Roasting garlic couldn't be easier. You'll love the mellow, rich flavor so much you'll be popping cloves straight into your mouth!

1 head garlic (outer paper leaves discarded but bulb left intact)
1-2 teaspoons extra-virgin olive oil

Steps:

  • Preheat oven to 400F.
  • Cut the top 1/2 inch from garlic bulb (straight across the top so you cut into just the tops of the cloves). Place garlic bulb in a ramekin, drizzle with olive oil and cover with foil.
  • Roast for 30-40 minutes or until garlic is very soft and lightly browned. Remove from oven and allow to cool.
  • Squeeze the garlic out of its skin and into a small dish. Mash with a fork and use as desired.

I love garlic! It's so easy to roast, and there are so many different ways to do it. It's great when spread on crackers or bread, or mixed into hummus, pasta sauce or just about anything else!

1 medium head garlic
2 tablespoons olive oil

Steps:

  • Method 1: Preheat oven to 250 degrees F (125 degrees C). Slice 1/4 inch off top of garlic bulb. Place in a small baking dish and drizzle with olive oil. Bake in preheated oven for 20 minutes, until outside is lightly browned and garlic cloves are soft. When cool enough to touch, squeeze each clove to extract softened garlic.
  • Method 2: Preheat oven to 250 degrees F (125 degrees C). Peel each garlic clove. Place in a single layer in a small baking dish and drizzle with olive oil. Bake for 15 minutes, until garlic is soft.

  • Preheat the oven to 400 degrees F.
  • Slice off the top each head of garlic to expose some of the cloves inside. Place the heads on a piece of foil. Drizzle with olive oil and wrap in the foil. Roast until cloves are lightly browned and tender, about 30 minutes.

When garlic is roasted, it becomes mild and soft enough to spread over bread or crackers. For additional herb flavor, place a sprig of fresh thyme over the cut surface of the garlic before roasting. Roasted garlic can also be used to flavor cream of potato soup. Simply roast as directed. When cool, squeeze the garlic from the skin into the soup and puree the entire mixture. One whole head or bulb of garlic will flavor 6 to 8 quarts of soup.

1/3 cup water
1/4 cup olive oil
Sliced French or Italian bread

Steps:

  • Cut off the top of each garlic head (the end that comes to a closed point) so that each clove is exposed. Place with cut side up in a small ungreased baking dish; pour water around garlic. , Cover and bake at 350° for 1 hour or until garlic is very soft. Cool for 5 minutes. Certainly you can use roast garlic in many different recipes!

1 head garlic (elephant garlic has many cloves & works well)
2 tablespoons olive oil (or more)
salt and pepper

Steps:

  • Preheat oven to 425 degrees F.
  • Slice off the very top of the garlic head. Place in a piece of foil and drizzle olive oil inside the head of garlic until it is completely filled and just starting to run down the side.
  • Wrap tightly with foil and place on a cookie sheet and bake until tender and fragrant, roughly 35 minutes.
  • Remove from the oven and let cool. Peel outside off of bulb of garlic, then gently squeeze each clove out.
  • Use in the recipe of your desire, or simply spread on bread for a wonderful addition to any meal.

1 pound garlic (6 to 8 heads, depending upon size)
Kosher salt and freshly ground pepper
1 tablespoon fresh thyme leaves
1/2 cup extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees. Using a serrated knife, slice off top quarter of garlic heads, exposing as many cloves as possible. Arrange garlic heads, cut side up, in an 8- or 9-inch square baking dish (make sure garlic heads sit flat).
  • Season garlic with salt and pepper and sprinkle with thyme. Slowly pour oil over each head, letting it soak into and around cloves. Cover dish tightly with foil and roast until cloves are golden, completely soft, and begin to protrude slightly from skins, about 1 hour. Let stand until cool enough to handle.
  • From the bottom up, squeeze each head to push out cloves (peel skins from any completely enclosed cloves). Transfer garlic and cooking oil to an airtight container. (Garlic will keep, refrigerated, up to 2 weeks.)

1 garlic bulb
1 tsp olive oil

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Cut the top off the garlic bulb, exposing the tops of the garlic cloves. Put on a small square of foil, and rub with the olive oil. Season with salt and pepper. Scrunch up the foil to seal in the bulb.
  • Roast for 25-30 mins until soft when pressed, and the papery casing is light golden. Leave to cool for a few minutes before squeezing the soft roasted garlic out of their shells. Alternatively, take off all the papery casing and remove the cloves individually.
