This is a nice alternative to hot chocolate. To make this more healthy, substitute the 2% milk and sugar for skim milk and a no calorie sweetener.

- Pour the milk into a microwave-safe mug. Stir together the cinnamon and sugar, then stir into the milk. Mixing the cinnamon into the sugar first will help to keep it from floating on top. HOT VANILLA SOUFFLE

- Preheat the oven to 350 degrees F. Brush 4 to 6 individual souffle dishes (or a 7-cup souffle dish) well with melted butter. Put the sugar inside one dish and toss to coat, then tip the excess sugar into the next dish and repeat. Place the dishes in the refrigerator to chill.
- Reserving 1/3 cup of the milk, place the remaining 1 cup in a large saucepan. Add the vanilla bean and heat just to a boil, then turn off the heat and set aside to let the vanilla bean infuse for 10 minutes. Meanwhile, in a medium bowl, whisk the 1/3 cup granulated sugar, the flour, and the reserved 1/3 cup milk. Add a little of the hot milk and whisk to combine, then add the flour mixture to the hot milk mixture in the saucepan. Bring to a simmer over medium heat, whisking occasionally. Simmer just until thickened, about 1 minute. Turn off the heat. Add the butter, stir, cover, and set aside 15 minutes. Remove the vanilla bean and whisk in the egg yolks.
- In a mixer fitted with a whisk attachment (or using a hand mixer), whip the egg whites in a clean dry bowl until soft peaks form. Add the remaining 1 1/2 tablespoons sugar and continue whipping until stiff and glossy. Fold into the milk mixture.
- Pour the mixture into the prepared dishes, filling them 3/4 full. Run your thumb around the inside rim of each dish, making a shallow "moat" around the edge of the batter. This will help the souffles to rise straight up. Dust the surfaces with confectioners' sugar. (The souffles can stand at this point for up to 30 minutes.) Bake in the center of the oven until puffed and light golden brown, 20 to 30 minutes. Do not open the oven door unless absolutely necessary.
- Satin Chocolate Sauce: Combine the 2 chocolates over simmering water in the top half of a double boiler. Stir constantly until melted, then whisk in the syrup and water without removing the double boiler from the heat. Whisk until smooth and shiny. (The sauce can be made up to 48 hours in advance and refrigerated. To rewarm, stir over low heat or heat in a microwave.) At the table, serve the hot souffles by poking a hole in each one and pouring chocolate sauce into the hole, then drizzling sauce over the tops. For a large souffle, spoon onto dessert plates and drizzle sauce on each serving.

CINNAMON VANILLA WEDDING CAKE WITH MEXICAN HOT CHOCOLATE BUTTERCREAM

- Combine the egg whites and sugar in a stand mixer bowl and whisk to combine. Place bowl over simmering water while whisking regularly until the mixture reaches 140 degrees F on an instant-read thermometer and the sugar is completely dissolved. Remove bowl from heat and whip the mixture at medium to high speed until the meringue has cooled almost completely.
- Slowly add the room temperature butter piece by piece until the buttercream takes on a cottage cheese consistency. Add the melted cooled chocolates, spices, and vanilla until incorporated and smooth.
- Cream the butter in a stand mixer until smooth and light. Add sugar and continue to mix until fully incorporated and fluffy.
- Add 1 egg at a time, beating well after each addition. In a medium bowl sift together flour, baking powder, cinnamon, and salt.
- Preheat oven to 350 degrees F.
- Combine milk and vanilla. Add portions of the flour mixture and milk mixture to the electric mixer, alternating, starting and ending with flour. Pour evenly into 2 buttered and floured 9-inch cake pans.
- Bake for 40 minutes or until golden - cake should pull away from the side and spring back to the touch.
- Frost cake and decorate as desired.
HOT VANILLA MALTED
Steps:
- Bring the milk and vanilla seeds to a simmer in a heavy medium saucepan. Add the malted milk powder and brown sugar to the hot milk, whisking until dissolved. Remove 1 cup milk mixture and puree in a blender, about 2 minutes. Divide the milk among 4 mugs and top with the pureed milk and a sprinkle of cinnamon.
- BYOC: This is a perfect drink for after spending some time out in the cold. Make this for the kids and add a little light rum for the adults.

- Position rack in center of oven and preheat to 450°F.
- Butter a 1-quart soufflé dish and sprinkle with sugar.
- Melt butter with chocolate, stirring until smooth.
- Blend in ¼ cup of sugar, yolks, coffee mixture and vanilla; stir in flour (can be prepared several hours ahead and set aside at cool room temperature. Reheat before continuing.) Beat whites in large bowl until soft peaks form; gradually add remaining ½ cup sugar, beating, until whites are stiff but not dry.
- Fold ¼ of whites into chocolate mixture, then fold chocolate back into whites (be careful not to deflate - a few streaks of white may remain).
- Gently turn batter into prepared dish.
- Sprinkle lightly with sugar.
- Bake 5 minutes.
- Reduce oven temperature to 400F and continue baking until puffed, about 20 minutes (center will remain moist).
- Serve immediately with sauce.

- Heat milk in a saucepan until VERY hot - but don't let it get to a boil.
- While milk is heating, measure white chocolate chips.
- Put marshmallows in a heatproof glass. Add vanilla vodka.
- When milk is hot, whisk in white chocolate chips. Whisk until chips are melted and milk is a little frothy.
- Pour milk over the vodka and marshmallows in the glass.
- Enjoy!
HOT VANILLA HONEY MILK
an amazing drink to sip on a cold winter night, and also a great reliever to sore throats! Kids and adults alike love this delicious, comforting drink. The spices and sweetener can be ajusted to taste, but i think that below is the recipe perfected. Also, you can use any type of milk that you like, including whole, soy or rice, i just used skim to keep it light and healthy. Enjoy!

- Choux Pastry Puffs 1. Preheat the oven 425 degrees F. 2. In a medium sauce pan bring water, butter, sugar and salt to a rolling boil over med-high heat, stirring gently with a wooden spoon. 3. When mixture begins to boil add flour all at once & stir vigorously until paste reaches an internal temperature 176 degrees F. Remove from heat. 4. Allow paste to cool, stirring a couple of times, to internal temperature of 122 degrees F, about 2 min. 5. Crème Chantilly - Chantilly Cream {Crema Chantilly} 1. Scrape the seeds from the vanilla pods into the bowl. Add the heavy cream and confectioners' sugar. 2. Refrigerate until ready to use. Hot Chocolate Sauce 1. Place the chocolate, unsalted butter honey into a heatproof bowl. Set the bowl over a saucepan of simmering water. Heat, stirring occasionally until the chocolate and butter has melted. 2. Gradually whisk in the milk until you have a smooth sauce and the milk is warmed through, set aside.

- Place sugar in large bowl. Split half vanilla bean lengthwise, scrape seeds into sugar, and add pod. Work seeds in with your fingers. Cover snugly with plastic wrap and let stand overnight at room temperature.
- In food processor fitted with metal blade, process semisweet chocolate and milk chocolate until finely ground, using 4-second pulses. (Process in two batches if necessary.)
- Remove pod from sugar. Add ground chocolate and cocoa powder to sugar and whisk to blend.
- Store mix airtight at room temperature for up to six months.
- To serve:
- For each serving, heat 8 ounces milk in small saucepan over medium heat until scalded (or microwave 2 1/2 minutes at full power). Whisk in 1/4 to 1/3 cup mix. Serve with unsweetened softly whipped cream or marshmallows.
