag. Add the chicken. Marinate for at least 3 hours, as long as 24 hours. 3) Set up the grill for 2-zone cooking and preheat it so the indirect side is about 325°F. Pour the marinade into a sauce pan and bring to a boil to pasteurize it so it can be used for basting. Keep cooking until it reduces significantly, perhaps 25%. 4) Roast the chicken with the lid down on the indirect side of the grill. Huli it (turn it) frequently so the sugar in the sauce doesn't blacken. After turning, paint the upper surface with a layer of the sauce. 5) Take the meat's temp, and as it approaches 150°F, stop basting so you don't contaminate the cooked meat with juices in the marinade from the brush. Discard the sauce. When it hits 150°F, move the meat over the direct heat, skin side down to crisp the skin. Check it every minute or two to make sure it is not burning. When the white meat is 165°F and the dark meat 170 to 175°F, you're ready for your luau. Notes: About the chicken broth. Feel free to substitute white wine, sherry (it doesn't matter if it is dry or sweet in this recipe), or even water. About the vinegar. If you wish you can swap some fresh lemon or lime juice for all or part of the vinegar. About the Sriracha. Sriracha is a garlicy hot chile paste. It is special and widely available, but if you can't get it, feel free to use whatever hot sauce you have around. This quantity is not very hot, especially when painted on chicken, but you can use less or add more to your taste.

CROCK POT HULI HULI CHICKEN

Huli Huli Chicken is a traditional Hawaiian dish that is grilled. I'm not Hawaiian but I love the food. Since I really can't grill chicken (I burn it every time) I have developed a similar recipe that would give me the flavors.

6 boneless skinless chicken breasts
1 1/2 cups brown sugar barbecue sauce (my favorite Guy Fieri)
1 cup crushed pineapple
1/2 medium onion, cut in lg chunks
3 garlic cloves, crushed
2 tablespoons soy sauce
1 hot pepper, seeded, left in 2 lg pieces
1 teaspoon coarse sea salt
1 tablespoon grated fresh ginger or 1 teaspoon dried ginger
1 tablespoon coconut oil

Steps:

  • I mix everything except the chicken and onions in the crock pot first. We like spicy foods but not really hot so I cut the pepper in just two halves so I can pull it out before serving. Then add the chicken breasts, pushing them under the sauce. I usually don't plan ahead enough to thaw the chicken so I put them in frozen. Put the onion chunks on top to keep them from turning to mush.
  • Start with the cooker on high then once it all starts to bubble turn it down on low. It took my cooker about 3 1/2 hours. If you're leaving the house I would just start it on low and would be fine for a lot longer.
  • I served mine with wild rice.
