GLüHWEIN (HOT SPICED RED WINE)



Glühwein (Hot Spiced Red Wine) image

A winter cocktail sure to warm you from your head to your toes. Red wine is warmed with spices and citrus, then amped up with a bit of brandy for the coziest holiday drink.

Number Of Ingredients 9

1 each medium organic orange
20 each whole cloves (give or take a few cloves - no need to be exact)
750 ml light red wine (1 bottle, on the drier/lighter side is better. We love Pinot Noir, Lemburger or Merlot can also work)
3 each (3-inch) cinnamon sticks
5 each strips lemon peel (about 2 inches long each, just use a carrot peeler and try to avoid including too much pith)
1/4 cup sugar (start with 1/4 cup and add to taste up to 2/3 cup)
1/3 cup brandy
Cinnamon sticks
Orange slices

Steps:

  • Using a toothpick, poke 20 holes all over your orange, then poke the cloves into the holes.
  • Add orange to a medium saucepan. Pour the wine into the pan. Add the cinnamon sticks, lemon peel, and 1/3 cup sugar. Stir gently to help dissolve the sugar.
  • Turn the heat on medium-low and heat until just below a simmer. Do not boil! Reduce heat to low - just enough to keep warm but again, not simmering or boiling. Cover and let warm over the heat for about 20 minutes, until hot wine is flavored by the spices.
  • Stir in the brandy. Taste and add more sugar if desired. Depending on your wine and tastes, you may only need the intial 1/4 cup of sugar, or you may need the entire 2/3 cup.
  • Ladle into three large or four smaller mugs, garnish if desired, pass 'em out and and inhale your Glühwein goodness.

This is a spicy, sweet holiday wine inspired by my trip to Germany, where a similar drink is a traditional part of winter celebrations.

2 oranges
2 (750 milliliter) bottles red wine
1 (750 milliliter) bottle white wine
1 (3 inch) piece of fresh ginger, peeled and thinly sliced
3 cinnamon sticks
½ teaspoon ground cloves
⅓ cup brown sugar, or to taste
¼ cup brandy

Steps:

  • Use a sharp knife or a vegetable peeler to remove the zest from the oranges in strips, being careful to remove only the orange part, leaving the pith behind. Then, juice the oranges into a large, heavy-bottomed pot.
  • Pour the red wine and white wine into the pot with the orange juice. Place the strips of orange zest, ginger, cinnamon sticks, cloves, and brown sugar into the pot with the wine mixture; stir to dissolve the sugar.
  • Cover and heat over medium-high until heated through, but not boiling, reduce the heat to medium-low and heat for an hour or longer to bring all of the flavors together. Adjust the sweetness by adding more brown sugar, as necessary. Strain and serve hot with a splash of brandy, if desired.

  • Stir water and sugar together in a saucepan until sugar dissolves. Add lemon, cloves, and cinnamon stick; bring mixture to a boil and cook until flavors combine, about 10 minutes. Strain and return water mixture to the saucepan; discard lemon, cloves, and cinnamon stick.

1 teaspoon whole allspice
6 cups fruity red wine (such as Beaujolais or Pinot Noir)

3/4 cup sugar
1 orange, thinly sliced
1 lemon, thinly sliced
1 lime, thinly sliced

Steps:

  • Place first 3 ingredients on an 8" square of cheesecloth; tie with string. Place spice bag in a Dutch oven. Add red wine and remaining 5 ingredients; bring to a simmer over low heat (do not boil). Keep at a simmer while serving. Ladle into mugs.
  • Note: For a nonalcoholic version, omit wine and substitute more apple cider.

3/4 cup red wine (I used a pinot noir)
1/2 cup brown sugar
1/4 cup (1/2 stick) unsalted butter
12 ounces semisweet chocolate, chopped
1 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Add the cream and wine to a saucepan and heat over medium heat. Cook until the liquid is warm and there are bubbles forming on the edges of the pot, about 3 minutes. Stir in the sugar until it is totally dissolved and allow the mixture to come to a boil. Reduce the heat to low and stir in the butter until melted. Turn off the heat and add in the chocolate, allowing it to sit for a minute. Then stir constantly until the chocolate is completely melted. Stir in the vanilla extract and salt. You can use it right away, but I like to let this sit for an hour at room temperature to thicken even more.

1/3 cup corn, peanut or vegetable oil
1/4 cup finely chopped shallots
3 tablespoons finely chopped parsley
1/3 cup dry white wine at room temperature
Freshly ground pepper to taste
1 tablespoon red-wine vinegar

Steps:

  • Bring enough water to a boil to cover the potatoes when they are added. Add potatoes and salt. Bring to a boil and cook until the potatoes are tender but not mushy, about 20 minutes. Drain. While they are still hot, cut them into slices 1/4 inch thick. There should be about 5 1/2 cups.
  • Put the hot potato slices in a deep skillet or kettle and add the oil, shallots and parsley. Place the skillet on the stove and cook, stirring gently, about 1 minute. Add the wine, pepper and vinegar, then stir. Serve.

1 1/2 cups peach preserves
Serrano chiles
1 cup reduced veal stock or similar
1 1/2 ounces Cabernet Franc
1 1/2 ounces red wine jus
1/2 ounce heavy cream
1 ounce unsalted butter
1/2 ounce red wine vinegar
1 shallot, finely chopped
2 ounces foie gras, cut into 4 slices
Dash Fleur de Sel
4 slices milk bread or white bread
Frisee leaves, for serving
Grapeseed oil, for drizzing
Drizzle Cabernet Franc Ice Wine Syrup (Cabernet Franc Ice Wine boiled until reduced to a syrup)

Steps:

  • Preheat a grill.
  • Peaches: Combine the peach preserves and serranos in a saucepan. Cook until tender and syrupy. Remove from the heat and mash with a fork.
  • Cabernet Franc Reduction: Reduce one cup of veal stock and Cabernet Franc. To thicken, add red wine jus, cream, and butter. Finish with a few drops of red wine vinegar and the shallots.
  • Foie Gras: Cut the foie gras into 4 slices and score with a fork. Sear until golden brown on both sides in a hot pan. Remove from pan and place on a paper towel. Sprinkle with fleur de sel to season.
  • Grill a small piece of white or milk bread; place in center of a plate. Add a teaspoon of peach preserve on the bread. Place hot foie gras on the peaches. Garnish with frisee and a few hand-cut local greens tossed in grapeseed oil. Spoon sauce around and drizzle with ice wine syrup.
