This easy salami sandwich with caponata, cheese and tomatoes is a delicious summer lunch served on fresh olive bread and the perfect picnic recipe.

1 olive bread (halved (alternatively use Ciabatta or French loaf))
1 cup Caponata (Alternatively tapenade or pesto can be used )
2 cups rocket/arugula
2 tomatoes (sliced)
50 g (+- 2oz) cheese ((cheddar, provolone or mozzarella will all work well) )
100 g (+- 4oz) salami
fresh basil

Steps:

  • Halve the olive bread horizontally.
  • Layer on the Caponata followed by the rocket/arugula, tomatoes (seasoned with salt and pepper), cheese, salami and basil.
  • Drizzle a little olive oil over the top layer of bread and place onto the sandwich.
  • Slice into 4 servings and serve.

8 slices Kalamata Olive Bread (ciabatta bread will also work)
12 slices salami
6 ounces assorted Heluva Good! Cheese (*Sharp Cheddar, Extra Sharp Cheddar & Jalepeno Jack cheese)
2 tablespoons honey dijon mustard

Steps:

  • Heat a toaster oven or oven to 350 degrees Fahrenheit.
  • Spread a generous layer of mustard over 4 slices of bread.
  • Line the dry halves of bread with 3 slices of salami, and 4 slices of assorted cheeses.Cover sandwiches and place on a baking sheetToast for 5 minutes or until cheese is melty and bubblyServe hot with some chips.
  • Put sandwiches together and place them on baking sheet or buttered griddle. Toast or bake for 5 minutes or until cheese is melty and bubbly.
  • Serve hot with some chips and a deli style pickle.

2 tubes (8 ounces each) refrigerated crescent rolls
1/4 pound thinly sliced hard salami
1/4 pound thinly sliced deli ham
1/4 pound sliced pepperoni
1/4 pound sliced provolone cheese
2 large eggs
Dash pepper
1 jar (7 ounces) roasted sweet red peppers, drained, patted dry and chopped
2 tablespoons grated Parmesan cheese
1 large egg yolk, lightly beaten

Steps:

  • Unroll crescent roll dough into two rectangles; seal seams and perforations. Press one rectangle onto the bottom and 3/4 in. up the sides of a greased 13x9-in. baking dish. Layer with salami, ham, pepperoni and provolone cheese., Whisk eggs and pepper; pour over cheese. Top with roasted peppers and Parmesan cheese. Place remaining crescent dough rectangle over the top; pinch edges to seal. Brush with egg yolk. , Cover and bake at 350° for 30 minutes. Uncover; bake 15-20 minutes longer or until golden brown. Cut into eight triangles; serve warm.

2 teaspoons basil pesto, divided
1 hoagie roll, split lengthwise
4 slices deli sliced salami
2 slices deli ham
4 slices pepperoni
2 slices provolone cheese, divided
2 teaspoons sliced ripe black olives

Steps:

  • Place mushrooms in the basket of the air fryer. Set air fryer to 350 degrees F (175 degrees C) and cook mushroom slices for 5 minutes.
  • Spread 1 tablespoon pesto onto the bottom half of the hoagie bun. Arrange salami slices over the pesto. Add ham and pepperoni.
  • Place 1 slice of cheese over the ham and pepperoni. Top with mushrooms and olives. Add remaining slice of cheese. Spread remaining tablespoon of pesto on the other half of the bun and place on top to complete the sandwich.
  • Place entire sandwich in the basket of the air fryer. Cook until cheese has melted and salami is crisp, about 5 minutes.

My husband and I have even made these ahead of time while traveling by car, and put them in the engine compartment to melt the cheese. We just took them out when we got to a rest stop and had hot sandwiches!

4 hamburger buns
8 slices hard salami
4 slices American cheese or 4 slices cheddar cheese
4 slices onions (optional)
1/4 cup barbecue sauce

Steps:

  • Layer bottom of hamburger buns with salami, cheese, onion (if using).
  • Spread barbecue sauce on top half of bun, and cover rest of sandwich.
  • Wrap each sandwich in aluminum foil and bake in preheated 400 degree oven until cheese melts; about 5-10 minutes.
  • May wrap sandwiches in paper toweling and microwave on half power until cheese melts, if desired.

2 round or oval loaves country bread (1 pound each), split and hollowed
1 jar (12 ounces) oil-packed roasted red peppers
12 ounces salami, thinly sliced
12 ounces provolone cheese, thinly sliced
2 bunches arugula, (about 6 ounces each), washed well and thick stems removed (about 10 cups)

Steps:

  • Brush cut sides of halved bread loaves with oil from jar of roasted peppers. Dividing evenly, layer bottom bread halves with roasted peppers, salami, cheese, and arugula; top with remaining bread halves.
  • Wrap each sandwich tightly with plastic, and press: Lay wrapped sandwiches on a baking sheet. Position another baking sheet on top, and weight with heavy canned goods or a large skillet. Let stand for one hour, pressing down occasionally with hands.
  • Refrigerate wrapped sandwiches until ready to serve, up to 1 day. To serve, cut into wedges.
