A 'spiked' version of the traditional hot cider - great for fall or holiday gatherings. This can be made in large quantities and kept warm in an electric coffee server.

1 quart water
3 orange spice tea bags
½ cup light brown sugar
2 cups apple cider
1 ½ cups light rum
8 cinnamon sticks
3 teaspoons butter

Steps:

  • Pour water into a large saucepan and bring to a boil. Remove from heat and toss in the orange spice tea bags. Cover and let steep 5 minutes. Remove tea bags and stir in sugar, apple cider, rum, and 2 of the cinnamon sticks. Heat just to steaming -- do not boil.
  • Ladle hot cider into 6 mugs and drop 1/2 teaspoon butter into each. Garnish with a cinnamon "swizzle" stick.

2 tablespoons raisins, or to taste
1 tablespoon whole cloves, or to taste
1 (750 milliliter) bottle spiced rum

Grown-up hot apple cider. Perfect for a cold winter day. My recipe actually calls for mulling spice, however, RecipeZaar does not recognize it as an ingredient. Use 3-4 tablespoons mulling spice in place of allspice, cloves, cinnamon sticks and orange rind, if available. Use good quality fresh apple cider (not apple juice.) This would also make a nice cocktail if cooled and served over ice.

2 cups apple brandy (such as Calvados)
2 teaspoons whole allspice
1/2 teaspoon whole cloves
2 cinnamon sticks, broken in half

  • Bring cider to simmer over medium heat.
  • Add mulling spice (using cheesecloth or large tea ball). Mull for 15 minutes over medium-low heat. Remove.

You don't need mulling spices for cider when amaro's in the mix. This spiked cider recipe is a luscious combination of hot cider, Averna, and Grand Marnier.

Yield Makes 2 cocktails

Number Of Ingredients 6

3 oz. Grand Marnier
1 oz. Amaro Averna
Small pat salted butter (about ½ teaspoon)
1 cup hot apple cider
1½ to 3 tsp. fresh lemon juice (to taste, depending on the sweetness of your cider)
Garnish: freshly ground pink peppercorns, plus 2 lemon wheels (optional)

Steps:

  • Add 3 oz. Grand Marnier, 1 oz. Amaro Averna, and a small pat of salted butter to a 16-ounce travel mug or large heatproof measuring cup. Add 1 cup hot apple cider and stir until butter melts.
  • Add 1½ tsp. fresh lemon juice and taste for sweetness, adding additional if needed. If serving in travel mug, garnish with ground pink peppercorns and seal. If serving in mugs, divide drink between two warmed mugs and garnish each with a pink peppercorn-dusted lemon wheel.
